This IS the best chocolate sheet cake ever. And I’m not just saying that because it’s the only one I’ve ever eaten. It IS delicious. And super moist and oh so chocolatey.
I’m officially in love. With the cake, not the Pioneer Woman. Well, maybe PW, too.
If you don’t know who I’m referring to (laughing as I type that), here’s her site:
I visited her and the family earlier this year at her ranch in Oklahoma and we baked cupcakes and made cake pops for some guests. Actually, she made this chocolate sheet cake recipe then for the cupcakes we used. However, we made a different frosting to decorate with so I didn’t get to experience the full effect. I don’t know what took me so long to try her complete recipe. I’m kicking myself now. It’s so easy and pretty darn quick, too. You don’t even need a mixer. Nope. No mixer. But you do need a 12 X 18 jelly roll pan. I think that’s what deterred me a little. I kept picturing a 12 X 18 cake sitting on my counter. And, well… that’s a lot of cake.
But then, a couple of weeks ago I received a surprise from the UPS guy… or girl…
It was PW’s soon-to-be-released cookbook. I was so excited to see it. I got a preview of the cover back in March and here it was. Finished. Full of Pictures. And Full of Recipes.
Including her Chocolate Sheet Cake.
That settled it. No more procrastinating. Chocolate Sheet Cake here I come.
You’ll need 2 cups flour and 1/4 teaspoon of salt to start. Easy enough.
Then pour on the sugar. Two cups of the sweet stuff. I like how this is going.
Melt some butter. Two sticks. Thank you.
While it’s melting, stir together 1/2 cup buttermilk, two eggs, 1 teaspoon baking soda…
And add a little vanilla. A teaspoon to be exact.
Back to the butter. Drop in four heaping tablespoons of cocoa please.
Mix that all up.
Add a cup of boiling water and stir. Let bubble for just a minute and turn then off the heat.
Then pour that over your flour, sugar and salt mixture and stir it all together.
Add the buttermilk mixture and stir until it’s smooth.
Anyone having a little deja vous here? I kinda feel like PW right about now with all these step-by step photos. But really, I couldn’t resist posting all of these pouring shots.
See… here’s another one. Look at that batter. It’s glorious.
Place the pan in a preheated 350 degree oven for about 20 minutes. I did 18.
And while the cake is baking, you can make the icing.
Melt some more butter. One and 3/4 sticks this time. Add four more heaping tablespoons of cocoa and stir together.
Then add 6 Tablespoons milk and one teaspoon vanilla. Here’s the only thing I did differently. I didn’t have any milk. I know… that bites. So instead I used four tablespoons of evaporated milk mixed with two tablespoons of water. I could have gone all six evaporated, but I wanted to play it safe.
Add ONE POUND of confectioner’s sugar. Thank you again PW. This is definitely going in the right direction.
Mix that all up really, really good. You can also add a 1/2 cup of chopped pecans, but I didn’t have any of those either. And actually, I’m glad I didn’t. This cake was just the way I like it. Non-crunchy.
After the cake is baked , immediately pour on the good stuff. Work the icing all over the cake, so you’ll have less spreading to do. Those little lumps in the photo are just bits of confectioner’s sugar. If you don’t add nuts, you’ll have to stir this really good to get them all out or sift your sugar first. But who has time for that when this cake is waiting.
Let the cake cool completely. Just kidding. Just dig right in.

By the way, this 12 X 18 cake taking up space on the counter? Don’t even think twice about it. The cake won’t last that long.

The Pioneer Woman is awesome!! I’ve used a few of her recipes.. Potato Bundles, banana bread, strawberry shortcake, and her cinnamon rolls! They are AMAZING!

I have followed Ree’s blog for about two years now, and it keeps getting better and better! I recently tried her quesadillas, which were fabulously crisp and cheesy. I’ve also tried the French Breakfast Puffs and gotten rave reviews. Really, though, I don’t think anyone can go wrong with any PW recipe!

Oooh!! I LOVE Pioneer Woman! Last year for Thanksgiving, my contribution was her mashed potatoes, and they were a HUGE hit with my family — and that’s saying something! I’ve tried lots of them!! I will say that it works best to follow her instructions and ingredients. When I skipped steps or added my own ingredients, it didn’t turn out as yummy.

I’ve actually tried the sheet cake – the best ever. I’ve made the apple dumplings and it was a hit, had to pass out the recipe to all the guests. The chicken spaghetti is also wonderful.

I love P Dub’s website. I visit every day. I think my favorite sweet treat from her site is the key lime pie (with regular limes). I’ve brought it several times for family parties – and now I get requests for pie!

I’ve tried this sheet cake too and totally fell in love! I also love PW’s meatball recipes, she uses oatmeal instead of breadcrumbs and it makes them extra moist and yum!

I’m a huge fan of the Yogurt Marmalade Cake (or maybe it’s Marmalade Yogurt cake?). Anyway, it is amazing. I’ve tried a bunch of her recipes, and never had anything that wasn’t tasty as heck!
Oh, but if your in the mood for savory, try those Bacon Wrapped Jalapeno Thingies… or any of Pastor Ryan’s recipes.

I’ve tried a LOT of her recipes, but love the ribeye with blue cheese onion sauce. As far as sweet stuff goes, the apple cake in an iron skillet was great as well.

I love lots of Ree’s recipes. Those that have gotten the most raves: her sheet cake, her apple turnover things and her chicken spaghetti. And this book is on my Christmas list, but I sure wouldn’t mind getting it in time to get it signed by her when she’s in my town later this month!
There are so many of her recipes that I love, but one of my favorites is her Mystery Rolls. Probably mostly because I love blue cheese (and butter), but they’re a great go-to recipe to have as a side bread for guests who randomly pop in for meals.

Just be sure to put in the butter, which is left out of the instructions in the recipe. Melt it and put it in with the coffee and water. I am now famous over a small area for making this cake, and every week someone begs me to make it again!

So..I read your email at 9am this morning and knew I has to make the cake. The only cocoa I had was Hershey’s Special Dark. Oh my goodness…this is the best cake I have ever tasted. My husband was home from work today and stood waiting with a spoon to taste it. It is one of the easiest cakes I have ever made. Ginger Steak Salad…. I use that marinade for everything! Jalepeno poppers… To die for!!!! Rolls!!!! Cinnamon Rolls and you “basterdized” version! There are way too many good recipes for me to list here! I love PW!!!!

You should try the spaghetti with artichoke hearts and tomatoes. SO simple to make, and it made my husband actually enjoy artichoke hearts! I love PW!

i love the PW. I actually found her site thru your site a while back when you went to visit her in OK. And now i’m hooked… thank you very much.
So i have tried a few of her recipies… the mac and cheese is fantastic; the chicken parm is wonderful; but the favorite and most requested in my house is the steak bits. It is a great way to make wonderful tender steak in the winter months (or when you’re just to lazy to go out and start the grill). My husband loves it… as a matter of fact, it’s what’s for dinner tomorrow night (steak is thawing in the fridge at this moment).
i so cant wait to get my hands on her cookbook… (hint hint- pick me, pick me) :)

My boyfriend talked for months about this amazing sheet cake his childhood friends mom used to make. It took a TON of effort but I finally found her on facebook and asked for the recipe so I could make it for the BF’s birthday. I made it an it was AMAZING! Then I come on line today and this recipe is almost identical – minus the pecans and some other things from the frosting! I cannot wait to try this recipe over the weekend and see if its the same or even better! I am totally interested in the mocha brownies as well – they sound amazing!
