This IS the best chocolate sheet cake ever. And I’m not just saying that because it’s the only one I’ve ever eaten. It IS delicious. And super moist and oh so chocolatey.
I’m officially in love. With the cake, not the Pioneer Woman. Well, maybe PW, too.
If you don’t know who I’m referring to (laughing as I type that), here’s her site:
I visited her and the family earlier this year at her ranch in Oklahoma and we baked cupcakes and made cake pops for some guests. Actually, she made this chocolate sheet cake recipe then for the cupcakes we used. However, we made a different frosting to decorate with so I didn’t get to experience the full effect. I don’t know what took me so long to try her complete recipe. I’m kicking myself now. It’s so easy and pretty darn quick, too. You don’t even need a mixer. Nope. No mixer. But you do need a 12 X 18 jelly roll pan. I think that’s what deterred me a little. I kept picturing a 12 X 18 cake sitting on my counter. And, well… that’s a lot of cake.
But then, a couple of weeks ago I received a surprise from the UPS guy… or girl…
It was PW’s soon-to-be-released cookbook. I was so excited to see it. I got a preview of the cover back in March and here it was. Finished. Full of Pictures. And Full of Recipes.
Including her Chocolate Sheet Cake.
That settled it. No more procrastinating. Chocolate Sheet Cake here I come.
You’ll need 2 cups flour and 1/4 teaspoon of salt to start. Easy enough.
Then pour on the sugar. Two cups of the sweet stuff. I like how this is going.
Melt some butter. Two sticks. Thank you.
While it’s melting, stir together 1/2 cup buttermilk, two eggs, 1 teaspoon baking soda…
And add a little vanilla. A teaspoon to be exact.
Back to the butter. Drop in four heaping tablespoons of cocoa please.
Mix that all up.
Add a cup of boiling water and stir. Let bubble for just a minute and turn then off the heat.
Then pour that over your flour, sugar and salt mixture and stir it all together.
Add the buttermilk mixture and stir until it’s smooth.
Anyone having a little deja vous here? I kinda feel like PW right about now with all these step-by step photos. But really, I couldn’t resist posting all of these pouring shots.
See… here’s another one. Look at that batter. It’s glorious.
Place the pan in a preheated 350 degree oven for about 20 minutes. I did 18.
And while the cake is baking, you can make the icing.
Melt some more butter. One and 3/4 sticks this time. Add four more heaping tablespoons of cocoa and stir together.
Then add 6 Tablespoons milk and one teaspoon vanilla. Here’s the only thing I did differently. I didn’t have any milk. I know… that bites. So instead I used four tablespoons of evaporated milk mixed with two tablespoons of water. I could have gone all six evaporated, but I wanted to play it safe.
Add ONE POUND of confectioner’s sugar. Thank you again PW. This is definitely going in the right direction.
Mix that all up really, really good. You can also add a 1/2 cup of chopped pecans, but I didn’t have any of those either. And actually, I’m glad I didn’t. This cake was just the way I like it. Non-crunchy.
After the cake is baked , immediately pour on the good stuff. Work the icing all over the cake, so you’ll have less spreading to do. Those little lumps in the photo are just bits of confectioner’s sugar. If you don’t add nuts, you’ll have to stir this really good to get them all out or sift your sugar first. But who has time for that when this cake is waiting.
Let the cake cool completely. Just kidding. Just dig right in.

By the way, this 12 X 18 cake taking up space on the counter? Don’t even think twice about it. The cake won’t last that long.

I only recently discovered PW, so I haven’t tried any of her recipes, but I have found myself with mixed emotions including jealousy and awe. How does this woman do it? As a mother of 3, who just started homeschooling, and who loves to cook and decorate my house, I can barely keep up with the laundry or find the Tupperware my one year old has scattered around the house. Someday, I would like to have it together like PW.

I’ve tried a lot of Ree’s recipes, I really liked her Chicken Parmigana, but my FAVOURITE has been the good old macaroni and cheese. SO fabulous! I’ve tried a bunch of different mac and cheese recipes, but that one was the best. Oh, and the chocolate sheet cake is a classic in my house. I have to halve the recipe because we eat the whole thing so fast. (I like it best after it sits on the counter a day or two though, makes it super moist)

I’ve made her sugar cookies, but I wasn’t too happy with using shortening (sorry PW!!!), but I REALLY want to try some of her bread recipes. And yes, that includes the cinnamon rolls, as well as her latest, the Rosemary buns.
Oh, and how about her Pear Crisp with Vanilla Ice Cream? Drizzle some chocolate on it or maybe add a pear-shaped (smiling) cake pop in the middle :)

Try the French Breakfast Puffs! Those are wonderful, and super easy. We love them! If you want to try something savory, go for the lemon pasta, and add some shrimp to it. Yum!

There are two recipes that come to mind…onion strings, which are super addicting and her lasagna recipe, which we fed to a college boys soccer team…big mistake! They wouldn’t leave the house!!
PW has renewed my love of cooking since I found her website a few months ago. I’ve made brisket, potroast, cinnamon rolls and Lordy those bacon wrapped jalepeno things. Lots of other stuff too.

I’ve tried a few PW recipes–always very satisfied with the results. Cinnamon rolls and the beans & corn bread were the most recent. Oh and the lemon spaghetti is so simple and very tasty.

I LOVE Pioneer Woman. I have been reading her site for about a year now and it is wonderful. I have tried several of her recipes, including the Chocolate Sheet Cake. You are right, it’s delicious. I also love, the Crash Hot potatoes, and just recently I tried the Cauliflower Soup, which was oh so yummy. I would be thrilled with a copy of her cookbook.

Love PW — my favorite so far has to be her Asian Salad. You must try it! It’s always a hit at a party or family function. Especially for the vegetarians in the crowd.

I’ve tried quite a few of PW’s recipes and they’ve all been great. One of my favorites, though, is probably her Thanksgiving stuffing with white bread and corn bread.

This recipe sounds and looks great. I really enjoyed your photos. This recipe sounds similar to a recipe I have called Texas Sheet Cake–only better. And the cookbook sounds like a great one for my collection.

PW’s Spaghetti with Artichoke Hearts and Tomatoes is delish! I highly recommend!
GARLIC CHEESE BREAD! it’s heavenly! far too rich and heavy to eat many in one go, but nevertheless it’s absolutely amazingly delicious! i’ve also tried this sheet cake, but it didn’t turn out right – i will defo give it another go though!

I love the Pioneer Woman ! I made her Strawberry Shortcake Cake for our first wedding anniversary last month and it was fabulous ! Big too ! and the colours were perfect for a romance inspired occassion.

I love just about everything Ree posts but her Ranch Style Chicken is on the menu at least every other week. Its delicious! I also already ordered a book, but would love to win one to gift to someone!

I made cinnamon rolls a while ago from her recipe. They were delicious! Earlier today I learned how to make homemade pumpkin puree from her website. Tomorrow, I will make her recipe for pumpkin spice muffins. Can’t wait!

I’ve tried a whole bunch of her recipes, although I have to veggify the meat ones. The best lasagna ever is awesome. I didn’t like her pancake recipe, but I love the pasta dishes and the quesadillas.
PW is on my favourite food blog list right under bakerella and right before smitten kitchen. I have yet to try and of her recipies but her most recent post about rosemary dinner buns baked in a cast iron frying pan look amazing! Not a sweet treat but an treat none the less!
I also love to read the other sections of her site about other aspects of her life. Her writing style is always humourous and enjoyable.
