This IS the best chocolate sheet cake ever. And I’m not just saying that because it’s the only one I’ve ever eaten. It IS delicious. And super moist and oh so chocolatey.
I’m officially in love. With the cake, not the Pioneer Woman. Well, maybe PW, too.
If you don’t know who I’m referring to (laughing as I type that), here’s her site:
I visited her and the family earlier this year at her ranch in Oklahoma and we baked cupcakes and made cake pops for some guests. Actually, she made this chocolate sheet cake recipe then for the cupcakes we used. However, we made a different frosting to decorate with so I didn’t get to experience the full effect. I don’t know what took me so long to try her complete recipe. I’m kicking myself now. It’s so easy and pretty darn quick, too. You don’t even need a mixer. Nope. No mixer. But you do need a 12 X 18 jelly roll pan. I think that’s what deterred me a little. I kept picturing a 12 X 18 cake sitting on my counter. And, well… that’s a lot of cake.
But then, a couple of weeks ago I received a surprise from the UPS guy… or girl…
It was PW’s soon-to-be-released cookbook. I was so excited to see it. I got a preview of the cover back in March and here it was. Finished. Full of Pictures. And Full of Recipes.
Including her Chocolate Sheet Cake.
That settled it. No more procrastinating. Chocolate Sheet Cake here I come.
You’ll need 2 cups flour and 1/4 teaspoon of salt to start. Easy enough.
Then pour on the sugar. Two cups of the sweet stuff. I like how this is going.
Melt some butter. Two sticks. Thank you.
While it’s melting, stir together 1/2 cup buttermilk, two eggs, 1 teaspoon baking soda…
And add a little vanilla. A teaspoon to be exact.
Back to the butter. Drop in four heaping tablespoons of cocoa please.
Mix that all up.
Add a cup of boiling water and stir. Let bubble for just a minute and turn then off the heat.
Then pour that over your flour, sugar and salt mixture and stir it all together.
Add the buttermilk mixture and stir until it’s smooth.
Anyone having a little deja vous here? I kinda feel like PW right about now with all these step-by step photos. But really, I couldn’t resist posting all of these pouring shots.
See… here’s another one. Look at that batter. It’s glorious.
Place the pan in a preheated 350 degree oven for about 20 minutes. I did 18.
And while the cake is baking, you can make the icing.
Melt some more butter. One and 3/4 sticks this time. Add four more heaping tablespoons of cocoa and stir together.
Then add 6 Tablespoons milk and one teaspoon vanilla. Here’s the only thing I did differently. I didn’t have any milk. I know… that bites. So instead I used four tablespoons of evaporated milk mixed with two tablespoons of water. I could have gone all six evaporated, but I wanted to play it safe.
Add ONE POUND of confectioner’s sugar. Thank you again PW. This is definitely going in the right direction.
Mix that all up really, really good. You can also add a 1/2 cup of chopped pecans, but I didn’t have any of those either. And actually, I’m glad I didn’t. This cake was just the way I like it. Non-crunchy.
After the cake is baked , immediately pour on the good stuff. Work the icing all over the cake, so you’ll have less spreading to do. Those little lumps in the photo are just bits of confectioner’s sugar. If you don’t add nuts, you’ll have to stir this really good to get them all out or sift your sugar first. But who has time for that when this cake is waiting.
Let the cake cool completely. Just kidding. Just dig right in.

By the way, this 12 X 18 cake taking up space on the counter? Don’t even think twice about it. The cake won’t last that long.

You have to try her oriental salad, if you haven’t already. I think it is tagged under something like “my favorite salad ever, ever”. It is so good! Also, her simple asian noodles. And you are right, the cake is killer.

Back in the ’70’s I was making this cake…it was then called Texas Sheet Cake. I got the recipe from my neighbor. It is still my son’s favorite birthday cake and he is now 41!!!

I have tried the ribeye steak with blue cheese onion sauce. OMG! It is delicious! We’ve had it twice in two weeks, wish it was healthier! :) But it sure does taste good!

I have tried her manly beef sandwich, even though I don’t like beef. Everyone liked it. Also tried smashed potatoes, muffins, cinnamon rolls…. All solid recipes. And anyone can make them.

Her lasagna is divine. And oh so meaty and delicious. It’s man food, but also hungry woman food, too.
I love P-Dub! and I’ve made lots of her stuff. But the one thing you MUST make if you haven’t already is her Yogurt Cream & Berries. It’s literally one of the best things I’ve ever eaten. Unfortunately, to get the full effect, you’ll have to wait till next summer when blueberries are in season again. : ( But it’s good over other fruit, too, even just bananas or apples.

I have visited the Pioneer Womans site but haven’t tried any of her recipies yet. I’ve made several of her recipes and they’ve all turned out wonderfully. Her tiramisu is fantastic, and those baked chocolate pots incredibly yummy, but the best (so far)… the tres leche cake. I love cake and bake a lot, but this cake blew me away. It is in a league of its own. Milky deliciousness. The ultimate comfort food. Bakerella, make is soon!

I love PW! In fact, I found her through YOU! My daughter wanted to make oreo balls and so I googled it and came across you. I bookmarked your site, thinking I definitely needed to peruse your site some more, which I did at a later date. You happened to have just visited the ranch when I came back to you and I was hooked on you and on her.
So far from her site I’ve made lots of things… Ranch Chicken and Chicken Spaghetti being my favorites so far. Oh and the Bacon Wrapped Jalapeno Thingies and Twice Baked Potatoes. Oh Oh and while I’m not a fan of homemade mac and cheese (I blame my dad and stepmom who made the grossest homemade mac and cheese ever once), hers was pretty good. Oooohhh, the Veggie Bagel Sandwich. That’s my favorite!

Love all PWs recipes! Have tried so many, but the ones that people comment and love the most are the Fresh Corn Casserole and the Pasta with Roasted Red Pepper Sauce. I love the Penne a la Betsy…can’t get enough of tomato-cream sauce!

I’ve had tried several of her recipes, but my favorite so far is the Bacon Onion Cheddar Biscuits. I loooove bacon, and onion and cheddar, and this is a great way to have my 3 favorite foods in one bite. My husband’s favorite is the Macaroni & cheese… Cheese, for some reason, is what we can eat everyday and not get tired of it.

You have to try the truffles with sea salt, they are amazing!! Also, the sweet and spicky chicken legs, asian noodles and twice baked potatoes. Oh, yeah, her pie crust is amazing too. Can you tell I love PW too??

My favorite recipe of PW’s is the Peach Crisp with Maple Cream Sauce. The sauce is to die for!!
I actually saved her chocolate cake recipe about 3 months ago when I stumbled across it. I’m planning to make it on Thanksgiving. Good to know it’s such a hit! :)

I have tried many of PWs recipes. So many that I can’t even decide which to suggest you try next. Tonight I am making her lasagna but the holidays are coming and I haven’t been able to get my mind off of the butternut squash, the mashed potatoes and those apple dumplings!
I read her blogs everyday (and I’m going to see her while at her Phoenix book tour stop later this week!). I made the Molten Chocolate Cakes she featured on her web site earlier in the summer and I absolutely LOVE them. Now I make batches of 20 and save them for snacks and breakfasts!

I love Pioneer Woman and all her recipes. A favorite of mine is the ribeye and the onion blue cheese sauce and it was delicious. My whole family loved it!
I just made her Molten Lava Cake this weekend – DELISH!!!! I’ve made the Yogurt marmalade cake and rum cake … all for holiday gifts. Yummy. Her recipes have not failed me

Her desserts are amazing! Her recipe on blueberries muffins made with yogurt has never failed me. I also made the pasta alla vodka with some girlfriends! I can’t wait to try making her new recipes on stuffed mushrooms! I would love to have a copy of PW’s cookbook
Oh my gosh-I think the only recipes I have not tried are the ones with mushrooms in them-she loves them and I don’t. But I can’t wait to try those rosemary dinner rolls in the cast iron skillet-YUM!
And I am SO looking forward to getting my hands on a copy of her cookbook-that’s the one thing I want for Christmas this year :)

Try Grandma Iny’s Prune cake next. It’s difficult to find on the website, unless they’ve re-indexed recently. The blog post title was something like, “Make this cake RIGHT NOW.”
I read pw everyday. I loved her chili recipe. I am going to make the rosemary/seasalt rolls and the truffles this week!
I have a whole list of starred recipes by her to go through. I can’t wait to try this cake.

I saw the “Pioneer Woman” the other day, on the Bonnie Hunt show. I had heard of her from posts on your blog – so I stayed tuned to the show to see what she was about… LOVE HER! Not only did her recipe for this chocolate sheet cake look amazing and easy – but she is so cute and funny! And to be able to come across as funny when you are on a talk show with a comedian is saying a lot! I was so impressed and of course immediately decided I needed her cookbook – hope I can win it but if not then I will definitely be buying it (or asking Santa to bring me one for christmas!)

I have just recently became a Bakerella and PW fanatic! I made my first cake pops for a fall festival (pumpkins). They were a major hit! My husband ate 4 in a row and he’s says he’s not a big sweet eater!
Love Ree’s recipes. So far have made the enchiladas (the best) and spinach salad. Will try the apples dumplings and this scrumptious sheet cake.

I LOVE PW too. I have to admit though I end up scanning her photos and ohh and ahhh most of my time away but she does inspire me just the same. Now I am on your site working on becoming domestic and thank goodness you posted a ton of photos. Yup, I am all about the step by step stuff. A total visual learner. Pioneer Woman’s Caramel Pumpkin Gingersnap Cheesecake is A*M*A*Z*I*N*G !!! My husband and I made it recently and promised ourselves to make it on a regular basis. YUM!

I love PW but who doesn’t!?! I of course love her cinnamon rolls just a little too much and since I am in love with chocolate, I do not think it is safe for me to make this cake. I would eat the whole thing by myself. Not all in one sitting mind you but I would eventually. It is tempting. I so want one of her books.
