The Best Chocolate Sheet Cake

This IS the best chocolate sheet cake ever. And I’m not just saying that because it’s the only one I’ve ever eaten. It IS delicious. And super moist and oh so chocolatey.

I’m officially in love. With the cake, not the Pioneer Woman. Well, maybe PW, too.

If you don’t know who I’m referring to (laughing as I type that), here’s her site:

I visited her and the family earlier this year at her ranch in Oklahoma and we baked cupcakes and made cake pops for some guests. Actually, she made this chocolate sheet cake recipe then for the cupcakes we used. However, we made a different frosting to decorate with so I didn’t get to experience the full effect. I don’t know what took me so long to try her complete recipe. I’m kicking myself now. It’s so easy and pretty darn quick, too. You don’t even need a mixer. Nope. No mixer. But you do need a 12 X 18 jelly roll pan. I think that’s what deterred me a little. I kept picturing a 12 X 18 cake sitting on my counter. And, well… that’s a lot of cake.

But then, a couple of weeks ago I received a surprise from the UPS guy… or girl…

It was PW’s soon-to-be-released cookbook. I was so excited to see it. I got a preview of the cover back in March and here it was. Finished. Full of Pictures. And Full of Recipes.

Including her Chocolate Sheet Cake.

The Pioneer Woman Cooks

That settled it. No more procrastinating. Chocolate Sheet Cake here I come.

You’ll need 2 cups flour and 1/4 teaspoon of salt to start. Easy enough.

Sugar

Then pour on the sugar. Two cups of the sweet stuff. I like how this is going.

Butter

Melt some butter. Two sticks. Thank you.

While it’s melting, stir together 1/2 cup buttermilk, two eggs, 1 teaspoon baking soda…

Vanilla

And add a little vanilla. A teaspoon to be exact.

Cocoa

Back to the butter. Drop in four heaping tablespoons of cocoa please.

Mix it up

Mix that all up.

Pouring 3

Add a cup of boiling water and stir. Let bubble for just a minute and turn then off the heat.

Then pour that over your flour, sugar and salt mixture and stir it all together.

Add the buttermilk mixture and stir until it’s smooth.

Anyone having a little deja vous here? I kinda feel like PW right about now with all these step-by step photos. But really, I couldn’t resist posting all of these pouring shots.

Batter

See… here’s another one. Look at that batter. It’s glorious.

Sheet Cake

Place the pan in a preheated 350 degree oven for about 20 minutes. I did 18.

And while the cake is baking, you can make the icing.

Butter and cocoa

Melt some more butter. One and 3/4 sticks this time. Add four more heaping tablespoons of cocoa and stir together.

Milk

Then add 6 Tablespoons milk and one teaspoon vanilla. Here’s the only thing I did differently. I didn’t have any milk. I know… that bites. So instead I used four tablespoons of evaporated milk mixed with two tablespoons of water. I could have gone all six evaporated, but I wanted to play it safe.

Powdered Sugar

Add ONE POUND of confectioner’s sugar. Thank you again PW. This is definitely going in the right direction.

Yum

Mix that all up really, really good. You can also add a 1/2 cup of chopped pecans, but I didn’t have any of those either. And actually, I’m glad I didn’t. This cake was just the way I like it. Non-crunchy.

Pour it on

After the cake is baked , immediately pour on the good stuff. Work the icing all over the cake, so you’ll have less spreading to do. Those little lumps in the photo are just bits of confectioner’s sugar. If you don’t add nuts, you’ll have to stir this really good to get them all out or sift your sugar first. But who has time for that when this cake is waiting.

Scoopable.

Let the cake cool completely. Just kidding. Just dig right in.

  8. Yes, I love her cookbook too. My DIL and I were able to be at her launch party here in Tulsa. It was a grand event and I was so happy to see so many fans of PW here on her home turf. We went to a second signing on Friday at a boutique here in Tulsa. She really is a sweet person. I have made several of her recipes. All are wonderful. I like Aunt Iny’s prune cake but the best recipe to date would be the chocolate sheet cake. I have not met anyone who does not instantaneously fall in love with it on the first bite!

  11. I watch the PW website and your website almost every day. Yes, I have tried many of PW’s recipes. At work one day we had a PW cook-off at lunch time. What fun! I tried her Rosemary Acorn Squash yesterday. It was good, of course.
    I grew up with the chocolate sheet cake recipe. Two differences between hers and mine; no nuts in the icing and 1 teaspoon of cinnamon in the cake batter. Try adding the cinnamon. Not overly cinnamon-y, just a hint. It is soooo good!

  14. I love that recipe and I cannot believe you have never tried it. At our house it is call Texas Sheet Cake and I prefer chopped walnuts on mine. Also our recipe includes a bit of cinnamon.
    I could eat the whole cake by myself. It is super moist and irresistible. Thanks for sharing the recipe. I love how you just dug right in with a spoon!!!!!

  27. There are so many things I’ve tried, but the two favorites are the Cannoli Cupcakes and the bacon wrapped club crackers with parmesan cheese. I’m a vegetarian, but I made those for a party. They were gone before the party even started. The guys just gobbled them down. When they finished those, they attacked the bacon wrapped jalepeno peppers.

  69. I recently made 2 of Ree’s recipes; Buttered Rosemary Rolls and Cinnamon Buns. I used the dough from her cinnamon bun recipe (halved), used half for cinnamon buns and the other half for her rolls. They’re were sooooo good!!! Hubby ate most of it already and out right refused to share with his buddy that came over yesterday!! lol

  101. I love PW. I have only tried one of her recipes and I really don’t remember the name of it but it was with red potatoes. You boil them, squash them and season them, drizzle with Olive Oil and then bake them. They were yummy.

    Her lasagna, betsy’s penne, her mashed potatoes (with cream cheese in them), her dinner rolls, her pie crust is the only one i’ll use now, fluffy new potatoes, i attempted sushi after she did (it turned out to be a disaster for me), her bbq meatballs, mac and cheese…

    I make Pastor Ryan’s Spicy Orange Garlic Shrimp all the time, except I’m a wuss so I cut the cayanne in 1/4…and its still on the spicy side for me. lol. but its sooo delish!

    And I’m sure theres more. And I’ve definitely got my list of things to make soon as well. Maybe I should do like Julie and Julia and cook/bake my way through both of your websites.

  130. A must are her apple turnovers. So easy to make and delicious (although I use a little less sugar and ginger ale instead of Mtn. Dew). I think my daughter’s new boyfriend is in love with me after making them recently when he visited.

YES – I’ve tried 3 of PW’s recipes so far (and I’ve only been visiting her site for a couple of weeks): Chicken Parmigian, Pasta alla Marlboro Man (my hubby wants a bit more sauce) and the Bacon, Onion & Cheddar biscuits. All easy to make, no gourmet ingredients to try to track down (or to try to figure out what it is) and DELICIOUS!

  182. I think you should try the Pumpkin Whoppie Pies w/ Cream cheese filling. I just tried making the Cake Pops this weekend for Halloween. It wasn’t that messy making them but coating them w/ the candy coating . I just did get the tops covered right. I then rolled them in Halloween sprinkles. My family seamed to enjoy them because there gone.

I haven’t had the chance to actually make any of her recipes but I told my mom about her blog and she became a fan and has made a couple of her casserole recipes which are so yummy. I can’t wait to see her cookbook though and of course all the beautiful photographs. I love learning about how to shoot better photos from her.
