Whoopie Pies!

I just tried out a book that’s all about Whoopie Pies. One of the writers of the book (Amy) is also the editor of my book, Cake Pops. Amy sent me a copy to check out and I couldn’t be more excited for her.

I made and fell in love with these sugar-filled sandwiches. They are delish! They’re like little cakes shaped like cookies… (but pie-like… not so much.)

It’s funny… when I gave these treats away, everyone loved them, but no one knew what to call them. Everyone asked “What are they?” It made me wonder how common they are in other places. Have you made whoopie pies? Heard of them? Seen one out in the wild?

No worries if you haven’t. Now you can make your very own. The book is organized for easy reading.

I decided to make the classic chocolate whoopie (big surprise) and paired it with peanut butter filling. The recipe called for dark brown sugar. I used this dark muscovado sugar instead because that’s all I had on hand. It made them extra tasty.

After you mix up the batter, drop it by spoonfuls on a parchment covered baking sheet.

After they bake and cool for a few minutes carefully remove them from the parchment paper.

Place them flat side up on a cookie rack. Then you can spoon the filling on…

Or pipe it on.

Sandwich the filling between two of the cakes.

And press gently. That’s it.

Chocolate Whoopie Pies

Chocolate Whoopie Pies

Ingredients

Chocolate Whoopie Pies

  • 1-2/3 cups all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1-1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 4 tablespoons unsalted butter, room temperature
  • 4 tablespoons vegetable shortening
  • 1 cup packed dark brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup milk

Salty Peanut Butter Filling

  • 3/4 cup creamy peanut butter (or crunchy)
  • 3/4 cup unsalted butter, room temperature
  • 3/4 cup confectioners' sugar
  • 1/2 teaspoon salt

Instructions

  1. Whoopie Pies: Preheat oven to 375 degrees. Line baking sheets with parchment paper.
  2. In a bowl, sift together, flour, cocoa, baking soda, and salt.
  3. In another bowl, beat butter, shortening and sugar with a mixer on low until just combined. Increase speed to medium and beat for about 3 minutes.
  4. Add egg and vanilla and beat for two more minutes.
  5. Add half of the flour mixture and half of the milk and beat on low until incorporated. Repeat with remaining flour and milk and beat until combined.
  6. Using a tablespoon, drop batter on baking sheet two inches apart. Bake for about 10 minutes each or until pies spring back when pressed gently.
  7. Remove from oven and cool for about five minutes before transferring them to a rack to cool completely.
  8. Peanut Butter Filling: Beat peanut butter and butter on low until creamy using a mixer. Add sugar and salt and beat on low to incorporate. Increase speed to medium and beat for about four minutes until the filling is light and fluffy. Spread filling on flat side on one cooled cake. Top it with a second cake and press gently.
  9. Store whoopie pies in an airtight container.

Notes

1 Tbsp of batter should make about 48 two-inch cakes or 24 pies.
2 Tbsp of batter should make about 30 four-inch cakes or 15 pies.

You can also roll the edges in sprinkles, chopped chocolate, nuts, etc. or in this case, peanut butter morsels.

Ummm… can I say these are just about the most fun things to eat. They’re so good you kinda feel like you’re being bad when you sink your teeth into them.

  19. Wow! I am shocked and saddened by the number of people who have never had the good fortune of enjoying a whoopie pie. I hope that you all try to make them, find them, eat them!! I love whoopie pies…I have made them a number of times and they have come out okay…but not great. Still searching for the PERFECT recipe. I have a friend that swears by a modified box cake recipe. Also, fluff or no fluff this is quite a debate?? I think that part of my problem that I had was that I have been using fancy dutch cocoa…apparently this makes a difference because it is not alkalized (did I spell that right??) Anyway, I can’t wait to check out this book!

  44. The first time I made whoopie pies was about 24 years ago when I was newly married. A local Mennonite lady had just published her first cookbook and my Mom bought it for me and the recipe for Whoopie Pies was in the book. I was a new cook and didn’t pay any attention to the yield of the recipe and ended up with about 100 Whoopie pies spread out all over our tiny apartment :)

  51. As far as I know Whoopie Pies are more of a New England thing. One of my friends (who was originally from Georgia) referred to them as moon pies. They are delicious.

    They are a lot of fun to make, but I don’t often have a lot of call to bake so many extra cookies! The last batch I made I think was red velvet with a cream cheesy filling.

  52. Yes! I didn’t realize it at the time that what I made were whoopies, but they were delish! I made carrot-cake cookies and created a cream cheese frosting as the filler. The bf LOVED them as he’s a fan of carrot cake. Would love the book for more ideas!

  107. My mother-in-law makes these every once in a while, but her recipe is very time consuming. She calls them Gobs (sounds better than “blobs” which is what my husband calls them). They go like crazy around my house. She gave me a bunch to take home for to my family at Christmas and my brothers inhaled them!   122. My husband and I lived in northern Maine for a few years and enjoyed whoopie pies frequently. People here in Washington State laugh when I ask if they have ever heard of them. They are easy to make and delicious!

I’ve been trying to find a recipe to use, but am not sure if they will even come close to the ones I’ve found at the Farmers’ Market in central PA. I have to say, the Amish make them the best!   132. I had never heard of whoopie pies until I started baking more than just boxed brownies (so about three years ago) and even then it was only online. I have a good feeling if I told any of my friends that I was bringing whoopie pies to our next party they would look at me like I was insane.

    The closest thing to a whoopie pie I’ve really had are my red velvet sandwich cookies, which are more doughy and cake-like than cookies really… and my friends request them for EVERY party.

    I am from western Canada and I’ve never ever seen a Whoopie Pie but I’ve definately heard of them from American TV shows. They look delish! Koodos from Canada!

  177. I myself have never made them, but my mother has tried. The best whoopie pies I’ve ever had are from a Menonite family at the farmer’s market. My family would tell you the best ones are from up North in Massachusetts. I’m here on a trip this week, so I will find out for myself!

  190. I’m a New England girl who was transplanted to the South sometime in high school, and I miss Whoopie Pies! I’ve never made them, but I’ve had home made ones before and they are heavenly! They were definitely one of my favorite desserts growing up, and this cookbook could help me spread the joy that is whoopie pies to my southern friends who probably have no idea what they are missing!

  199. I just made my first batch a couple weeks ago. Basic chocolate with vanilla filling, but so good. This book looks like it has an endless amount of fun combos!
