This IS the best chocolate sheet cake ever. And I’m not just saying that because it’s the only one I’ve ever eaten. It IS delicious. And super moist and oh so chocolatey.
I’m officially in love. With the cake, not the Pioneer Woman. Well, maybe PW, too.
If you don’t know who I’m referring to (laughing as I type that), here’s her site:
I visited her and the family earlier this year at her ranch in Oklahoma and we baked cupcakes and made cake pops for some guests. Actually, she made this chocolate sheet cake recipe then for the cupcakes we used. However, we made a different frosting to decorate with so I didn’t get to experience the full effect. I don’t know what took me so long to try her complete recipe. I’m kicking myself now. It’s so easy and pretty darn quick, too. You don’t even need a mixer. Nope. No mixer. But you do need a 12 X 18 jelly roll pan. I think that’s what deterred me a little. I kept picturing a 12 X 18 cake sitting on my counter. And, well… that’s a lot of cake.
But then, a couple of weeks ago I received a surprise from the UPS guy… or girl…
It was PW’s soon-to-be-released cookbook. I was so excited to see it. I got a preview of the cover back in March and here it was. Finished. Full of Pictures. And Full of Recipes.
Including her Chocolate Sheet Cake.
That settled it. No more procrastinating. Chocolate Sheet Cake here I come.
You’ll need 2 cups flour and 1/4 teaspoon of salt to start. Easy enough.
Then pour on the sugar. Two cups of the sweet stuff. I like how this is going.
Melt some butter. Two sticks. Thank you.
While it’s melting, stir together 1/2 cup buttermilk, two eggs, 1 teaspoon baking soda…
And add a little vanilla. A teaspoon to be exact.
Back to the butter. Drop in four heaping tablespoons of cocoa please.
Mix that all up.
Add a cup of boiling water and stir. Let bubble for just a minute and turn then off the heat.
Then pour that over your flour, sugar and salt mixture and stir it all together.
Add the buttermilk mixture and stir until it’s smooth.
Anyone having a little deja vous here? I kinda feel like PW right about now with all these step-by step photos. But really, I couldn’t resist posting all of these pouring shots.
See… here’s another one. Look at that batter. It’s glorious.
Place the pan in a preheated 350 degree oven for about 20 minutes. I did 18.
And while the cake is baking, you can make the icing.
Melt some more butter. One and 3/4 sticks this time. Add four more heaping tablespoons of cocoa and stir together.
Then add 6 Tablespoons milk and one teaspoon vanilla. Here’s the only thing I did differently. I didn’t have any milk. I know… that bites. So instead I used four tablespoons of evaporated milk mixed with two tablespoons of water. I could have gone all six evaporated, but I wanted to play it safe.
Add ONE POUND of confectioner’s sugar. Thank you again PW. This is definitely going in the right direction.
Mix that all up really, really good. You can also add a 1/2 cup of chopped pecans, but I didn’t have any of those either. And actually, I’m glad I didn’t. This cake was just the way I like it. Non-crunchy.
After the cake is baked , immediately pour on the good stuff. Work the icing all over the cake, so you’ll have less spreading to do. Those little lumps in the photo are just bits of confectioner’s sugar. If you don’t add nuts, you’ll have to stir this really good to get them all out or sift your sugar first. But who has time for that when this cake is waiting.
Let the cake cool completely. Just kidding. Just dig right in.

By the way, this 12 X 18 cake taking up space on the counter? Don’t even think twice about it. The cake won’t last that long.

I made her lasagne and her oatmeal crispies…. and I’ve printed a few others for the must try pile!
I absolutely love PW! I have tried many – crash potatoes, peanut butter pie, lime pie, strawberry cake, her jalapeno bacon poppers, apple dumplings. ALL WERE DELICIOUS! I think there’s more but I can’t remember. Oh – how could I forget – had her double baked potatoes just last night! If I had to pick one right now, I think I’d go with the jalapeno bacon wrapped appetizers.
If you have not tried steak bites yet, then that is what you should try next. I use steak dust to season the steak bites before i cook them. They are amazing!

LOVE the Pioneer Woman! One of my all-time faves is the Ranch Style Chicken. YUMMO! I’ve made lots of stuff from her site, and it is all delicious. I have the cookbook on my Christmas list!
I would love a copy. My favorite thing of hers that we have tried is her buttered bread recipe. You take a whole stick of butter spread it over 1/2 a loaf of the bread, bake it until it’s melted and oozing into the bread and then broil it. OH MY WORD it’s wonderfully sinful.

I’ve made her Queso and Chex Mix which were both hits at the tailgates! Next time, we are having our 4th Annual Chili-cookoff tailgate and I’m planning on trying her bacon wrapped jalapeno thingies!! I have tried several of her recipes as has my daughter. I purchased the cook book for myself and both of my daughters and am trying to win one here for my mother. The Chicken Spaghetti is great, love the Cinnamon Rolls, we all like Marlboro Man’s Favorite Sandwich but I prefer PW’s favorite sandwich (a fancy grilled cheese) and we all love the Chocolate Sheet Cake of course.

I have tried a lot of Ree’s recipes. Recently I’ve been following her instructions on making pumpkin puree for all sorts of different things. But I think the chocolate sheet cake may be my favorite of all the recipes I’ve tried
I have tried MANY of PW’s recipes. Recently I tried the Rosemary Rolls only I used garlic instead (trying to make them like the ones you get at Scalini’s). Monday Night Stir Fry is a favorite in my house. I am not sure which one to recommend you to try next….they are all so good.

I’ve tried a few recipes, and wish I had more time to try more. I’ve made the famous “Dump Cake” several times, and I also made the Cowboy Egg Casserole-ish once. It has the torn bread, egss, cheese and more cheese and cream cheese and then some more butter and cheese. YUM!!

I made this sheet cake for a kid’s soccer party and it was a hit. Not only with the kids, who will eat pretty much any chocolate cake you put in front of them, but for the adults also. A group of us mom’s were drinking red wine and the cake was delicious with it! Thank you for another great recommendation.

I love the jalapenos filled with cream cheese and wrapped in bacon. I know, I know, sounds hot, right? But the cream cheese cools the pepper off and what’s not to love about bacon? Anyway, I made them for a party once and now I am not allowed to come to my friends house unless I bring them with me!

One day I opened my fridge to find heavy cream in there. Hubby had bought some for one of his recipes. I jumped up and down, ran to the computer, and pulled up PW’s version of alfredo sauce. H.E.A.V.E.N. I usually don’t have heavy cream, so it was a treat. So that’s my suggestion: you should definitely try her fettucini alfredo recipe.

Here’s a few: Baked Lemon Pasta (YUM!), Pastor Ryan’s Chicken Tikka Masala (OH MY!), Pico, Guacamole, Spicy Shrimp Quesadillas (MUST TRY!), Crash Hot Potatoes, Ginger Steak Salad, Hot and Sweet Drumsticks, Baba Ganoush, Peach Crisp with Maple Cream Sauce, Sesame Noodles, Spicy Molasses Cookies, Steak Bites (If you haven’t tried them….DO!), and I’m sure that there are more that I’m forgetting. Everything has been great.
I’m dying to get her cookbook, and wish that she’d make it out to CT for her book tour!

i love PW’s site but just haven’t had the chance to try any of her recipes yet…2 little ones makes it hard to get some free time to play in the kitchen. Having her book would be like reading a wonderful novel until the day I have some free time…
I love Ree! I have tried many of her recipes! If you haven’t tried the Apple Dumpling then go make them now!! They are so good! I would love a cook book! I have been meaning to buy one. Being 9 months pregnant my mind wonders! lol

I have heard of the Pioneer Woman and I stalk her daily – I mean I read her blog daily and I ‘ve tried many of her recipes — apple dumplings is my family’s favorite, I’ve also tried the onion strings several times and there are several others I’ve tried and love. Pioneer Woman rocks and I need, WANT that cook book!
We’ve made the pretzels that were featured on her site that Smitten Kitchen made, and the cinnamon rolls are definitely on the to do list.

Every Pioneer Woman recipe I have tried, I have loved. Because Thanksgiving is on the mind, I’m already thinking about her make-ahead mashed potatoes and her sweet potatoes. Delish! I thought I didn’t like sweet potatoes until I tried her recipe last year. Now I can’t wait to have them again!

Yes!!! I’ve tried lots and lots but my favorite recipe is the Apple Pie… I’ve made it and it is ALWAYS requested… And my other favorite would have to be the orange shrimp, courtesy of Pastor Ryan. I always love her hot crash potatoes. Oh my, I love it all!
I love PW’s site….and a lot of her dishes that I’ve tried! How about trying her pumpkin cake with whiskey whip cream….my Montana hunters ate it for breakfast, lunch & dinner!

I’ve tried several recipes but the one that I am asked to make over and over is Not Your Granny’s Mac and Cheese. My daughter LOVES this dish!!
The real questions here is what recipes have a I NOT tried from PW’s website? The first was the wonderful Asian noodle salad and today I’m making her chicken parmesiana with cheese muffins. I don’t care if they don’t go together.

I love both of you. I have tried several of her recipes, but the hands-down favorite for my family are the bacon wrapped cheese-stuffed jalapeno peppers. They are awsome!

I have been a follower of Ree’s for several years, and was actually introduced to YOUR website (and the wonderful world of cake pops) last Halloween. I make Marlboro Man’s favorite sandwich for my favorite man at least twice a month. I love the ease of all of Ree’s recipes and the way she can make you laugh out loud with some of her observations and outlook on what life throws at you. I’ve actually made this chocolate before, as it has been a family favorite for many years. Thanks for the chance to win Ree’s fabulous new cookbook – it’s on my WISH LIST !!!
I LOVE everything I’ve tried from her site. My husband loves MM’s favorite sandwich. I loved the chicken somethin-or-other that she makes. (It has spaghetti and chicken and creamy-ness in it)

I’ve been following Ree for a couple of years now, and I’m working on getting my mom hooked too. She’s fantastic :) I’ve tried a whole bunch of her stuff, and it all came out amazing. I think you should try the cinnamon rolls next–just make sure you let the dough rise long enough so you end up with actual rolls and not an unworkable lump of dough. Not that I know from experience!
I really enjoyed making the marmalade yogurt cake. Of course, the chocolate is always a family fav.

I’ve made a few of her recipes… they are all delicious! This cake is pretty high on the list! As are the Apple Dumplings made.with.Mt.Dew!
So far all I’ve tried is her potato salad (yum!) but there are several other recipes I’ve been planning on trying.
After reading this recipe it sounds exactly like sheetcake brownies my mom used to make. I love them and you are right they do not last long at all. I am wanting a copy of that cookbook. Thanks for posting and sharing all your great ideas and recipes.
I’ve made the chocolate sheet cake before and it is literally a “slice of heaven.” You also need to try her apple dumplings. The recipe is on her web site. They are delish!

I first became addicted to her charming blog and then once I discovered she was a cook too, I was in heaven. I have made more than several of Ree’s recipes! I love her chicken tenders. And those mystery roll thingies. But I think my most favorite is one of the easiest. Onion straws. By golly those are delicious!
