This IS the best chocolate sheet cake ever. And I’m not just saying that because it’s the only one I’ve ever eaten. It IS delicious. And super moist and oh so chocolatey.
I’m officially in love. With the cake, not the Pioneer Woman. Well, maybe PW, too.
If you don’t know who I’m referring to (laughing as I type that), here’s her site:
I visited her and the family earlier this year at her ranch in Oklahoma and we baked cupcakes and made cake pops for some guests. Actually, she made this chocolate sheet cake recipe then for the cupcakes we used. However, we made a different frosting to decorate with so I didn’t get to experience the full effect. I don’t know what took me so long to try her complete recipe. I’m kicking myself now. It’s so easy and pretty darn quick, too. You don’t even need a mixer. Nope. No mixer. But you do need a 12 X 18 jelly roll pan. I think that’s what deterred me a little. I kept picturing a 12 X 18 cake sitting on my counter. And, well… that’s a lot of cake.
But then, a couple of weeks ago I received a surprise from the UPS guy… or girl…
It was PW’s soon-to-be-released cookbook. I was so excited to see it. I got a preview of the cover back in March and here it was. Finished. Full of Pictures. And Full of Recipes.
Including her Chocolate Sheet Cake.
That settled it. No more procrastinating. Chocolate Sheet Cake here I come.
You’ll need 2 cups flour and 1/4 teaspoon of salt to start. Easy enough.
Then pour on the sugar. Two cups of the sweet stuff. I like how this is going.
Melt some butter. Two sticks. Thank you.
While it’s melting, stir together 1/2 cup buttermilk, two eggs, 1 teaspoon baking soda…
And add a little vanilla. A teaspoon to be exact.
Back to the butter. Drop in four heaping tablespoons of cocoa please.
Mix that all up.
Add a cup of boiling water and stir. Let bubble for just a minute and turn then off the heat.
Then pour that over your flour, sugar and salt mixture and stir it all together.
Add the buttermilk mixture and stir until it’s smooth.
Anyone having a little deja vous here? I kinda feel like PW right about now with all these step-by step photos. But really, I couldn’t resist posting all of these pouring shots.
See… here’s another one. Look at that batter. It’s glorious.
Place the pan in a preheated 350 degree oven for about 20 minutes. I did 18.
And while the cake is baking, you can make the icing.
Melt some more butter. One and 3/4 sticks this time. Add four more heaping tablespoons of cocoa and stir together.
Then add 6 Tablespoons milk and one teaspoon vanilla. Here’s the only thing I did differently. I didn’t have any milk. I know… that bites. So instead I used four tablespoons of evaporated milk mixed with two tablespoons of water. I could have gone all six evaporated, but I wanted to play it safe.
Add ONE POUND of confectioner’s sugar. Thank you again PW. This is definitely going in the right direction.
Mix that all up really, really good. You can also add a 1/2 cup of chopped pecans, but I didn’t have any of those either. And actually, I’m glad I didn’t. This cake was just the way I like it. Non-crunchy.
After the cake is baked , immediately pour on the good stuff. Work the icing all over the cake, so you’ll have less spreading to do. Those little lumps in the photo are just bits of confectioner’s sugar. If you don’t add nuts, you’ll have to stir this really good to get them all out or sift your sugar first. But who has time for that when this cake is waiting.
Let the cake cool completely. Just kidding. Just dig right in.

By the way, this 12 X 18 cake taking up space on the counter? Don’t even think twice about it. The cake won’t last that long.

I LOVE her rosemary rolls, oh my GOD. I just ate one for breakfast… and I had 4 last night with dinner. I know they’re not sweet type things, but it’s still baking! And they’ll make your life so much happier, honest.
But the cinnamon rolls look amazing too… and if I had the right size pan, I’d totally make that sheet cake.

I love Pioneer Woman! My future sister introduced me to her almost a year ago now, and I’ve been hooked! I love the look of almost all of her recipes, but I don’t have a kitchen so I haven’t been able to try them. :-( But….I’m getting married soon! And this book would be a fun way to warm up my kitchen!
I love the Pioneer Woman and her website! She is fabulous! I tried the Cowboy Sandwich which is Cubed Steak and Hoagie Rolls with grilled onions. It is easy to make and soooo delicious. I served it with Hash Browns (SImply Potatoes…yum) and an Ice Cold Beer. I made this last Fall!
The recipe that I’ve loved and tried is PW’s “Best lasagna ever.” I’ve also tried Pastor Ryan’s pasta carbonara.
Wo doesn’t love Ree?! The last PW recipe I made was the “Fresh Green Beans, One Way” – my family devoured them!

I discovered Pioneer Woman more than a year ago, and I love her site. Her recipes are to die for, but her beautiful photos are also amazing.
I can’t choose only one recipe! But you should try soon the Crash Hot Potatoes; simply but delicious!
Oh, yes I would love a copy of her cookbook. I have tried her corn casserole (a huge hit and so easy), her baked beans (a hit) and a salsa (I can’t remember which one – but yummy!!!). Her cookbook is definitely on my wish list (my anniversay is soon – so maybe….).

I LOVE Pioneer Woman! I make her chocolate sheet cake recipe all the time for family get togethers, picnics with friends, or end of season sports parties. It’s the best sheet cake recipe. I was glad to see I’m not the only one that struggles with getting all the powdered sugar mixed up in the icing. I would love a copy of her cookbook! I’m definitely putting that on my Christmas list this year!!

I love Pioneer Woman. I have made her chocolate cake, twice baked potatoes, olive cheese bread, and cinnamon rolls. Every recipe has been a hit around my neck of the woods!
I have been a fan of PW for quite some time! Love every one of the recipes I have tried from her site, but I think the Crash Hot Potatoes were the best, by far….oh, and the Risotto. She made me a believer in parmesan and cream with that one, for sure!

Her Ranch Style Chicken and Bacon-Wrapped Jalapeno Thingies are big hits in my house.
I made her “Coffee Cake. Literally.” with a friend. Our cake completely crumbled when we were trying to get it out of the pan (she does warn that it sticks, and it really sticks) but we glued it back together with frosting and it tasted DELICIOUS.
I’ve never made any of her recipes but I LOVE visiting her site :-)
I love Pioneer Woman and Bakerella. I just bought a 50 pound bag of bread flour yesterday and plan to make her Rosemary Rolls baked in a cast iron skillet. My son is allergic to eggs, soy, and nuts, and found that many commerical breads use soy flour, so have to bake my own. Anyway, the Rosemary Rolls looked soooo good. I bought a cast iron skillet years ago but never seasoned it, so now will have to do that too! Great presentation of the rolls. Looks so yummy.

This cake is like the Texas Sheet cake I grew up eating. We just put pecans on the top and yummy–take one bite and your back to “snitch” some more.
We have tried the chicken spaghetti, it was wonderfull. I had my husband make me the pork chops on Halloween, yummy. I am going to try to see PW when she makes it up to the MOA in MN.

The best thing I have tried from PW’s recipes is the Ribeye Steak with the Onion Blue Cheese Sauce. It is the best thing on the planet ( well not counting desserts, obviously)! I must try this Chocolate Sheet Cake next though, I was also putting it off because of the pan size. Looks incredible!

The only recipe of hers that I’ve actually tried is the one for Individual Raspberry Cobblers (which I call Mini Volcanoes), but I love looking at all the recipes and adding them to my list of “Things to Try”. My goodness! I just discovered YOUR (TOTALLY AWESOME) site a few days ago. I also ordered my first subscription to SL magazine several weeks ago and got my first copy in the mail 4 days ago. I went through it and read the article on PW woman (not having read this post yet so I had no idea who she was!) I tore out several of the recipes she had in the magazine (including this one!) to try soon. Then I come here and realize she’s a star! So glad I’m in the loop now! Ha! You make me smile! One time I nd was making a buttercream icing reached for the milk…. hmm. Someone put the jug back in with just a few drops. ARGH! So, I grabbed the butter pecan flavored creamer. It turned out quite yummy!

I have PW bookmarked in my favorites (don’t worry you are in my favorites too :) ) i haven’t tried any of her recipes yet but this sheet cake looks like a great thing to bake for the holidays.

I’ve made a variation on MM’s favorite sandwich, a variation on the migas, (I like my migas a certain way, they are important to me)
Of course I’ve made cake balls and cake pops and cake – hmm… mini cupcakes. Many times. These have earned me much acclaim.
My cousin made the rosemary rolls just this week – they were lovely. I only got to see them in photos, not eat them. They looked lovely. I’m wondering if the Key lime pie my mother brought over last week was from PW as well.
Well, funny you should ask. I tried my first PW recipe this week. My husband had his wisdom teeth removed, so I decided to give her Delicious, Creamy Mashed Potatoes a try. They are DIVINE.

Ooooh the cinnamon rolls are delish! Her icing for these breakfast treats is fabulous. I made it several times this summer and can’t wait for an occaision to make them again.

Yum yum yum…it’s never too early in the day for cake! I made PW’s Tres Leches Cake last weekend, but had to alter it to be gluten free – my gluten-full counterparts had no idea! It was gone within minutes!

I have made lots of her recipes. My families favorite is MM”s favorite sandwich. I add mushroom and provolone cheese. I already have her cookbook, but want another copy to give as a gift. BTW, I made your cowgirl cookies in a jar, but used Halloween M & M’s and made them Halloween cookies. It was a real hit. Gave out 6 of them for gifts. Thanks Bakerella, you’re the best!!! Pat

Oh yes, I have to thank you for sharing her site! It goes right to my list of favourites! I’m from Sweden, and even though we do have delishous recipes here I love american recipes even more. I have a baking-blog but it is in swedish so you don’t understand the texts but I have som pics too. The latest post is from halloween, my nephew was a scary skeleton and did not want my monster-pops to be scarier than him. He asked me to do a kiss-monster instead of a scary one. :D

I’ve made several recipes from her site. Her lasagna really is the best lasagna ever. And we just made her Pear Crisp on Saturday night.
I have made so many PW recipes its ridiculous! One of my all time favorites is her roasted red pepper sauce that goes with pasta. So good!!!
Lasagna- my husband’s very favorite. No other compares in his world!

On Labor Day this year I made her sheet cake (can i get an amen?!) as well as the firecracker shrimp, except I used a SWEET chili sauce so that my kids could handle the heat. They were amazing and we finished off about 40 shrimp. Try it today!

i’ve made several and they’re always pleasin’… the crash potatoes, the best ever lasagna and MM favorite sammich — the steak and cheese concoction is super easy and super quick!

I’ve tried her Lemon Pasta, Individual Raspberry Cobbler (made also w/ blackberries and blueberries…OMG, SO good and talk about easy!), and just made up her Quick and Easy Apple Tart!

The PW recipe I make most often is her Firecracker Shrimp. It’s spicy but OH SO GOOD! You both rock!
I have tried THE chocolate cake your are talking about… and now 10 pounds later I am still eating that cake once a month! Wouldn’t trade a pound, it is YUM! If that little piece of heaven could sprout legs and jump up and down it would tell you to, “pick me, pick me!” :) barb
I have actually used this sheet cake recipe many times…it really is the best! For my son’s birthday I made two batches with 9×13 pans and layered them with a peanut butter icing inbetween…got more compliments on the taste than any other b-day cake I can remember!

I haven’t tried any of her recipies…but LOVE sheet cake. My mom made it…we called it Texas sheet cake and there’s another version called Alaska sheet cake that is yummy too.

Sadly, I have not tried too many of her recipes. I made the pancakes (very good) and Pastor Ryan’s Mexican Lasagna from her site (to die for!!), but am waiting for Christmas to make the cinnamon rolls.
