Whoopie Pies!

I just tried out a book that’s all about Whoopie Pies. One of the writers of the book (Amy) is also the editor of my book, Cake Pops. Amy sent me a copy to check out and I couldn’t be more excited for her.

I made and fell in love with these sugar-filled sandwiches. They are delish! They’re like little cakes shaped like cookies… (but pie-like… not so much.)

It’s funny… when I gave these treats away, everyone loved them, but no one knew what to call them. Everyone asked “What are they?” It made me wonder how common they are in other places. Have you made whoopie pies? Heard of them? Seen one out in the wild?

No worries if you haven’t. Now you can make your very own. The book is organized for easy reading.

I decided to make the classic chocolate whoopie (big surprise) and paired it with peanut butter filling. The recipe called for dark brown sugar. I used this dark muscovado sugar instead because that’s all I had on hand. It made them extra tasty.

After you mix up the batter, drop it by spoonfuls on a parchment covered baking sheet.

After they bake and cool for a few minutes carefully remove them from the parchment paper.

Place them flat side up on a cookie rack. Then you can spoon the filling on…

Or pipe it on.

Sandwich the filling between two of the cakes.

And press gently. That’s it.

Chocolate Whoopie Pies

Chocolate Whoopie Pies

Ingredients

Chocolate Whoopie Pies

  • 1-2/3 cups all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1-1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 4 tablespoons unsalted butter, room temperature
  • 4 tablespoons vegetable shortening
  • 1 cup packed dark brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup milk

Salty Peanut Butter Filling

  • 3/4 cup creamy peanut butter (or crunchy)
  • 3/4 cup unsalted butter, room temperature
  • 3/4 cup confectioners' sugar
  • 1/2 teaspoon salt

Instructions

  1. Whoopie Pies: Preheat oven to 375 degrees. Line baking sheets with parchment paper.
  2. In a bowl, sift together, flour, cocoa, baking soda, and salt.
  3. In another bowl, beat butter, shortening and sugar with a mixer on low until just combined. Increase speed to medium and beat for about 3 minutes.
  4. Add egg and vanilla and beat for two more minutes.
  5. Add half of the flour mixture and half of the milk and beat on low until incorporated. Repeat with remaining flour and milk and beat until combined.
  6. Using a tablespoon, drop batter on baking sheet two inches apart. Bake for about 10 minutes each or until pies spring back when pressed gently.
  7. Remove from oven and cool for about five minutes before transferring them to a rack to cool completely.
  8. Peanut Butter Filling: Beat peanut butter and butter on low until creamy using a mixer. Add sugar and salt and beat on low to incorporate. Increase speed to medium and beat for about four minutes until the filling is light and fluffy. Spread filling on flat side on one cooled cake. Top it with a second cake and press gently.
  9. Store whoopie pies in an airtight container.

Notes

1 Tbsp of batter should make about 48 two-inch cakes or 24 pies.
2 Tbsp of batter should make about 30 four-inch cakes or 15 pies.

You can also roll the edges in sprinkles, chopped chocolate, nuts, etc. or in this case, peanut butter morsels.

Ummm… can I say these are just about the most fun things to eat. They’re so good you kinda feel like you’re being bad when you sink your teeth into them.

  8. Hey! This book looks so cool. I haven’t ever made whoopie pies, but I have most definitely heard of them and had one. It would be cool to try new flavors, because I have only had the plain chocolate and vanilla. One of the coolest places (so I’ve heard) to get them is a carnival close to where I live. Someone told me they have the biggest and best looking whoopie pies they have ever seen. I hope I win!!

  48. Whoopie pies are pretty much the best thing ever. The reason no one’s heard of them is that they are quite the regional treat – you can find them in eastern New England, and that’s about it. A Massachusetts native myself, I’ve eaten my share, but never made any (and the necessity of vegetable shortening makes me a bit nervous) but hey, it’s a treat, right? Everything in moderation I suppose. :)

    For the 4th of July I made the Smore’s Whoopies and they were amazing. I don’t use the Red Velvet recipe out of the book but I get requests for my Red Velvet ones. So also for the 4th I made Red, White and Blue Whoopies. What a hit! LOVE, LOVE, LOVE this book!

  98. Whoopie pies are very common in my area. I grew up around the Amish community in a Mennonite family, so whoopie pies were a treat we made often. Our favorites are chocolate (of course) and pumpkin. My mom also makes fantastic red velvet whoopie pies and my sister shared her yummy chocolate chip recipe with me. I don’t make them extremely often, but they’re a favorite of my kids too. I’d love to win a copy of a book that features whoopie pie recipes. I wonder if they’re as good as the ones made by the Amish and Mennonites. Yours look delicious!

    So technically you’ve already made them before? I’ve used your recipe to make soft cookies from TONS of boxed cake mixes! I’d never heard the term “whoopie pie,” though; I just called them “soft sandwich cookies” or “flat cupcakes.”

  119. Whoopie pies were one of the few “junk foods” that my daughter loved as a child. She is a professor at the University of Toronto now and I would love to (1) have some of these for her when she comes home to Texas and (2) give her this cookbook to make some of her own.   159. Whoopie Pies are awesome! A few years ago I was able to wrangle the recipe from a friend of mine to make my own. And now when I need something a little extra special to take to the potluck I make these.

  160. Oh my goodness!!! I’ve never heard of them before…but, after seeing them and looking at the recipe I can assure you that the kids and I will be whipping some up soon. They will love them….and I’m sure I might have to eat a few too! :) Yumm!!

  163. These little cakes are classics at my home. I’ve made them foryears, but just the traditional ones with a marshmallow-y filling. I’d love to see what other kinds are made and try them out on my family. That peanut butter filling just sounds so yummy. Off to try this one out. Thank you.

  165. I grew up eating these! My mom grew up in Maine where they are called Whoopie Pies but people in PA call the Gobs. Go figure!

    I just made some red velvet ones last week for 4th of July!

  168. Yes, I have made a S’mores version. It’s sort of a chocolate chip cookie dough with graham in it, then a marshmallow in between two. Yummy!

  185. I LOVE Whoopies! I make them for cookouts, and parties and to take to friends.

    My favorite place to order whoopies is from Wicked Whoopies in Maine. Fantastic flavors like Banana Cream, Double Chocolate, Red Velvet and Raspberry Cream.
    It’s what I bought for family gifts this holiday season and everyone loved them.

  188. I first had whoopie pies when I was a high school girl. It was probably 35 years ago! I loved them then and still do. I always buy some from the Amish ladies when we go to the fair or the Mesopotamia flea market. I would love to make some for my grandsons and introduce them to these yummy treats just like grandma had when she was little.

  199. Oh yes I know Whoopie PIes and LOVE them. I have the best recipes for pumpkin, carrot cake whoopies and others. They are the best dessert and so fabulous to sink your teeth into. I’ll bet this Whoopie cookbook is fillied with ideas. It looks great!
