Whoopie Pies!

I just tried out a book that’s all about Whoopie Pies. One of the writers of the book (Amy) is also the editor of my book, Cake Pops. Amy sent me a copy to check out and I couldn’t be more excited for her.

I made and fell in love with these sugar-filled sandwiches. They are delish! They’re like little cakes shaped like cookies… (but pie-like… not so much.)

It’s funny… when I gave these treats away, everyone loved them, but no one knew what to call them. Everyone asked “What are they?” It made me wonder how common they are in other places. Have you made whoopie pies? Heard of them? Seen one out in the wild?

No worries if you haven’t. Now you can make your very own. The book is organized for easy reading.

I decided to make the classic chocolate whoopie (big surprise) and paired it with peanut butter filling. The recipe called for dark brown sugar. I used this dark muscovado sugar instead because that’s all I had on hand. It made them extra tasty.

After you mix up the batter, drop it by spoonfuls on a parchment covered baking sheet.

After they bake and cool for a few minutes carefully remove them from the parchment paper.

Place them flat side up on a cookie rack. Then you can spoon the filling on…

Or pipe it on.

Sandwich the filling between two of the cakes.

And press gently. That’s it.

Chocolate Whoopie Pies

Chocolate Whoopie Pies

Ingredients

Chocolate Whoopie Pies

  • 1-2/3 cups all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1-1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 4 tablespoons unsalted butter, room temperature
  • 4 tablespoons vegetable shortening
  • 1 cup packed dark brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup milk

Salty Peanut Butter Filling

  • 3/4 cup creamy peanut butter (or crunchy)
  • 3/4 cup unsalted butter, room temperature
  • 3/4 cup confectioners' sugar
  • 1/2 teaspoon salt

Instructions

  1. Whoopie Pies: Preheat oven to 375 degrees. Line baking sheets with parchment paper.
  2. In a bowl, sift together, flour, cocoa, baking soda, and salt.
  3. In another bowl, beat butter, shortening and sugar with a mixer on low until just combined. Increase speed to medium and beat for about 3 minutes.
  4. Add egg and vanilla and beat for two more minutes.
  5. Add half of the flour mixture and half of the milk and beat on low until incorporated. Repeat with remaining flour and milk and beat until combined.
  6. Using a tablespoon, drop batter on baking sheet two inches apart. Bake for about 10 minutes each or until pies spring back when pressed gently.
  7. Remove from oven and cool for about five minutes before transferring them to a rack to cool completely.
  8. Peanut Butter Filling: Beat peanut butter and butter on low until creamy using a mixer. Add sugar and salt and beat on low to incorporate. Increase speed to medium and beat for about four minutes until the filling is light and fluffy. Spread filling on flat side on one cooled cake. Top it with a second cake and press gently.
  9. Store whoopie pies in an airtight container.

Notes

1 Tbsp of batter should make about 48 two-inch cakes or 24 pies.
2 Tbsp of batter should make about 30 four-inch cakes or 15 pies.

You can also roll the edges in sprinkles, chopped chocolate, nuts, etc. or in this case, peanut butter morsels.

Ummm… can I say these are just about the most fun things to eat. They’re so good you kinda feel like you’re being bad when you sink your teeth into them.

  1. YUM and so much fun! My kids make them with their grandma, but it’s using cake mix and I think ready-made ingredients for the filling. Homemade is so much better in my book!

  30. Whoopie Pies are very popular here in southeastern Pennsylvania. As I understand it, they are a Pennsylvania Dutch treat. Every farm stand and shop in Lancaster County sells there own version. Yum.
    Never made them — but this book could provide just the inspiration I need.

  51. Oh my gosh, so funny that you should post this today! While grocery shopping Saturday I noticed that our store had a display of fresh, locally-made whoopie pies is a couple of yummy flavors. Of course I couldn’t resist and grabbed a classic chocolate with white filling.     There is a place an hour and half away known for her famous Whoopie Pies. I checked them out just last week. INCREDIBLE.

  118. Growing up in Maine, whoopie pies are in most convenience stores that sell sandwiches. Or Mom would make them once in a while. Here in FL, if my kids want one I have to make them. Thanks to my daughters boyfriend who had never heard of them before, they are now known as “wookie pies” ’round here….;)

  119. Pumpkin – that’s all I have to say. No – not really! I found pumpkin whoopie pies – and I love them. I ship them to my grandkids who fell in love with them while visiting. I have made chocolate ones – but not anything else! I’m so glad someone wrote a cookbook! Now, to take those recipes and adapt for my gluten free daughter.

  137. I’ve definitely heard of them, called both Whoopie Pies and Gobs. There’s a craft festival in central PA where they sell ones that were 1lb. each. No kidding- I weighed them. I’ve tried to make pumpkin whoopie pies once but they didn’t go well- I don’t like cream cheese so I tried to substitute a different filling that was a bit disastrous. A variety of recipes would definitely help.

The cupcake shop near my office has started making them with day-old cupcake tops, which are pretty awesome.   161. My children love whoopie pies! We even have a whoopie pie cake pan! They originated as a Pennsylvania Dutch treat and since we live in Pennsylvania near the Amish we see them at all of our farmers markets in the area! The pumpkin ones are especially good!

  184. I’d never heard of them until on vacation. My first husband passed away about three years earlier and I’d remarried. We, he, myself and two children went on vacation, to all places, Bessemer, PA. It was a friends house and she is Italian, and of course living in Amish country up there.

    The first evening of our visit after a wonderful dinner her mom drops by with dessert. In a large Tupperware container are these little chocolate gobs with filling. That’s what they called them, “Chocolate Gobs”. My husband was silent for the first time.

    Now I’m a baker by nature but I never saw him shut up by a dessert. He then explained how he grew up on these in Maine and his mom wouldn’t release the recipe to him; I know, sad, right?

    Well my friend gave me her “Chocolate Gob” Whoopie Pie recipe and the rest is baking history. It’s now his most requested dessert of course?

  199. I’d never heard tell of whoopie pies until 2005, when my date from prom told me about them. He surprised me prom night, by bringing a fresh batch of his mother’s home made whoopie pies as a gift!

    Prom was fun, but my one and only experience with whoopies was divine!
