This IS the best chocolate sheet cake ever. And I’m not just saying that because it’s the only one I’ve ever eaten. It IS delicious. And super moist and oh so chocolatey.
I’m officially in love. With the cake, not the Pioneer Woman. Well, maybe PW, too.
If you don’t know who I’m referring to (laughing as I type that), here’s her site:
I visited her and the family earlier this year at her ranch in Oklahoma and we baked cupcakes and made cake pops for some guests. Actually, she made this chocolate sheet cake recipe then for the cupcakes we used. However, we made a different frosting to decorate with so I didn’t get to experience the full effect. I don’t know what took me so long to try her complete recipe. I’m kicking myself now. It’s so easy and pretty darn quick, too. You don’t even need a mixer. Nope. No mixer. But you do need a 12 X 18 jelly roll pan. I think that’s what deterred me a little. I kept picturing a 12 X 18 cake sitting on my counter. And, well… that’s a lot of cake.
But then, a couple of weeks ago I received a surprise from the UPS guy… or girl…
It was PW’s soon-to-be-released cookbook. I was so excited to see it. I got a preview of the cover back in March and here it was. Finished. Full of Pictures. And Full of Recipes.
Including her Chocolate Sheet Cake.
That settled it. No more procrastinating. Chocolate Sheet Cake here I come.
You’ll need 2 cups flour and 1/4 teaspoon of salt to start. Easy enough.
Then pour on the sugar. Two cups of the sweet stuff. I like how this is going.
Melt some butter. Two sticks. Thank you.
While it’s melting, stir together 1/2 cup buttermilk, two eggs, 1 teaspoon baking soda…
And add a little vanilla. A teaspoon to be exact.
Back to the butter. Drop in four heaping tablespoons of cocoa please.
Mix that all up.
Add a cup of boiling water and stir. Let bubble for just a minute and turn then off the heat.
Then pour that over your flour, sugar and salt mixture and stir it all together.
Add the buttermilk mixture and stir until it’s smooth.
Anyone having a little deja vous here? I kinda feel like PW right about now with all these step-by step photos. But really, I couldn’t resist posting all of these pouring shots.
See… here’s another one. Look at that batter. It’s glorious.
Place the pan in a preheated 350 degree oven for about 20 minutes. I did 18.
And while the cake is baking, you can make the icing.
Melt some more butter. One and 3/4 sticks this time. Add four more heaping tablespoons of cocoa and stir together.
Then add 6 Tablespoons milk and one teaspoon vanilla. Here’s the only thing I did differently. I didn’t have any milk. I know… that bites. So instead I used four tablespoons of evaporated milk mixed with two tablespoons of water. I could have gone all six evaporated, but I wanted to play it safe.
Add ONE POUND of confectioner’s sugar. Thank you again PW. This is definitely going in the right direction.
Mix that all up really, really good. You can also add a 1/2 cup of chopped pecans, but I didn’t have any of those either. And actually, I’m glad I didn’t. This cake was just the way I like it. Non-crunchy.
After the cake is baked , immediately pour on the good stuff. Work the icing all over the cake, so you’ll have less spreading to do. Those little lumps in the photo are just bits of confectioner’s sugar. If you don’t add nuts, you’ll have to stir this really good to get them all out or sift your sugar first. But who has time for that when this cake is waiting.
Let the cake cool completely. Just kidding. Just dig right in.

By the way, this 12 X 18 cake taking up space on the counter? Don’t even think twice about it. The cake won’t last that long.

The sheet cake looks delicious! I have tried a recipe from Pioneer Women’s website, the Italian Creme Cake recipe. It looks like my chances of winning are pretty slim, but I would love her cookbook.
I always read her blog, even though a lot of her recipes aren’t vegetarian-friendly; anything can be adapted to a point. :D I haven’t actually tried any of her recipes yet, but the Buttered Rosemary Rolls from last week are calling my name.
I’d love a copy! I just recently discovered PW and have already made her chicken parm, rosemary and carmelized onion rolls with blue cheese topping, and most recently her cinnamon rolls. All her recipes are delicious and I can’t wait to try more!

Yes! I have tried several of her recipes. I think you should make her cinnamon rolls, which I don’t have the counter space or patience to make myself, or the apple dumplings, which are so dead simple that you won’t believe how delicious they are.
I read her blog daily. She has some awsome recipes. This cake is to die for. You have got to make the Chicken Spaghetti. It is pure and simple comfort food. Just thinking about it make me want to make it for supper tonight.

I check in on PW every day, since about two months ago. I’m only sad that I didn’t know about her until then. Anyways, I think you should try the Tres Leches cake next. It seems so simple, yet so much more different than any “sweet” recipe I’ve ever seen. It’s on my list of PW recipes to try in the near future.

This cake has been around for ages. I know because it was the fav to take anywhere and that was25 years ago when I was cooking for a family. It is the best…
Last week I made the most recently posted Pastor Ryan recipe for Seared bass with lemon shallot sauce (or something like that). I actually just used his method for cooking the fish and the sauce recipe as a jumping off point.
I used halibut instead of Sea Bass, and green onions in the sauce instead of shallots… it was sooo yummy. I served it over saffron rice. Dh is still talking about it ;)
I’ve made the chocolate sheet cake too, it was good and went fast with 3 munchkins in the house.
If you haven’t tried the cinnamon rolls, you definitely should. Everyone I’ve made them for has loved them.
I have tried many, many of her recipes. My favorite is the onion blue cheese sauce for steak. My 5 year old’s fav is Chicken Spaghetti, my 4 year old’s is the lasagna, my 2 year old’s fav is the apple dumplings, and my husband’s is the marlbaro man sandwich. Actually, I think everyone in my immeadiate family and neighborhood’s is the apple dumplings! I would love her cookbook. I am going to her book signing in Dallas on 12/01 and don’t have the book yet!
I Love PW!!! Her recipes are real stuff, not fru-fru things we’d never try at all. My family’s favorite PW recipe is her Chicken Spaghetti. Matter of fact, my daughter wants that for dinner tonight.

I recently tried her artichoke and tomato pasta with cream sauce and it was AMAZING. She seriously is the bomb.
We’re potato lovers here, so PW’s potato recipes are always a hit! The potato bundles are delicious–everything good in a little bundle–and the twice baked potatoes are a lifesaver (you make a whole bunch and stick them in the freezer for those nights you want something yummy but don’t have enough time!

Most recently I’ve tried the rosemary rolls (So simple yet so impressive) but I can’t LIVE without the apple dumplings.
I’ve made at least 5 of her recipes and I really enjoy the rib eye with blue cheese and Marlboro Man’s favorite casserole.
I was just discussing her pot roast recipe last night which I have not tried but after talking to my friend, it’s definitely going on this week’s dinner list. Just this morning I was digging around her site looking for her mashed potato recipe, because they are awesome and will be part of Thanksgiving dinner from now on.
I have tried lots and lots of yummy PW recipes so it it is really had to narrow it down to my favorite but I will say it is a toss up between the steak with onions/blue cheese sauce and the chocolate sheet cake. My solution to this problem-make them both! Yum!
Oh – I LOVE PW. I’ve been a fan since day 1. I started reading her site in July 2006 – way back when she was unknown and could still answer her e-mail! I made the Chocolate Sheet Cake. It only lasted less than 2 hours. I had to share it with my neighbors. It was too good to keep to myself. YUMMY YUMMY!!! I love PW. I read it everyday!

I haven’t tried any yet but have been a long, long time reader. I’m just not that great of a cook but her recipes make me feel like I could cook. When I do try one of her recipes the first one is going to be the spaghetti chicken casserole that has pimentos in it. I’ve been wanting to try that one for such a long time now!! I bought the pimentos and everything. Life is just so busy!!!

Love PW! Read about her and her adventures all the time. Have only made her banana bread but have bookmarked at least a dozen recipes. And Texas Sheet Cake is a favorite at our house too!
I love The Pioneer Woman and am very excited about the launch of her cookbook. I think all of her recipes look great but I have been craving a heaping bowl of her Macaroni & Cheese. Nothing says comfort food like Mac & Cheese!!

Try her BBQ meatballs…so delicious! I also like to cook her meatballs with out the sauce…make just a simple brown gravy and pour over mashed potatoes. yummy!! have fun cooking!
I make the jalapeno poppers for every party. Have also made several of the “girly” pastas…and, yes, my husband loves them, too. I’m thinking of making the cinnamon rolls to give neighbors on Christmas morning.

I have tried her bacon wrapped jalepenos and the biscuit bites drenched in butter and bleu cheese (don’t remember what she called them) – my familly loved both.

We LOVE PW’s Best Chocolate Sheet Cake Ever. We just made cupcakes with the recipe on friday for soccer snacks on saturday. We decorated them with orange and black sprinkles because my son’s team colors are orange and black. When I found out I was doing snack on Halloween, I knew I had to do something GOOD. So PW chocolate sheet cake it was. All the poor little kiddies who said they didn’t like chocolate. I’m sorry for them. But happy for me, because we brought the extras home. I think I gained 5 lbs this weekend. :-)

This cake is a staple in my kitchen! Stove to table in 30 minutes, made with just pantry items, it’s a go-to recipes for entertaining. Love, love, love it! (and would love to have a cookbook of more recipes just like it!)
I love PW! I have just recently been turned onto her site and it is AMAZING! I am looking forward to her book signing in my city in December and I really want that book! I have tried a modified version of her Spaghetti with Artichoke Hearts and Tomatoes, it was to die for. I am going to try the Chocolate Truffles with Sea Salt very soon, they look heavenly! I highly recommend the banana bread. The sour cream gives it a little something extra. Something amazingly delicious.

Thepioneerwoman.com is where I go when I don’t know what to make for dinner. I’ve tried MANY of her dishes. The one i would recommend trying is Pastor Ryan’s Mexican Lasagna… or if you want to bake then try the Cheese Muffins . They are incredible.
This looks fantastic, we love everything chocolate, though all deserts wind up at my husband’s work, otherwise they get cranky, so I’ll have to try this!
I am totally hooked on PW! I stayed up one night reading her Black heels to Tractor Wheels until 4am! I would love this book for my daughter who’s just married and loves Ree’s style of cooking.

I love PW. Her “Most favorite salad ever. Ever, ever, ever!” Is now MY most favorite salad! If you haven’t made it yet, do so soon. It makes a huge amount, but it is NOT just cowgirl food – even the boys I fed it too loved it! I made chicken satay skewers with peanut dipping sauce along with the salad for a complete meal. YUM!
