Whoopie Pies!

I just tried out a book that’s all about Whoopie Pies. One of the writers of the book (Amy) is also the editor of my book, Cake Pops. Amy sent me a copy to check out and I couldn’t be more excited for her.

I made and fell in love with these sugar-filled sandwiches. They are delish! They’re like little cakes shaped like cookies… (but pie-like… not so much.)

It’s funny… when I gave these treats away, everyone loved them, but no one knew what to call them. Everyone asked “What are they?” It made me wonder how common they are in other places. Have you made whoopie pies? Heard of them? Seen one out in the wild?

No worries if you haven’t. Now you can make your very own. The book is organized for easy reading.

I decided to make the classic chocolate whoopie (big surprise) and paired it with peanut butter filling. The recipe called for dark brown sugar. I used this dark muscovado sugar instead because that’s all I had on hand. It made them extra tasty.

After you mix up the batter, drop it by spoonfuls on a parchment covered baking sheet.

After they bake and cool for a few minutes carefully remove them from the parchment paper.

Place them flat side up on a cookie rack. Then you can spoon the filling on…

Or pipe it on.

Sandwich the filling between two of the cakes.

And press gently. That’s it.

Chocolate Whoopie Pies

Chocolate Whoopie Pies

Ingredients

Chocolate Whoopie Pies

  • 1-2/3 cups all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1-1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 4 tablespoons unsalted butter, room temperature
  • 4 tablespoons vegetable shortening
  • 1 cup packed dark brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup milk

Salty Peanut Butter Filling

  • 3/4 cup creamy peanut butter (or crunchy)
  • 3/4 cup unsalted butter, room temperature
  • 3/4 cup confectioners' sugar
  • 1/2 teaspoon salt

Instructions

  1. Whoopie Pies: Preheat oven to 375 degrees. Line baking sheets with parchment paper.
  2. In a bowl, sift together, flour, cocoa, baking soda, and salt.
  3. In another bowl, beat butter, shortening and sugar with a mixer on low until just combined. Increase speed to medium and beat for about 3 minutes.
  4. Add egg and vanilla and beat for two more minutes.
  5. Add half of the flour mixture and half of the milk and beat on low until incorporated. Repeat with remaining flour and milk and beat until combined.
  6. Using a tablespoon, drop batter on baking sheet two inches apart. Bake for about 10 minutes each or until pies spring back when pressed gently.
  7. Remove from oven and cool for about five minutes before transferring them to a rack to cool completely.
  8. Peanut Butter Filling: Beat peanut butter and butter on low until creamy using a mixer. Add sugar and salt and beat on low to incorporate. Increase speed to medium and beat for about four minutes until the filling is light and fluffy. Spread filling on flat side on one cooled cake. Top it with a second cake and press gently.
  9. Store whoopie pies in an airtight container.

Notes

1 Tbsp of batter should make about 48 two-inch cakes or 24 pies.
2 Tbsp of batter should make about 30 four-inch cakes or 15 pies.

You can also roll the edges in sprinkles, chopped chocolate, nuts, etc. or in this case, peanut butter morsels.

Ummm… can I say these are just about the most fun things to eat. They’re so good you kinda feel like you’re being bad when you sink your teeth into them.

  14. I grew up in New England, which I feel like is whoopie pie capital. So I’ve made my fair share of whoopie pies. The best place by far to get them is Amish Country in Penn. Love those whoopie pies!

  45. I’m from the northeast so I definitely know what whoopie pies are! I tried my hand at making them a few years ago and now they are always requested. I tend not to make them that often since it’s a bit labor intensive. They’re fun to make though. I’ve seen different recipes for the filling and have yet to try them all to find my idea of the perfect filling.

  119. i was attempting to make macarons one time, and it failed miserably. luckily, they were of the chocolate variety and still tasted great, so i put some cooked frosting in between and turned my failure into a mini whoopie pie that was delicious.

  131. I certainly am a fan of whoppie pies, since I’m from Central PA. They are a sort of baked mascot for us. Two years ago, when the Steelers were in the Super Bowl, I made them for out party. They were a bigger hit than the chips and dip, for sure.

  151. I made red velvet cake whoopie pies for my boyfriend last year. No special ocassion, just wanted to surprise him =) they were heart shaped. I filled them with cream cheese frosting, yummy.   162. i just made some this past weekend for an impromptu neighborhood cookout. i used brownies as the cookie and a homemade buttercream frosting for the filling. luckily i ate one before we left as the plate was empty in a flash! super easy and super yummy!! would love to have the book to explore and experiment more in the world of whoopie pies as the neighbors are asking for more.

  173. The first time I had heard of whoopie pies was in 2006 when I went to visit my aunt in Ohio. We went to a store called Jungle Jim’s and they sold HUGE whoopie pies, but only chocolate and vanilla flavors. I have been dying to make red velvet whoopie pies with cream cheese frosting!

  177. I’m very familiar with them, growing up among the Amish of PA. They make the BEST ones! When we were kids they were something we always made in the fall after we went to the pumpkin farm, went on a hayride and picked out the perfect pumpkins. I’m grown and live in the desert now, but every fall I get a craving for some good whoopie pies and I get to work. My husbands co-workers think they’ve died and gone to heaven!

  180. I love whoopie pies, I just recently bought the little pan from Williams & Sonoma and I would LOOOOOOOOOOOOOOOVE to have this recipe book!   181. I made some a couple of weeks ago, using a recipe I found on the BBC Food site. Mine were chocolate with marshmallow filling. And we loved them! I’ve also had the book on pre-order from Amazon for a while & it looks like that’s on its way to me now too. Can’t wait to experiment.

  200. There’s a cute little cooking shop in Franklin, TN, that sells whoopie pies. We tried one last week when we visited. It was a Red Velvet Whoopie with white frosting. YUM!
