This IS the best chocolate sheet cake ever. And I’m not just saying that because it’s the only one I’ve ever eaten. It IS delicious. And super moist and oh so chocolatey.
I’m officially in love. With the cake, not the Pioneer Woman. Well, maybe PW, too.
If you don’t know who I’m referring to (laughing as I type that), here’s her site:
I visited her and the family earlier this year at her ranch in Oklahoma and we baked cupcakes and made cake pops for some guests. Actually, she made this chocolate sheet cake recipe then for the cupcakes we used. However, we made a different frosting to decorate with so I didn’t get to experience the full effect. I don’t know what took me so long to try her complete recipe. I’m kicking myself now. It’s so easy and pretty darn quick, too. You don’t even need a mixer. Nope. No mixer. But you do need a 12 X 18 jelly roll pan. I think that’s what deterred me a little. I kept picturing a 12 X 18 cake sitting on my counter. And, well… that’s a lot of cake.
But then, a couple of weeks ago I received a surprise from the UPS guy… or girl…
It was PW’s soon-to-be-released cookbook. I was so excited to see it. I got a preview of the cover back in March and here it was. Finished. Full of Pictures. And Full of Recipes.
Including her Chocolate Sheet Cake.
That settled it. No more procrastinating. Chocolate Sheet Cake here I come.
You’ll need 2 cups flour and 1/4 teaspoon of salt to start. Easy enough.
Then pour on the sugar. Two cups of the sweet stuff. I like how this is going.
Melt some butter. Two sticks. Thank you.
While it’s melting, stir together 1/2 cup buttermilk, two eggs, 1 teaspoon baking soda…
And add a little vanilla. A teaspoon to be exact.
Back to the butter. Drop in four heaping tablespoons of cocoa please.
Mix that all up.
Add a cup of boiling water and stir. Let bubble for just a minute and turn then off the heat.
Then pour that over your flour, sugar and salt mixture and stir it all together.
Add the buttermilk mixture and stir until it’s smooth.
Anyone having a little deja vous here? I kinda feel like PW right about now with all these step-by step photos. But really, I couldn’t resist posting all of these pouring shots.
See… here’s another one. Look at that batter. It’s glorious.
Place the pan in a preheated 350 degree oven for about 20 minutes. I did 18.
And while the cake is baking, you can make the icing.
Melt some more butter. One and 3/4 sticks this time. Add four more heaping tablespoons of cocoa and stir together.
Then add 6 Tablespoons milk and one teaspoon vanilla. Here’s the only thing I did differently. I didn’t have any milk. I know… that bites. So instead I used four tablespoons of evaporated milk mixed with two tablespoons of water. I could have gone all six evaporated, but I wanted to play it safe.
Add ONE POUND of confectioner’s sugar. Thank you again PW. This is definitely going in the right direction.
Mix that all up really, really good. You can also add a 1/2 cup of chopped pecans, but I didn’t have any of those either. And actually, I’m glad I didn’t. This cake was just the way I like it. Non-crunchy.
After the cake is baked , immediately pour on the good stuff. Work the icing all over the cake, so you’ll have less spreading to do. Those little lumps in the photo are just bits of confectioner’s sugar. If you don’t add nuts, you’ll have to stir this really good to get them all out or sift your sugar first. But who has time for that when this cake is waiting.
Let the cake cool completely. Just kidding. Just dig right in.

By the way, this 12 X 18 cake taking up space on the counter? Don’t even think twice about it. The cake won’t last that long.

I have made several of her recipes but one of my absolute favorites are her sticky buns…you know the ones covered in sweet, maply goodness. Sigh. They are wonderful. I had never, ever made bread or rolls or anything from scratch before making these and her directions just made it so darned easy!

Ree’s crazy Apple Dumplings first brought the Pioneer Woman to my attention — but her Sleepin’ in Omelette was the first recipe I tried. Since then I’ve tried others, but that first — incredibly tasty, outrageously rich — one will live in my memory.
I haven’t heard of Pioneer Woman, but I thank you for introducing her to me! I LOVE to cook, but especially love to bake! I will be sure to try the sheet cake recipe this week!
P.S.~ I have to tell you, I made your Red Velvet Cake Balls for my wedding last weekend and they were a complete hit!! Most of our guests thought they were buckeyes, but were plesantly surprised when they bit into them! Thank you for your website and sharing all of your yummy recipes with all of us :-)

You MUST make the Apple Dumplings (with Mountain Dew). I couldn’t believe Mt.Dew was the secret ingredient, but OMG these are yummy. Next have to be the Jalapino, Cream Cheese, Bacon Thingies. These are another MUST!

I love PW. I have tried many of her recipes and haven’t been disappointed yet. My husband really likes the Marlboro Man Sandwich. I told him there was a coookbook and he said, “That lady you get all the good recipes from?” So that should let you know how good they are because he doesn’t really pay attention to where the food comes from just as long as it’s there! :0)

I have been a long time fan of The Pioneer Woman but I don’t think I have tried any of her recipes. I just looked at all her recipes on an empty stomach. Not a good idea!!!
I’ve made a few of her recipes; one I really love is her home made mac ‘n’ cheese!
I am a little embarassed to admit I had never heard of PW, but you will be glad to know I am now hooked! Now I will have many fabulous meals to go with fabulous cake balls!

My favorite recipe so far is for sure the cinnamon rolls. I remember always wanting the donuts with maple icing on them when I was little and I can’t for the life of me figure out why I never put maple icing on cinnamon rolls before! I even had to go to three stores to find maple extract and it was totally worth it. Oh, but there’s also that prune cake. Oh my heavens is a that a delicious cake. Do you see a trend here? I’m all about the sweets. Although I made her rosemary onion bleu cheese rolls a few weeks ago and they were amazing – ate them with various soups for lunch for three days. I’ll stop now, or I’m just going to reccommend her whole site.
You have to try PW’s “coffee” cake! It’s scrumptious. Moist. Easy to whip up. Would be wonderful for coffee themed cake pops. Think Mother’s Day Brunch.
I also love to follow what’s going on on the ranch. My husband is a cowboy who gave up his life to join me in the city……We’re a little opposite of Ree and Marlboro Man, but her photography always gives us a much missed dose of “home”.
I have tried several of her recieps, but not the chocolate cake. The Marlboro Man Sandwich (chicken,bacon swiss) is heavenly. I make the cinnamon rolls all the time. I made her dinner rolls for thanksgiving last year, but dropped the pan of dough upside down on the floor as I was putting it in the oven. Needless to say, I never tasted that one!
I heart PW! I’ve made a ton of recipes from her site and loved them all! The latest was the steak with carmelized onion and blue cheese sauce–oh, my! My family would LOVE for me to have this cook book. Thanks Bakerella!

Have you ever tried her Apple Dumplings? That’s how I first found her…everyone I knew was talking about them, so I came home and did a Google search. They are really yummy. And her French Onion soup? The BEST!
I swear I’ve made more than this, but the only thing I can remember right now is Pastor Ryan’s bread baked in a cast-iron skillet. Pretty sure that had over a stick of butter too. It was so good! Now I need an excuse to make this cake – living by myself makes it difficult to prepare recipes written for a family of cowboys. :)

What recipe haven’t I tried?? My husband always asks where the recipe came from…Pioneer woman? He doesn’t even wait for me to answer the question before he answers it. I have made PW’s Chocolate Sheet cake before and it’s gone in a flash! I’ve also made her Asian salad and it is divine! Try it if you haven’t had it yet, it’s awesome, but it makes a TON so plan a party!

Hi! Ree’s Pico de Gallo is great. I could eat an entire recipe’s worth, and feel virtuous when I am finished.

I love the sauce from her best lasagna recipe. I use the sauce for everything from lasagna to spaghetti to baked ziti or whatever else. It’s great!
I’ve made a few of her recipes- the spaghetti chicken, her oatmeal crispies- and they came out okay, but that was actually my fault for trying to tweak them too much. Don’t tweak those cookies! They never baked through, but that was okay because I ate half the dough instead. sooo good

I read her blog all the time and LOVE her! I have a million recipes of hers that I want to try-everything she cooks looks amazing!
I have made PW’s stuffed mushroom recipe twice now and it has been a huge hit in my home. I am even making them for a party in December. Can’t wait to get her cookbook!

I love PW. I’ve tried a few recipes but my favorite so far is the Fresh Corn Casserole. I think I will break down and make that cake today. I need to go measure my pans though.

I don’t even know where to start. There’s a chocolate pie in the Thanksgiving section. There’s chicken scallopine. There’s macaroni and cheese (ooh, I want macaroni and cheese).

I have tried this sheet cake, once for my niece’s 16th birthday and one for my sister’s (won’t disclose age ;-) ) and it was such a hit both times it was all gone by the time the night was over.
I’ve also made her Scallopine Chicken for my little girl’s 3rd birthday party and I couldn’t get enough wow’s and yumms.
It’s my favorite way to make chicken now.

You had me at chocolate! Seriously, though, I love Pinoneer Woman. Her Bacon Wrapped Jalapeno Thingies are like THE. BEST. EVER. I had them for the first time about a year ago at a party and I think I must have eaten half the platter…simply coudn’t stop myself!
I LOVE her Cinnamon Rolls 101 (plus just about every other 3000 calorie desert of hers) so much! Mhmmmm made the sheet cake before and fell in love again. I would LOVE a copy because then I could cut out those calories that are lost from running to the computer. haha! Her cookbook would be niiiccceeee. ; )

I LOVE Pioneer Woman – I check her blog like a stalker several times a day. I’ve tried quite a few of her recipes and the Bacon wrapped jalapeno thingies are soooo yummy. I still haven’t made the chocolate sheet cake, but I do know how yummy it is – my Grandma used to make the exact same recipe (only she always put nuts in the frosting). I’d love a copy of this cookbook!

Oh yeah! I love PW! Last year, Thanksgiving was a huge hit with her whiskey-glazed carrots. I think Christmas included a round of bacon-wrapped jalapenos. Thanks for the chance to win!
I have not tried any of PW’s recipes yet, but that sheet cake may be the first. Yummmmmmmmm. Are you sure the recipe didn’t come from Paula Dean with all that butter. Again, yummmmm. Keeping my fingers crossed in the hopes I will win.

The sheet cake, without a doubt, IS the best sheet cake ever!!
I’ve made PW’s Ranch-Style Chicken, which is very yummy. I don’t eat pork (I’m sure PW would hate to hear that) so I made it with turkey bacon. I’ve also made two recipes from her guest blogger, Kay in the Netherlands. I made the stuffed onions, which I liked but DH did not – he might have mentioned he doesn’t really like onions before I made it. But, we liked the filling and I’ve been meaning to make that again for another use. The other one was Kay’s Parmesan Crusted Chicken and that has become a staple at our house!
I love, love, love her crash hot potatoes. The Marlboro Man sandwich is really good too. In fact, all of her recipes I have tried, I have loved.
(And if I win the book, will you autograph it? Pretty please with sugar on top?)

I’ve made Ree’s cinnamon rolls, the apple dumplings, and Marlboro Man’s 2nd favorite sandwich. I love her recipes, but can’t indulge in them too often. How is she so skinny??

I have never made any of her stuff, but have drooled over them, like I am with the sheet cake right now. I know if I make that recipe right now, I’ll probably eat half the cake and gain 5 pounds. Just what I need at the end of my pregnancy ;) Let me win! I admire you for taking enough time to take pictures in between bites. I think it just would’ve been a “before I cut the cake” then another, “before I cut the cake” ;)

I have not yet tried any recipes, but plan to soon. You should try making her Molten Chocolate Lava Cake. With baby #2, my craving was cake; four months post-partum, the craving has yet to go away!?! My tastebuds don’t mind, but my butt will when I stop breastfeeding. :-/
