This IS the best chocolate sheet cake ever. And I’m not just saying that because it’s the only one I’ve ever eaten. It IS delicious. And super moist and oh so chocolatey.
I’m officially in love. With the cake, not the Pioneer Woman. Well, maybe PW, too.
If you don’t know who I’m referring to (laughing as I type that), here’s her site:
I visited her and the family earlier this year at her ranch in Oklahoma and we baked cupcakes and made cake pops for some guests. Actually, she made this chocolate sheet cake recipe then for the cupcakes we used. However, we made a different frosting to decorate with so I didn’t get to experience the full effect. I don’t know what took me so long to try her complete recipe. I’m kicking myself now. It’s so easy and pretty darn quick, too. You don’t even need a mixer. Nope. No mixer. But you do need a 12 X 18 jelly roll pan. I think that’s what deterred me a little. I kept picturing a 12 X 18 cake sitting on my counter. And, well… that’s a lot of cake.
But then, a couple of weeks ago I received a surprise from the UPS guy… or girl…
It was PW’s soon-to-be-released cookbook. I was so excited to see it. I got a preview of the cover back in March and here it was. Finished. Full of Pictures. And Full of Recipes.
Including her Chocolate Sheet Cake.
That settled it. No more procrastinating. Chocolate Sheet Cake here I come.
You’ll need 2 cups flour and 1/4 teaspoon of salt to start. Easy enough.
Then pour on the sugar. Two cups of the sweet stuff. I like how this is going.
Melt some butter. Two sticks. Thank you.
While it’s melting, stir together 1/2 cup buttermilk, two eggs, 1 teaspoon baking soda…
And add a little vanilla. A teaspoon to be exact.
Back to the butter. Drop in four heaping tablespoons of cocoa please.
Mix that all up.
Add a cup of boiling water and stir. Let bubble for just a minute and turn then off the heat.
Then pour that over your flour, sugar and salt mixture and stir it all together.
Add the buttermilk mixture and stir until it’s smooth.
Anyone having a little deja vous here? I kinda feel like PW right about now with all these step-by step photos. But really, I couldn’t resist posting all of these pouring shots.
See… here’s another one. Look at that batter. It’s glorious.
Place the pan in a preheated 350 degree oven for about 20 minutes. I did 18.
And while the cake is baking, you can make the icing.
Melt some more butter. One and 3/4 sticks this time. Add four more heaping tablespoons of cocoa and stir together.
Then add 6 Tablespoons milk and one teaspoon vanilla. Here’s the only thing I did differently. I didn’t have any milk. I know… that bites. So instead I used four tablespoons of evaporated milk mixed with two tablespoons of water. I could have gone all six evaporated, but I wanted to play it safe.
Add ONE POUND of confectioner’s sugar. Thank you again PW. This is definitely going in the right direction.
Mix that all up really, really good. You can also add a 1/2 cup of chopped pecans, but I didn’t have any of those either. And actually, I’m glad I didn’t. This cake was just the way I like it. Non-crunchy.
After the cake is baked , immediately pour on the good stuff. Work the icing all over the cake, so you’ll have less spreading to do. Those little lumps in the photo are just bits of confectioner’s sugar. If you don’t add nuts, you’ll have to stir this really good to get them all out or sift your sugar first. But who has time for that when this cake is waiting.
Let the cake cool completely. Just kidding. Just dig right in.

I love love love PW. I recently found her website and devoured every bit of it. I love her recipes mixed with humor, I love her story about meeting the love of her life, and her photos bring it all to life. My favorite recipe right now would have to be those delicious buttered rosemary rolls. But the one I really want to try (besides the sheet cake boy do I love chocolate) is the tres leches cake, yum yum. Better get you some milk:)

You’ve got to try PW’s mac and cheese. OMG, it is heaven. You can eat it right from the stove or bake it for a cheesy, crusty top. It’s delish!

Great post Bakerella! I love the Pioneer Woman. Her recipes are great. Try her Best Lasagna Ever and Cheesy Garlic Bread. MMM Good! We’ve enjoyed all her recipes. I can’t wait to get my hands on her cookbook. I know it will be an instant favorite.
I love the Apple Cake in an Iron Skillet. It is to die for. I think that I am going to try her brie stuffed mushrooms next.
I have tried several of her recipes and they all turn out amazing. My kids favorite is the dump cake. My parents loved the apple dumplings. I loved the cowboy steak sandwiches.

I have made a few of her recipes from the website. Out of the ones that I have made, the apple dumplings are the best things I have ever tasted in my life!! I went out and bought a bushel of apples just so I could have them on hand so that I can make this whenever.

I’ve tried a lot of her recipes.. never had one fail yet. Her cinnamon rolls are awesome, so are Hycinths everything cookies, and the oatmeal crispies. Marlboro man’s sandwich is a mainstay at our house, bacon wrapped jalapeno poppers, yummm… try any of them.. you can’t choose wrong!!
Well, lets see — so far I’ve made Crash Hot Potatoes, Tres Leches Cake, Apple Dumplings, Brisket, Chicken Spaghetti, Ranch Style Chicken, Sesame Noodles and Stuffed Mushrooms. They were all divine! The Ranch Style Chicken is something you really NEED to try — my guys LOVED it.! Next up for me to make are her Twice Baked Potatoes and the infamous Chocolate Cake. Ree rocks!
You must must must try the sea salt truffles. They’ll make you fat. But so happy.
I have tried a couple of her recipes – my favorites are the chocolate sheet cake and the onion shoestrings things.
That sheet cake is just like my mom’s! And we ate it right out of the pan — with the fabulous frosting — that makes it all complete. I just discovered the PW site last week (I know — slow!) — and I’m making the rosemary dinner rolls next.
I visit her site daily (as well as yours) and have made many a recipe…including this sheet cake. Love it (and I think her too).

I made the Marlboro Man’s Fravorite Sandwich for my wife. She loved it. We have ordered We ordered “The Pioneer Woman Cooks” for our kitchen challenged daughter.
I have not tried any of her recipes, but I did go to my local book store to get her book and they didnt have it. Heck when I asked about it they looked at me like they had no idea who I was talking about, so i gave them her web site.

The first recipe I tried from the Pioneer Woman was actually your cake pops. I recently tried the grilled steak with the onion-blue cheese sauce. It was to die for. I could just eat the sauce all by itself.
Made Chicken Parmesan (although I use the “Tennessee” spelling LOL). My family LOVED it! The cookbook looks beautiful.

I’ve made the caramel apple rolls… sans the apple part, because when you have a serious craving for caramel, fruit just gets in the way. Actually, I’ve made them like this twice, and they are AMAZING. (If I could change the font size on that it would be a million.) I’m sure with the apples they are equally amazing.
The dough also makes really nice plain buns for lunchboxes.

We make many things from PW’s site- favorite is the garlic cheese bread and the twice baked potatoes.

I LOVE her website, though I haven’t tried any of her recipes… she had some glorious looking cinnamon rolls featured one time, I wish you would make those– I really want a good cinnamon roll recipe!
I love all of her recipes but the Penne a la Betsy which is in the cookbook is delicious. I have her cookbook on my Christmas list but it would be wonderful to get it earlier than that. : )
After spending most of my life in the midwest and now in the south, I FEEL like a pioneer woman, always trying to find the next best recipe. Never tried anything in a jelly roll and dying to now! Yum! Thanks for introducing me – if I don’t win, her book is on my Christmas list!

zucchini cake!!!
I’ve only tried one recipe from PW–her chex mix recipe. It is soooooo good. I had to try something homemade for my 2 year-old who got addicted to “pretzels” and needed something more healthy than the store bought mixes. He loves this stuff! The spicier, the better. Oddly enough he loves “pretzels” aka chex mix, but won’t touch a pretzel with a 10 foot pole!

I made the pot roast, it was super super delicious! Everyone loved it! It made the house smell wonderfully autumnish while cooking in the oven -=D

You need to try the cinnamon rolls. They make A LOT, but they are so amazing and yummy. Now I want to make them again! :) Enjoy…and please let me win the cookbook…it looks amazing! :)

I had a Pioneer Woman pot luck at my house a while back and 15 of my closest friends and I each tried a recipe and got together to eat them. They were ALL good, especially this chocolate sheet cake. The pot roast and potatoes were a big hit, too. That was a good night.

You absolutely have to dry her ribeye steak with onion blue cheese sauce! It has become a staple in our household, we have it once a week!
I absolutely LOVE PW! I have made the chocolate sheet cake and several of her other recipes. They are all fabulous! I really want to go meet her when she is in Kansas City in a couple of weeks.

Thank you for introducing me to Ree! That cake looks amazing and totally like something I could handle baking. By the way, I made your pumpkin pie bites and Trix spider cookies last week for various parties and they were a huge hit in appearance and taste! I felt so proud of myself for making such pretty treats thanks to you:o).
Oh man, I everything I’ve made has been so good… but sticking with the baking theme, I liked her individual blackberry cobblers. I used raspberries, and they were so quick and yummy with ice cream. And of course, the chocolate sheet cake IS the best I’ve ever had!
I’ve never made any of PW’s recipes, but that is about to change, very shortly. I’m a chocolate lover and this sheet cake looks and sounds divine!

I do love PW’s site. I love this site. I love recipe sites……I also own 4,812 cookbooks……can you say I’m obsessed? I NEED this cookbook….I mean I REALLY need this cookbook…..I deficient without it…..(smile).

Yes, I love the Pioneer Woman! All of her recipes are awesome. My favs so far are Marlboro Man’s Second Favorite Sandwich (chicken and peppered bacon) and the Rosemary Buttered Rolls. :)

Thanks for introducing me to PW! I have never been on her site before. Serendipity two fold–I have a Bluegrass Birthday party this wknd–PW sheet cake is perfect! AND I have a sister in WYO I love sending baked goods to. Seems very suiting they should be from a self proclaimed PW.
i tried her bacon wrapped stuffed jalapeno “thingies” (that’s what she calls them!!). they were a big hit both places i took them. =)
