This IS the best chocolate sheet cake ever. And I’m not just saying that because it’s the only one I’ve ever eaten. It IS delicious. And super moist and oh so chocolatey.
I’m officially in love. With the cake, not the Pioneer Woman. Well, maybe PW, too.
If you don’t know who I’m referring to (laughing as I type that), here’s her site:
I visited her and the family earlier this year at her ranch in Oklahoma and we baked cupcakes and made cake pops for some guests. Actually, she made this chocolate sheet cake recipe then for the cupcakes we used. However, we made a different frosting to decorate with so I didn’t get to experience the full effect. I don’t know what took me so long to try her complete recipe. I’m kicking myself now. It’s so easy and pretty darn quick, too. You don’t even need a mixer. Nope. No mixer. But you do need a 12 X 18 jelly roll pan. I think that’s what deterred me a little. I kept picturing a 12 X 18 cake sitting on my counter. And, well… that’s a lot of cake.
But then, a couple of weeks ago I received a surprise from the UPS guy… or girl…
It was PW’s soon-to-be-released cookbook. I was so excited to see it. I got a preview of the cover back in March and here it was. Finished. Full of Pictures. And Full of Recipes.
Including her Chocolate Sheet Cake.
That settled it. No more procrastinating. Chocolate Sheet Cake here I come.
You’ll need 2 cups flour and 1/4 teaspoon of salt to start. Easy enough.
Then pour on the sugar. Two cups of the sweet stuff. I like how this is going.
Melt some butter. Two sticks. Thank you.
While it’s melting, stir together 1/2 cup buttermilk, two eggs, 1 teaspoon baking soda…
And add a little vanilla. A teaspoon to be exact.
Back to the butter. Drop in four heaping tablespoons of cocoa please.
Mix that all up.
Add a cup of boiling water and stir. Let bubble for just a minute and turn then off the heat.
Then pour that over your flour, sugar and salt mixture and stir it all together.
Add the buttermilk mixture and stir until it’s smooth.
Anyone having a little deja vous here? I kinda feel like PW right about now with all these step-by step photos. But really, I couldn’t resist posting all of these pouring shots.
See… here’s another one. Look at that batter. It’s glorious.
Place the pan in a preheated 350 degree oven for about 20 minutes. I did 18.
And while the cake is baking, you can make the icing.
Melt some more butter. One and 3/4 sticks this time. Add four more heaping tablespoons of cocoa and stir together.
Then add 6 Tablespoons milk and one teaspoon vanilla. Here’s the only thing I did differently. I didn’t have any milk. I know… that bites. So instead I used four tablespoons of evaporated milk mixed with two tablespoons of water. I could have gone all six evaporated, but I wanted to play it safe.
Add ONE POUND of confectioner’s sugar. Thank you again PW. This is definitely going in the right direction.
Mix that all up really, really good. You can also add a 1/2 cup of chopped pecans, but I didn’t have any of those either. And actually, I’m glad I didn’t. This cake was just the way I like it. Non-crunchy.
After the cake is baked , immediately pour on the good stuff. Work the icing all over the cake, so you’ll have less spreading to do. Those little lumps in the photo are just bits of confectioner’s sugar. If you don’t add nuts, you’ll have to stir this really good to get them all out or sift your sugar first. But who has time for that when this cake is waiting.
Let the cake cool completely. Just kidding. Just dig right in.

By the way, this 12 X 18 cake taking up space on the counter? Don’t even think twice about it. The cake won’t last that long.

I would love a copy! I am currently filling a recipe, photo book for my girlfriends and sisters and nieghbors as Christmas gifts and sheet cake is BIG in Utah. Utah is HUGE into geneology back to the pioneers and this book might just finish the book! Of course I will be giving credit where credit is due!

I love PW – it’s a new site for me, but this week I’m actually making one of her dishes (the Chicken Spaghetti Cassarole) for my bf who is flying back home from being in Saudi Arabia for work. I made a sheet cake much like this back in high school. My best friends mother use to make it but she called it a texas sheet cake. I thought we put buttermilk in the icing also. But it was a good 35 yrs ago.

Pioneer Woman is awesome! I LOVE her blog. I recently made ‘Marlboro Man’s Favorite Sandwich’ with cube steak and it was incredible!
My favorite recipe, which has become a regular go-to for those nights when I am in a pinch, is PW’s Homemade Chicken Strips. They are soooo yummy and easy to make! I used to avoid homemade chicken strips like the plague, but this recipe made them simple and family pleasing. :o)

Chicken Spagetti. I love that recipe. I don’t like a lot of spice so I left out some of the extra stuff. but it was simple and easy to make – not to mention a delicious mouthful!

The last of many I have made was on her site, but not her recipe !! It was the Rev’s Mexican Lasanga. I went to a party that required bringing a Mexican dish. So, that is what I fixed.
The cake is delicious, and what my mom made for me as a child. The fudge frosting is so good.

I’ve made the chocolate sheet cake for every birthday this year and it is a smash hit. Totally the best chocolate cake ever.

I tried that exact chocolate sheet cake once… but I didn’t have any buttermilk so I added some vinegar to regular milk. Except by “some” I mean “too much,” and the milk curdled! I’m dying to try it again; I’ll just have to make sure I get my hands on all the proper ingredients this time!

Oh my yes have I tried a few recipes! I don’t normally do the desserts but I have tried 2. The pecan pie and some sort of pumpkin cheesecake. The pecan pie was divine but the cheesecake had crust issues, it wouldn’t come off of the pan. My family’s fav recipe is the bbq meatballs. We call t meatloaf meat balls though because that’s what it is really. They are faboo!

You and PW are keeping my boyfriend’s tummy VERY happy lately. :) I’m planning on trying PW’s sweet roasted rosemary acorn squash that was posted recently. And her roasted potatoes and garlic make me so happy I could cry.
P.S. I made some red-velvet cakeballs for a Halloween party this weekend and they were a HIT. I only got to snag one before they were gone!

Have you tried her Spicy Molasses Cookies yet? Oh, they are so yummy! They taste just like ginger snaps, only soft and chewy – just the way I like ’em! Her Buttered Rosemary Rolls are to die for too. I ate five of them this weekend and had to hide the evidence from my husband since he didn’t get any!
i don’t know if the recipe is in the book, but her caramel apple cinnamon rolls are heavenly! and very easy to make.
I’ve tried many and love them! Her lasange is awesome. And her pot roast is the ONLY way I make mine now. Love this chocolate sheet cake (new family favorite) and Marlboro Man’s favorite sandwiches are now my hubby favs, too!

I’ve tried a couple PW recipes and they have all been great. Last summer I went through as many of her zucchini recipes as I could get my hands on. We had am overabundance of zucchini.
And as an accidental country girl myself, I feel I it’s a matter of solidarity to support her cooking obsession.

I would so LOVE to have this cookbook. I just used one of her archive recipes for parmesan bacon crisps. OH MY GOODNESS – they are addicting. Chocolate sheet cake – here I come!
YUM!! I have tried so many of her recipes. One of my favorites is her cheesy garlic bread or garlicy cheese bread…I can’t remember the exact name. All I know is that it is DELICIOUS!!
I made her twice baked potatoes a few weeks ago, and they were DELICIOUS! I would love a copy of her book!

Yes, Bakerella I have tried a few of her recipes! Her mashed potatoes are to die for with all that butter, cream & cream cheese. Then paired with her pot roast…that was a very good meal! I haven’t made any of her sweet stuff yet because it looks too good and won’t last very long which just isn’t good for me right now!

thank you so much for introducing me to her website! i love it all – the vibrant pictures and detailed instructions for recipes. it couldn’t be more divine =) now i’m not only hooked onto bakerella.com, but also to thepioneerwoman.com… i’ve tried the ‘mushrooms stuffed with brie’ and found it to be such a FANTASTIC match made in heaven as i LOVE and sadly, am a mushroom AND brie fanatic. haha! many more recipes from her to try at home for the family and myself! and i would love the oppurtunity to win her book!

OK, you’ve convinced me to go buy a 12 x 18 jelly roll pan! I love PW’s stuff… I’ve made her steak, Not Your Granny’s Mac and Cheese, Sesame Noodles, and my favorite so far… Peach Crisp with Maple Cream Sauce! Amazing.
I want to try the jalapeno bacon things next!

PW! I love her! Her bacon wrapped jalapeno thingies are to die for- but be prepared, you make them once and your family and friends will never let you stop maing them- they are THAT good!!
I love her biscuits and gravey. SO good.
Her tiramisu is to die for! I have also made the apple cake in an iron skillet and that is amazing (especially if you serve it with her homemade ice cream)!
I have tried too many to name, but the one that I keep getting asked to make is the red potatoes with garlic, olive oil and wine! mmmmm…. SO easy and delicious!

I was just in the bookstore drooling over this cookbook! I was coming up with my endless list of cookbooks that I wanted for Christmas (I have a severe addiction, I’m afraid), and I ended up putting this one on the top of my list! Maybe Santa could visit me early?…I’ll make him some chocolate sheet cake….

I made her Spaghetti with Artichoke Hearts and tomatoes the other night. My husband loved it and it was super easy.

I haven’t just tried one, I am addicted! I am addicted to the seasame noodles right now. They are so easy and I dress them up with some stir fried veggies and a little baked chicken with soy sauce…yummy!
Oh I tried her pineapple skewered shrimps then brought them to a barbecue. In the end there were no leftovers! We didn’t manage to finish everything else =D
I have made her apple dumplings, which are AMAZING!!!! I made them for get-togethers both times, because, well, one pan of those puppies would TOTALLY get eaten by ME before the family even knew I made them! They are SOOOOOOO delicious and SO easy to make!
I have tried a few and have not been disappointed by anything: chocolate sheet cake, jalapeno poppers, cinnamon rolls, onion bleu cheese sauce for you steak (just sinful), and one of my favorites is her “most favorite salad ever”. It’s healthy and delicious! The next thing I want to try is the chocolate truffles with sea salt.

Another vote for the bacon wrapped jalapeno poppers – PW talks about eating them cold the next day. I wouldn’t know about that, I’ve never had any left to even put away for another day. We once ate a meal of nothing but freshly baked bacon wrapped jalapeno poppers. :) I’d love a copy of the cookbook to experience more of the PW Cookin’ love.

I tried making her sesame noodles a couple of weeks ago and have now made them twice since then, they were that good and that easy (I’m not so much of a cook)! I’m a PW convert now though and would love her cookbook!

Not only is her chocolate sheet cake the best chocolate cake ever, but her lasagna is the best lasagna ever. Love her potato bundles, roasted red pepper pasta, bacon wrapped jalapenos, mijas, and OMG her MASHED POTATOES. To die for.
Wow, that looks incredible! I have two words for you, Cinnamon Rolls. The BEST, and the house smells sooooo good too. Who needs Febreeze when you can make cinammon rolls!
I LOVE her! And I covet that book! My favorite recipes from PWC are the Roasted Garlic and New Potatoes and Fresh Corn Casserole (Corn Puddin’). My two kiddoes are wild about her Christmas sugar cookies with the paint-on frosting.

As a New Zealander living in Chile, its hard to come by great cookbooks like this one…not to mention expensive! Hence the reason Im always cooking from the interent!!
So if I could have one of PWs books to put on my very empty shelf I would just be over the moon.

thanks for posting this recipe and the list of some of the books contents…i think you should try out the Flat Apple Pie, sounds good and pretty easy (compared to regular pie :P i’m just guessing ) this sounds like a really tasty cookbook.
