Whoopie Pies!

I just tried out a book that’s all about Whoopie Pies. One of the writers of the book (Amy) is also the editor of my book, Cake Pops. Amy sent me a copy to check out and I couldn’t be more excited for her.

I made and fell in love with these sugar-filled sandwiches. They are delish! They’re like little cakes shaped like cookies… (but pie-like… not so much.)

It’s funny… when I gave these treats away, everyone loved them, but no one knew what to call them. Everyone asked “What are they?” It made me wonder how common they are in other places. Have you made whoopie pies? Heard of them? Seen one out in the wild?

No worries if you haven’t. Now you can make your very own. The book is organized for easy reading.

I decided to make the classic chocolate whoopie (big surprise) and paired it with peanut butter filling. The recipe called for dark brown sugar. I used this dark muscovado sugar instead because that’s all I had on hand. It made them extra tasty.

After you mix up the batter, drop it by spoonfuls on a parchment covered baking sheet.

After they bake and cool for a few minutes carefully remove them from the parchment paper.

Place them flat side up on a cookie rack. Then you can spoon the filling on…

Or pipe it on.

Sandwich the filling between two of the cakes.

And press gently. That’s it.

Chocolate Whoopie Pies

Chocolate Whoopie Pies

Ingredients

Chocolate Whoopie Pies

  • 1-2/3 cups all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1-1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 4 tablespoons unsalted butter, room temperature
  • 4 tablespoons vegetable shortening
  • 1 cup packed dark brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup milk

Salty Peanut Butter Filling

  • 3/4 cup creamy peanut butter (or crunchy)
  • 3/4 cup unsalted butter, room temperature
  • 3/4 cup confectioners' sugar
  • 1/2 teaspoon salt

Instructions

  1. Whoopie Pies: Preheat oven to 375 degrees. Line baking sheets with parchment paper.
  2. In a bowl, sift together, flour, cocoa, baking soda, and salt.
  3. In another bowl, beat butter, shortening and sugar with a mixer on low until just combined. Increase speed to medium and beat for about 3 minutes.
  4. Add egg and vanilla and beat for two more minutes.
  5. Add half of the flour mixture and half of the milk and beat on low until incorporated. Repeat with remaining flour and milk and beat until combined.
  6. Using a tablespoon, drop batter on baking sheet two inches apart. Bake for about 10 minutes each or until pies spring back when pressed gently.
  7. Remove from oven and cool for about five minutes before transferring them to a rack to cool completely.
  8. Peanut Butter Filling: Beat peanut butter and butter on low until creamy using a mixer. Add sugar and salt and beat on low to incorporate. Increase speed to medium and beat for about four minutes until the filling is light and fluffy. Spread filling on flat side on one cooled cake. Top it with a second cake and press gently.
  9. Store whoopie pies in an airtight container.

Notes

1 Tbsp of batter should make about 48 two-inch cakes or 24 pies.
2 Tbsp of batter should make about 30 four-inch cakes or 15 pies.

You can also roll the edges in sprinkles, chopped chocolate, nuts, etc. or in this case, peanut butter morsels.

Ummm… can I say these are just about the most fun things to eat. They’re so good you kinda feel like you’re being bad when you sink your teeth into them.

  14. In Western Pennsylvania they are called “gobs”. They are a favorite snack of mine to pick up when I go back home. Usually the original chocolate, banana, chocolate chip and pumpkin are available. They are sooooo good!

  15. Have I heard of them? Of course, I live in Maine! You can find them at every corner store here. Even the cafeteria at the hospital where I work sells them. I’ve made them for gifts several times but have only made basic ones (chocolate with white filling). I’d love to branch out and try to make some other flavors. I love ones with a peanut butter filling.

    And yes, I’ve made something similar to a whoopie before. They were offically called Tiramisu Cookies, but they were essentially 2 Tiramisu flavoured cookies (complete with espresso and kaluha,) with a marscapone filling sandwhiched between the two cookies! They were DELICIOUS!!

  22. My husband grew up with Whoopie pies in Maine, so when we got married (32yrs ago) I learned to bake them. I have always made the classic pies, I need to step out of my box and make other variaties!

  57. Yes! They are the new and upcoming thing here in the south part of England where I live (Brighton). I work in the popular cupcakery here, Angel Food Bakery. There is speculation that the whoopie will replace the cupcake but I find that hard to believe. Nevertheless, they are popular and are being eaten up like crazy.

  65. Whoopie pies!! Love them. Growing up in a heavily Pennsylvania Dutch influenced area whoopie pies were a fabulous treat. No one makes ’em better than my mama, though. A cookbook devoted specifically to whoopie pies would be divine!

  75. We in PA call them gobs. They are at EVERY bake sale. Chocolate with the traditional creamy white filling are the most commom. Pumpkin ones are tasty in the fall.

  103. I saw this book during our recent vacation in Scotland and immediately fell in love – but alas! we had already been to some charity shops and bought about 2 dozen of books so my boyfriend said no (even though he loves eating biscuits almost as much as I love baking them!).

  108. I saw whoopie pies on another blog a few months back and since then they seem to be popping up everywhere! Word is that they are the next big thing in the UK, like cupcake popularity( i myself cant quite see them being that famous but they will be big, how can they not be when they are soo delicious!) my friend made some a couple weeks back with a whole marshmallow melted in the center. OH MY i ate soo many i was nearly ill :s but i will definitely have to try out some alternative fillings :D

    These look adorable and the book is so cute. I’ve never made whoopie pies but they are permanently on my list of things to bake soon.

    In the UK as far as I know the only place that you can get these little treats is in Harrods in London. But I live in Manchester and although they are lovely it’s just too far to go for a whoopie pie. I have tried one once a red velvet one filled with peanut butter frosting and it was amazing.

    Hopefully your post will motivate me to make these this week!

We make them with sweet cream cheese filling, but the peanut butter one might just beat it out… One year, a generous supply of individually wrapped ones was the sole gift my brother and his wife gave to everyone, and we all agreed it was the best present ever!   164. I bought these lovely little cakes online. I have never made them, though. They are wonderful. My favorite is pumpkin with cream cheese filling. Yummy!

  166. I have never made whoopie pies.. But I work at Ralph’s (which is Southern California’s Kroger), and we have them in the bakery! They have carrot whoopies, red velvet whoopies, chocolate and peanut butter, and chocolate and marshmallows. I love the chocolate and peanut butter, I think that I could make the red velvet better than Ralph’s though.

  167. Never made whoopies pies, but LOVE them! There’s a company called Wicked Whoopies that makes some yummy varieties. One of our local farmstands around here also comes out with pumpkin whoopie pies in the fall that are just scrumptious! Would love to try this book.

  169. I’ve seen them in a local bakery. I tried a dulce de leche one and I was hooked haha. I’ve never actually tried making them so this book would sure come in handy.

  176. I was watching “The Today Show” a few years ago. They had a cookie contest and the winner had make pumpkin whoopies. I tried and loved them. Now I can only make them about once a year because my husband and I will eat the whole honkin big batch.

    So moral of the story, I think it would be fun to try new whoopies. Maybe I’ll look for my own copy if I don’t win. We are going to the states this Friday for our R & R leave. (We live in Cairo, Egypt) Hubby is Air Force and flies C-12’s at the Embassy here.

  183. Are whoopie pies like macaroons? They look similar. I’ve always thought whoopie pies were actually pies, like chocolate pie. Being Australian, we’re not huge “pie people”, but these whoopie pies look awesome!

  193. I’ve heard of them, but not that familiar with them. Look like Oreo Cakesters to me. I guess the closest I’ve ever gotten to making them myself is the homemade sandwich cookies I’ve done…homemade Oreoes & peanut butter sandwich cookes. Mmmm…yum!

  200. Why, yes, I have heard of whoopie pies, but I’ve never made them. I’ve only seen the classic chocolate cake/white filling variety so it’s fun seeing all the possible variations.
