Whoopie Pies!

I just tried out a book that’s all about Whoopie Pies. One of the writers of the book (Amy) is also the editor of my book, Cake Pops. Amy sent me a copy to check out and I couldn’t be more excited for her.

I made and fell in love with these sugar-filled sandwiches. They are delish! They’re like little cakes shaped like cookies… (but pie-like… not so much.)

It’s funny… when I gave these treats away, everyone loved them, but no one knew what to call them. Everyone asked “What are they?” It made me wonder how common they are in other places. Have you made whoopie pies? Heard of them? Seen one out in the wild?

No worries if you haven’t. Now you can make your very own. The book is organized for easy reading.

I decided to make the classic chocolate whoopie (big surprise) and paired it with peanut butter filling. The recipe called for dark brown sugar. I used this dark muscovado sugar instead because that’s all I had on hand. It made them extra tasty.

After you mix up the batter, drop it by spoonfuls on a parchment covered baking sheet.

After they bake and cool for a few minutes carefully remove them from the parchment paper.

Place them flat side up on a cookie rack. Then you can spoon the filling on…

Or pipe it on.

Sandwich the filling between two of the cakes.

And press gently. That’s it.

Chocolate Whoopie Pies

Chocolate Whoopie Pies

Ingredients

Chocolate Whoopie Pies

  • 1-2/3 cups all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1-1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 4 tablespoons unsalted butter, room temperature
  • 4 tablespoons vegetable shortening
  • 1 cup packed dark brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup milk

Salty Peanut Butter Filling

  • 3/4 cup creamy peanut butter (or crunchy)
  • 3/4 cup unsalted butter, room temperature
  • 3/4 cup confectioners' sugar
  • 1/2 teaspoon salt

Instructions

  1. Whoopie Pies: Preheat oven to 375 degrees. Line baking sheets with parchment paper.
  2. In a bowl, sift together, flour, cocoa, baking soda, and salt.
  3. In another bowl, beat butter, shortening and sugar with a mixer on low until just combined. Increase speed to medium and beat for about 3 minutes.
  4. Add egg and vanilla and beat for two more minutes.
  5. Add half of the flour mixture and half of the milk and beat on low until incorporated. Repeat with remaining flour and milk and beat until combined.
  6. Using a tablespoon, drop batter on baking sheet two inches apart. Bake for about 10 minutes each or until pies spring back when pressed gently.
  7. Remove from oven and cool for about five minutes before transferring them to a rack to cool completely.
  8. Peanut Butter Filling: Beat peanut butter and butter on low until creamy using a mixer. Add sugar and salt and beat on low to incorporate. Increase speed to medium and beat for about four minutes until the filling is light and fluffy. Spread filling on flat side on one cooled cake. Top it with a second cake and press gently.
  9. Store whoopie pies in an airtight container.

Notes

1 Tbsp of batter should make about 48 two-inch cakes or 24 pies.
2 Tbsp of batter should make about 30 four-inch cakes or 15 pies.

You can also roll the edges in sprinkles, chopped chocolate, nuts, etc. or in this case, peanut butter morsels.

Ummm… can I say these are just about the most fun things to eat. They’re so good you kinda feel like you’re being bad when you sink your teeth into them.

  2. I LOVE to make whoopie pies. They are one of my favorite summer time treats. I like the filling I use so well I have adapted it into the frosting I use for cupcakes. I usually make classic chocolate ones but I’ve had my eye on a red velvet recipe for a while that I’d like to try. Whoopie pies=yummy!

  12. oooooohhhhhhhhh I LOVE Whoopie Pies! A local bakery here makes a Lemon with Cream Cheese filling and a TO DIE FOR Mocha with Coconut cream filling and rolling it in toasted coconut!

  51. I am a northern girl from Pennsylvania, and love love love Whoopie pies. We have a local butcher shop who have amish made pies cakes etc. they have the best Whoopie pies.   58. Food network showed how to make whoopies once on a show, can’t remember who made them. Then I have seen them at Central Market here in Dallas. They looked wonderful on television, but the ones at Central Market were not so tasty. I guess I need to make my own, then they would be wonderful I am sure!   79. I live in Amish Country, OH and before this lived in North Eastern Indiana. These are very common in both areas. Most of our local bakeries sell the chocolate ones with the fluffy vanilla filling and sometimes pumpkin with the same filling. I’ve never made them myself.

  125. love Woopie pies and had them as a littlbe girl growing up in Pittsburgh when I got old enough to bake helped my mom make them. We did the standard chocolate with the fluff frosting. Haven’t made them in years and we were having a bakesale at work around valentines day and had some different size heart shaped cookie cutters so I picked one filled with dough baked them and filled with pink tinted frosting and wow they were a hit. the were a nice size and we got $2 a piece for them and actually on e of the ladies I work with bought all 8 that I made alot of people down here in Ft Lauderdale have never heard of woopie pies. Now I see you can make different flavors and fillings that is really awesome.

I first heard of them 12 years ago as a young newlywed , in my taste of home magazine, I am in the pacific NW and they aren’t a cultural staple here, the results were terrible , I remember it callled for an insane amount of shortening ( shudder) for the filling and it curdled when I added the milk , probably my inexperience but I never attempted them again , I will now though they look YUM!!

  133. I recently relocated from TN to Maine, and whoopie pies are HUGE here. They are offered at every restaurant, grocery store, gas station, etc. I had mentioned to someone that I had tried one and didn’t love it — the cream fillings was not sweet and a little too “lardy” for me, but someone suggested i try a “WICKED whoopie pie” (another Maine thing) that was pumpkin spice with cream cheese feeling… best decision of my life.

  138. I have made the Pumpkin Whoopie Pies (recipe in the “Baked” cookbook) and they flew off the platter like hot cakes. I had an issue with the filling bit too soft thus making it seem like each whoopie pie had too much filling but that is probably my impatience in not waiting for the filling to firm up in the fridge.

  139. Whoopie pies are pretty much unknown here in Quebec – I discovered them on the Web. What we do have, however, is a commercial version that is quite similar: and industrial (very common) little cake called “Jos Louis” – basically, a chocolate whoopie pie diped in chocolate. http://en.wikipedia.org/wiki/Jos._Louis How decadent is that?

  189. I’ve actually just bought this book this past weekend! I absolutely love it! So many different flavors to mix and match, and they all sound so yummy.   192. Of course I have heard of them…seems crazy to me that people haven’t heard of them :). My aunt made them when I was younger and I live in a small town in Vermont and in our convenience stores they sell maple whoopie pies.

  194. Whoopie pies are popular here in New England. The appropriate filling is made with Marshmallow Fluff (other places call it marshmallow creme). The best place to get them is in Maine. Grannies make them to sell at the local gas stations. They’re awesome!

    I’m told they’re also popular in Pennsylvania since they were originally an Amish treat. The filling was just cream. It’s suspected that the popularity of the whoopie pie in New England is due to the recipe in a Marshmallow Fluff cookbook put out by the makers of Fluff, the Durkee-Mower company.

I live near Amish country in PA and they make the best Whoopie Pies or gobs, which is what they’re sometimes called, and while I have all this inspiration around me, I have only attempted to make them once and they were no where near as good as the ones at the Amish market! But I’m going to keep trying!
