This IS the best chocolate sheet cake ever. And I’m not just saying that because it’s the only one I’ve ever eaten. It IS delicious. And super moist and oh so chocolatey.
I’m officially in love. With the cake, not the Pioneer Woman. Well, maybe PW, too.
If you don’t know who I’m referring to (laughing as I type that), here’s her site:
I visited her and the family earlier this year at her ranch in Oklahoma and we baked cupcakes and made cake pops for some guests. Actually, she made this chocolate sheet cake recipe then for the cupcakes we used. However, we made a different frosting to decorate with so I didn’t get to experience the full effect. I don’t know what took me so long to try her complete recipe. I’m kicking myself now. It’s so easy and pretty darn quick, too. You don’t even need a mixer. Nope. No mixer. But you do need a 12 X 18 jelly roll pan. I think that’s what deterred me a little. I kept picturing a 12 X 18 cake sitting on my counter. And, well… that’s a lot of cake.
But then, a couple of weeks ago I received a surprise from the UPS guy… or girl…
It was PW’s soon-to-be-released cookbook. I was so excited to see it. I got a preview of the cover back in March and here it was. Finished. Full of Pictures. And Full of Recipes.
Including her Chocolate Sheet Cake.
That settled it. No more procrastinating. Chocolate Sheet Cake here I come.
You’ll need 2 cups flour and 1/4 teaspoon of salt to start. Easy enough.
Then pour on the sugar. Two cups of the sweet stuff. I like how this is going.
Melt some butter. Two sticks. Thank you.
While it’s melting, stir together 1/2 cup buttermilk, two eggs, 1 teaspoon baking soda…
And add a little vanilla. A teaspoon to be exact.
Back to the butter. Drop in four heaping tablespoons of cocoa please.
Mix that all up.
Add a cup of boiling water and stir. Let bubble for just a minute and turn then off the heat.
Then pour that over your flour, sugar and salt mixture and stir it all together.
Add the buttermilk mixture and stir until it’s smooth.
Anyone having a little deja vous here? I kinda feel like PW right about now with all these step-by step photos. But really, I couldn’t resist posting all of these pouring shots.
See… here’s another one. Look at that batter. It’s glorious.
Place the pan in a preheated 350 degree oven for about 20 minutes. I did 18.
And while the cake is baking, you can make the icing.
Melt some more butter. One and 3/4 sticks this time. Add four more heaping tablespoons of cocoa and stir together.
Then add 6 Tablespoons milk and one teaspoon vanilla. Here’s the only thing I did differently. I didn’t have any milk. I know… that bites. So instead I used four tablespoons of evaporated milk mixed with two tablespoons of water. I could have gone all six evaporated, but I wanted to play it safe.
Add ONE POUND of confectioner’s sugar. Thank you again PW. This is definitely going in the right direction.
Mix that all up really, really good. You can also add a 1/2 cup of chopped pecans, but I didn’t have any of those either. And actually, I’m glad I didn’t. This cake was just the way I like it. Non-crunchy.
After the cake is baked , immediately pour on the good stuff. Work the icing all over the cake, so you’ll have less spreading to do. Those little lumps in the photo are just bits of confectioner’s sugar. If you don’t add nuts, you’ll have to stir this really good to get them all out or sift your sugar first. But who has time for that when this cake is waiting.
Let the cake cool completely. Just kidding. Just dig right in.

By the way, this 12 X 18 cake taking up space on the counter? Don’t even think twice about it. The cake won’t last that long.

I’ve been reading Pioneer Woman’s blog for quite a while now. I loved her Pinto Beans recipe – can’t get much easier than that – and they were SO good. Would LOVE to win the cookbook to consolidate all her recipes that I keep printing.
I love PW! I was just thinking what a great gift the book would be.
Found her from your site and I check each of you out daily. I just tried her Sweet Roasted Rosemary Acorn Squash. Had never eaten an acorn squash before but the pictures made it look so good I had to try it. Yummy! There are a lot more of hers I am dying to try. Have also tried several of yours – love the cake pops!
PW’s Firecracker Shrimp were magically easy (if you can find some frozen shrimp and sriracha sauce, you’re there!) and delicious.
I know – it’s not a baking recipe. I could totally live on sheet cake alone, though. I just try the other recipes for fun.

I’ve been following PW’s website for a long time now. I love it! I’m so happy for her with the debut of her new cookbook. It’s been a long time coming. I am a HUGE PW fan!! I actually found this site through her page. I have tried a bunch of PW recipes, but my favorite is her sesame noodles. So easy and oh so delicious!

Okay, so I must be honest that chocolate cakes are not my favourite, but that does look good.
I also want to let you know that I made 2 of your recipes for our Halloween party this year…the pumpkin bites (I just used real tart shells instead) and the spider web cooies (but I made them cupcakes). They were such a hit.

Love the “hot crash potatoes” – don’t know if they are in the book, but from her website. So simple and so good.
The mac and cheese (where you make the white sauce base) is fabulous too. Old fashioned taste but with creamy texture.

My cousin, Heidi, introduced me to PW and I have made quite a few of her recipes and they have all been so good. Her Mountain Dew apple dumplings, yogurt cream, black bean chowder, crash hot potatoes and I could go on and on. Love PW and Bakerella!

I have tried a lot of her recipes…some I have adapted…some I followed….the latest one that I loved is the Stuffed Mushrooms! I shared with a lot of people, and everyone loved them.

Try making Great Grandma Iney’s Prune Cake. It’s delicious. My family loved it (even my picky 8 year old) and my quilt group loved it too. I can’t wait to get her book. But I’ll wait until after I see if I win one here.

Everything I’ve tried from her blog has been great. The mashed potatoes, rissotto, Marlboro Man sandwiches…all yummy and foolproof. I’ll put the chocolate cake recipe to the test as soon as I buy the right sized pan.

I absolutely love PW! I have tried many of her recipes, all to great success, but my current obsession is her olive cheese bread. Not only is it incredibly awesome, but it freezes beautifully to have on hand for a last-minute appetizer or a really naughty lunch.

My favorite PW recipe is the Olive Cheese Bread. It is so good. I have made it for people who don’t even like olives, and they loved this bread.

Ok, a NEED for this cookbook has never been so great! I need this cookbook. Seriously! I tried to make this sheet cake earlier in the year and it was a disaster. I need to give it another try so my baking confidence can be restored. Ree will be in town on Thursday for a book signing and I can’t face her until I master this recipe for sheet cake. lol
I adore PW Cooks. I have yet to have a bad recipe from her. Last night I made Penne alla Betsey and her stuffed mushrooms for my boyfriend and his parents. Amazing…. lots and lots of compliments! :-)

I have read about PW on your site, and browsed hers..but never tried a recipe. After reading all the comments here, though, Im thinking that needs to go on my to-do list ASAP! By the way…are you interested in more sheet cake recipes? I have a friends whose recipe is sinful…the frosting includes walnuts and coconut…and I have dreams about it! Food…isnt it GREAT!!

I’ve made lots of her recipes! They are all great so far. I would say you should try her chicken and rice soup recipe next since it’s fall and is such a yummy soup. I’d LOVE to have her cookbook!
I wouldn’t have found your website if I hadn’t been a big fan of PW! My favorite PW recipe is the King Ranch Chicken with twice baked potatoes.

I have tried many of her recipes and the one I can’t live without is the stuffed mushrooms (the ones with sausage, not the newest ones). And yes, that chocolate sheet cake is THE BEST! DELICIOUS!
This cake looks really yummy!! I’ve known PW for a while and i have to say that her asian noddle salad recipe is really good and a nice way to eat your veggies…..before you eat tons of desert! (and not feel guilty about it!)

I have tried so many of her recipes. I love them all. The apple dumplings, the sandwiches, the potatoes, the main dishes, everything is so good. I love her stuffing recipe!!! I make it every year. I really want this cookbook, but can’t buy it until after Christmas, so I really hope I win :)

Awesome!!!! Check out her Ranch Chicken receipe…any recipe that calls for bacon grease as an ingredient, well, let’s just say it ain’t gonna be bad! We love it and have made it about 4 times in the last 3 weeks!

Pioneer Woman’s recipes are absolutely amazing. I just made the Pear Crisp that she posted about last week over the weekend… it was delicious. I highly recommend making that one. Another one of my favorites is her Penne a la Betsy (drool) and her Creamy Tomato soup (not sure if that’s the actual name, however). You can’t go wrong with any of her recipes.
I love her Chicken Spaghetti and the Asian Noodle Salad….yum!
I made her “Spreads” last weekend, and they were a hit!

That’s one of my fav cakes. I use sour cream instead of buttermilk, though, but really, when chocolate is involved, who cares about the details!

Yes, I have made several of her recipes… all delish!! one of my favorites is Fettucine Alfredo.
Her carrot cake is my favorite carrot cake around, by a mile. And her lasagna has changed my life.
