The Best Chocolate Sheet Cake

This IS the best chocolate sheet cake ever. And I’m not just saying that because it’s the only one I’ve ever eaten. It IS delicious. And super moist and oh so chocolatey.

I’m officially in love. With the cake, not the Pioneer Woman. Well, maybe PW, too.

If you don’t know who I’m referring to (laughing as I type that), here’s her site:

I visited her and the family earlier this year at her ranch in Oklahoma and we baked cupcakes and made cake pops for some guests. Actually, she made this chocolate sheet cake recipe then for the cupcakes we used. However, we made a different frosting to decorate with so I didn’t get to experience the full effect. I don’t know what took me so long to try her complete recipe. I’m kicking myself now. It’s so easy and pretty darn quick, too. You don’t even need a mixer. Nope. No mixer. But you do need a 12 X 18 jelly roll pan. I think that’s what deterred me a little. I kept picturing a 12 X 18 cake sitting on my counter. And, well… that’s a lot of cake.

But then, a couple of weeks ago I received a surprise from the UPS guy… or girl…

It was PW’s soon-to-be-released cookbook. I was so excited to see it. I got a preview of the cover back in March and here it was. Finished. Full of Pictures. And Full of Recipes.

Including her Chocolate Sheet Cake.

The Pioneer Woman Cooks

That settled it. No more procrastinating. Chocolate Sheet Cake here I come.

You’ll need 2 cups flour and 1/4 teaspoon of salt to start. Easy enough.

Sugar

Then pour on the sugar. Two cups of the sweet stuff. I like how this is going.

Butter

Melt some butter. Two sticks. Thank you.

While it’s melting, stir together 1/2 cup buttermilk, two eggs, 1 teaspoon baking soda…

Vanilla

And add a little vanilla. A teaspoon to be exact.

Cocoa

Back to the butter. Drop in four heaping tablespoons of cocoa please.

Mix it up

Mix that all up.

Pouring 3

Add a cup of boiling water and stir. Let bubble for just a minute and turn then off the heat.

Then pour that over your flour, sugar and salt mixture and stir it all together.

Add the buttermilk mixture and stir until it’s smooth.

Anyone having a little deja vous here? I kinda feel like PW right about now with all these step-by step photos. But really, I couldn’t resist posting all of these pouring shots.

Batter

See… here’s another one. Look at that batter. It’s glorious.

Sheet Cake

Place the pan in a preheated 350 degree oven for about 20 minutes. I did 18.

And while the cake is baking, you can make the icing.

Butter and cocoa

Melt some more butter. One and 3/4 sticks this time. Add four more heaping tablespoons of cocoa and stir together.

Milk

Then add 6 Tablespoons milk and one teaspoon vanilla. Here’s the only thing I did differently. I didn’t have any milk. I know… that bites. So instead I used four tablespoons of evaporated milk mixed with two tablespoons of water. I could have gone all six evaporated, but I wanted to play it safe.

Powdered Sugar

Add ONE POUND of confectioner’s sugar. Thank you again PW. This is definitely going in the right direction.

Yum

Mix that all up really, really good. You can also add a 1/2 cup of chopped pecans, but I didn’t have any of those either. And actually, I’m glad I didn’t. This cake was just the way I like it. Non-crunchy.

Pour it on

After the cake is baked , immediately pour on the good stuff. Work the icing all over the cake, so you’ll have less spreading to do. Those little lumps in the photo are just bits of confectioner’s sugar. If you don’t add nuts, you’ll have to stir this really good to get them all out or sift your sugar first. But who has time for that when this cake is waiting.

Scoopable.

Let the cake cool completely. Just kidding. Just dig right in.

I have some baking to do, a lot! :) Your posting made me hungry (of course being pregnant that doesnt’ take much!) and then just at the part of your post where you stated you wished you had some milk, I was thinking the same thing and I wasn’t even really eating it!   12. You have to try her Fourth of July cake! It is amazing! She got the recipe from another one of my favorite baking ladies, the Barefoot Contessa, Ina Garten! The frosting is to die for ( and you just might, there’s a pound of butter in it!) and the cake is dense and delicious. The berries add a little tartness to the whole thing. Overall its delicious but not overly sweet. My sister and I made it for a family gathering and there was not much left. My aunts were standing around it at 1am still cutting little pieces off saying, “just one more bite!”

And the panfried ribeyes, and the garlic mashed taters and the chocolate french silk pie. Hmmm….. from the “Meal of Love.” Made that one for the hubs and he loved it all! So…. my answer to what recipe have I liked from her website? Every one.

  102. We Southern Girls have been making a version of this cake and taking it to church dinners, potlucks, and family get-togethers for years. I was curious about PW’s recipe because it uses 4 tablespoons of cocoa instead of 3. My husband likes the more intense chocolate taste the additional tablespoon adds. However, I have to say that no ‘self-respecting southern girl’ would ever bake this or any other sheet cake on a jelly roll pan. Got to use that old stand-by, the 9×13! And yes, this cake is good for breakfast, lunch, and dinner.

  122. I have tried many of her recipes. Everything she cooks looks amazing and tastes even better! So far my favorite recipe of her’s is for her Blackberry Cobbler. I don’t need to look up the recipe anymore I know it by heart! It’s easy and really delicious!
    I also get asked to make her Queso frequently!

  125. This cake reminds me of the wonderfully delicious, yet simple, cakes my mom made me over 50 years ago. There was always a home made cake or pie for dinner – thus my addiction to sweets! I am going to make this cake this weekend with my granddaughter. A slice of chocolate cake, a quart of ice cold milk – may family traditions continue!!!

  128. PW’s stuffing (dressing) recipe saved my Thanksgiving dinner this year! We are never going back to the box stuff. Her turkey prep instructions were also very helpful though I made my own brine as I didn’t want to run out to William-Sonoma.

    I’d love a copy of her book. Her photography is gorgeous so I expect this book to be a big inspiration if it were sitting on my bookshelf.

  136. i agree. This is my husband’s favorite chocolate cake. Don’t fret about using a jelly roll pan. I put it in a 9 x 13 and bake it accordingly.

  137. I’d love a copy of PW’s book. I’ve tried her “favourite salad” (can’t remember the real name) and it’s my favourite salad now too! I’ve also made her olive cheese bread (it’s one of those “glad I ate that” kind of foods) and I’ve made her prune cake.

    I LOVE her rosemary rolls, oh my GOD. I just ate one for breakfast… and I had 4 last night with dinner. I know they’re not sweet type things, but it’s still baking! And they’ll make your life so much happier, honest.

    But the cinnamon rolls look amazing too… and if I had the right size pan, I’d totally make that sheet cake.

  198. i’ve made the lasagne, the cinnamon rolls, and a few baked goods (both sweet and savory). the cinnamon rolls are TO DIE FOR and the recipe makes a whole bunch, so you can pass them around. my neighbors love them!
