Whoopie Pies!

I just tried out a book that’s all about Whoopie Pies. One of the writers of the book (Amy) is also the editor of my book, Cake Pops. Amy sent me a copy to check out and I couldn’t be more excited for her.

I made and fell in love with these sugar-filled sandwiches. They are delish! They’re like little cakes shaped like cookies… (but pie-like… not so much.)

It’s funny… when I gave these treats away, everyone loved them, but no one knew what to call them. Everyone asked “What are they?” It made me wonder how common they are in other places. Have you made whoopie pies? Heard of them? Seen one out in the wild?

No worries if you haven’t. Now you can make your very own. The book is organized for easy reading.

I decided to make the classic chocolate whoopie (big surprise) and paired it with peanut butter filling. The recipe called for dark brown sugar. I used this dark muscovado sugar instead because that’s all I had on hand. It made them extra tasty.

After you mix up the batter, drop it by spoonfuls on a parchment covered baking sheet.

After they bake and cool for a few minutes carefully remove them from the parchment paper.

Place them flat side up on a cookie rack. Then you can spoon the filling on…

Or pipe it on.

Sandwich the filling between two of the cakes.

And press gently. That’s it.

Chocolate Whoopie Pies

Chocolate Whoopie Pies

Ingredients

Chocolate Whoopie Pies

  • 1-2/3 cups all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1-1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 4 tablespoons unsalted butter, room temperature
  • 4 tablespoons vegetable shortening
  • 1 cup packed dark brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup milk

Salty Peanut Butter Filling

  • 3/4 cup creamy peanut butter (or crunchy)
  • 3/4 cup unsalted butter, room temperature
  • 3/4 cup confectioners' sugar
  • 1/2 teaspoon salt

Instructions

  1. Whoopie Pies: Preheat oven to 375 degrees. Line baking sheets with parchment paper.
  2. In a bowl, sift together, flour, cocoa, baking soda, and salt.
  3. In another bowl, beat butter, shortening and sugar with a mixer on low until just combined. Increase speed to medium and beat for about 3 minutes.
  4. Add egg and vanilla and beat for two more minutes.
  5. Add half of the flour mixture and half of the milk and beat on low until incorporated. Repeat with remaining flour and milk and beat until combined.
  6. Using a tablespoon, drop batter on baking sheet two inches apart. Bake for about 10 minutes each or until pies spring back when pressed gently.
  7. Remove from oven and cool for about five minutes before transferring them to a rack to cool completely.
  8. Peanut Butter Filling: Beat peanut butter and butter on low until creamy using a mixer. Add sugar and salt and beat on low to incorporate. Increase speed to medium and beat for about four minutes until the filling is light and fluffy. Spread filling on flat side on one cooled cake. Top it with a second cake and press gently.
  9. Store whoopie pies in an airtight container.

Notes

1 Tbsp of batter should make about 48 two-inch cakes or 24 pies.
2 Tbsp of batter should make about 30 four-inch cakes or 15 pies.

You can also roll the edges in sprinkles, chopped chocolate, nuts, etc. or in this case, peanut butter morsels.

Ummm… can I say these are just about the most fun things to eat. They’re so good you kinda feel like you’re being bad when you sink your teeth into them.

  2. I’ve never heard of them, at least not called that… But I can’t help but notice that they seem similar to the Oreo Cakesters that have become my weakness lately! I NEED to make some of my own – they have to be better than store bought! And I would LOVE to win that book… it looks so cute! And I’m sure I would make every combination possible!

    I make them using my recipe for a triple chocolate fudge cooke and marshmallow creme. They’re always a hit!

  9. I grew up in the Lancaster County area, so whoopie pies are a household name to me! I also make them myself – I’ve even created my own filling recipe through trial and error. Whoopie pies rock!

  15. I’ve never made Whoopie Pies, but I was introduced to them in St. Augustine, FL at a little cafe with a big sign in the window that said “fresh made whoopies”. They were delicious! I live in CO, and I never hear of them here…maybe a regional thing? :)

  17. What fun to share an old fashioned treat. I had heard of them, but did not know exactly what it was. I looked it up on Wikipedia and found out that it is considered a New England phenomeon and a Pennsylvania Amish tradition. One version of how they got their name Whoopie pie is because when the Amish farmers wife’s would bake them and put them into their husbands lunches, upon discovery the farmers would yell “whoopie”. At that time they were called hucklebucks. They reminded me of a french macaron, though the cake/cookie part seems to be a different texture as well as a more creamy filling. What could be better. Love the idea of peanut butter filling with peanut morsels…….dreamy. Looking for more history I came upon a whole story about the origin of Marshmallow fluff, apparently ii is also considered one of the traditional fillings for whoopie pies, not to mention they said in Maine that they are around the size of a hamburger bun. Oh my.

  27. I’m from Northern New Jersey, and my best friend moved to New Hampshire about 5 years ago to be closer to her husband’s family. Well, whoopie pies are all the rage up there, and all I ever heard about was how So-and-So’s mother made them the best, or you should only get them from this or that farm stand. And as many times as I’d gone to visit her, I’d never met So-and-So or been to that farm stand! Then I found a recipe for RED VELVET WHOOPIE PIES that looked amazing, and decided I had to try them. I was headed up to NH for her son’s second birthday and whipped up a batch for the party. And they were absolutely fantastic! Everything I had hoped for in a cookie/cake!   31. I’ve never made them but I have had them ever since I was little. Maybe its a Canadian thing? Have you ever heard of Jo Louies? It’s basically a Chocolate woopie with a very light filling then totally covered in chocolate. They are a staple in school lunches.

  53. I love woopie pies!! We always had them growing up in Massachusettes. I did make them down here in Atlanta (recipe from Martha Stewart Cookies) and no one knew what they were. One piece of advice…serve the day off…they do not keep very well.

  149. I haven’t ever made whoopie pies, but I have eaten them before. Aunt Mil used to make them for the local kids when I was growing up. She wasn’t really anyone’s aunt, but as long as we called her Mil instead of Mildred there was a steady stream of cookies and hugs to be had.

I loved the look of having that cute treat on display so I wanted to steal the idea for when I have company next week.   169. As a Pennsylvania girl who has access to an Amish bakery, I have OF COURSE heard of whoopie pies! They are my favorite indulgence when I am at the Farmers’ Market! I have also had them up in Maine, where they are also popular. My favorite kind are the traditional chocolate ones with the fluffy white filling. However, I also enjoy a good oatmeal cookie one, again with the white filling.

    I have heard that there are recipes for savory whoopie pies as well, which are fascinating to me. I might have to try something like that out!

  171. I grew up with these-they are so good! Here in New England they are pretty well-heard of I think.

    The best ones I’ve ever had were at the “Big E” AKA- The Eastern States Exposition, which is a huge (HUGE) fair for all the New England States. There was a company dedicated to nothing but Whoopie Pies in a gazillion flavors. Soooo good!

    There is a great place in PA (dillsburg, maybe) that sells them. It is a little Amish place and they have different kinds. Yum!

  194. We live in the land of whoopie pies Lancaster/Lebanon County PA. I have never tried to make them because they are so good from our favorite bakery, Achenbach’s Pastries in Leola. My husband grew up in Lancaster and has eaten them all of his life. Today is his 46th birthday and I am going there to get him some. It sure would be nice to make him some, (hint, hint). Even if I don’t win, I’ll make him some anyway. What do they say…If at first you don’t succeed try, try again!

  200. I have never tried a whoopie pie..but, they sorta remind me of Little Debbie’s Fudge Rounds. Might try that recipe today with the kids..looks yummy!
