This IS the best chocolate sheet cake ever. And I’m not just saying that because it’s the only one I’ve ever eaten. It IS delicious. And super moist and oh so chocolatey.
I’m officially in love. With the cake, not the Pioneer Woman. Well, maybe PW, too.
If you don’t know who I’m referring to (laughing as I type that), here’s her site:
I visited her and the family earlier this year at her ranch in Oklahoma and we baked cupcakes and made cake pops for some guests. Actually, she made this chocolate sheet cake recipe then for the cupcakes we used. However, we made a different frosting to decorate with so I didn’t get to experience the full effect. I don’t know what took me so long to try her complete recipe. I’m kicking myself now. It’s so easy and pretty darn quick, too. You don’t even need a mixer. Nope. No mixer. But you do need a 12 X 18 jelly roll pan. I think that’s what deterred me a little. I kept picturing a 12 X 18 cake sitting on my counter. And, well… that’s a lot of cake.
But then, a couple of weeks ago I received a surprise from the UPS guy… or girl…
It was PW’s soon-to-be-released cookbook. I was so excited to see it. I got a preview of the cover back in March and here it was. Finished. Full of Pictures. And Full of Recipes.
Including her Chocolate Sheet Cake.
That settled it. No more procrastinating. Chocolate Sheet Cake here I come.
You’ll need 2 cups flour and 1/4 teaspoon of salt to start. Easy enough.
Then pour on the sugar. Two cups of the sweet stuff. I like how this is going.
Melt some butter. Two sticks. Thank you.
While it’s melting, stir together 1/2 cup buttermilk, two eggs, 1 teaspoon baking soda…
And add a little vanilla. A teaspoon to be exact.
Back to the butter. Drop in four heaping tablespoons of cocoa please.
Mix that all up.
Add a cup of boiling water and stir. Let bubble for just a minute and turn then off the heat.
Then pour that over your flour, sugar and salt mixture and stir it all together.
Add the buttermilk mixture and stir until it’s smooth.
Anyone having a little deja vous here? I kinda feel like PW right about now with all these step-by step photos. But really, I couldn’t resist posting all of these pouring shots.
See… here’s another one. Look at that batter. It’s glorious.
Place the pan in a preheated 350 degree oven for about 20 minutes. I did 18.
And while the cake is baking, you can make the icing.
Melt some more butter. One and 3/4 sticks this time. Add four more heaping tablespoons of cocoa and stir together.
Then add 6 Tablespoons milk and one teaspoon vanilla. Here’s the only thing I did differently. I didn’t have any milk. I know… that bites. So instead I used four tablespoons of evaporated milk mixed with two tablespoons of water. I could have gone all six evaporated, but I wanted to play it safe.
Add ONE POUND of confectioner’s sugar. Thank you again PW. This is definitely going in the right direction.
Mix that all up really, really good. You can also add a 1/2 cup of chopped pecans, but I didn’t have any of those either. And actually, I’m glad I didn’t. This cake was just the way I like it. Non-crunchy.
After the cake is baked , immediately pour on the good stuff. Work the icing all over the cake, so you’ll have less spreading to do. Those little lumps in the photo are just bits of confectioner’s sugar. If you don’t add nuts, you’ll have to stir this really good to get them all out or sift your sugar first. But who has time for that when this cake is waiting.
Let the cake cool completely. Just kidding. Just dig right in.

By the way, this 12 X 18 cake taking up space on the counter? Don’t even think twice about it. The cake won’t last that long.

This is the first time I’ve heard of PW, but I love baking and trying new recipes. I make a chocolate sheet cake almost the exact same recipe but I add cinnamon (about 2 tsp to the cake batter and 1 tsp to the frosting). I’ve made it for fellowship before and my friend went around to everyone asking who made the cake until she found out I did – then she told me that her grandmother used to make the same exact cake and she’s never been able to duplicate the recipe. Now she knows the missing ingredient. It’s actually a Watkins recipe from a long time ago. I’d love to win PW’ s new book!

I browse her blog every day; her photography is stunning, and her commentary is so fun to boot. I’ve tried several of her recipes, but her molasses spice cookies are particularly marvelous! I’ve made them countless times, and they’ve always been a hit.

I adore PW! I’ve made several recipes – but the first one I tried were her Bacon Wrapped Jalepeno Thingies…YUM!
Her spicy mac and cheese was the first recipe I made, and it is delicious! Next I’m trying Luchan’s enchiladas.
The other night I was CRAVING chocolate and I don’t crave chocolate and I actually made this HUGE cake. It’s amazing. Although the 4 sticks of butter are a bit crazy. My husband is now obsessed with it and because between the 2.5 actual people in my house we could not eat the entire thing, I sent some with him to work. We are slowly converting everyone over to this cake. And you’re right you don’t need a mixer at all..

I’ve made a similar cake to this, I haven’t tried hers…yet. I’ve made a few of her recipes, smashed potatoes are ones that come to mind. I really want to try her orange rolls, similar to cinnamon rolls, but with orange glaze. Yum!!! I would love her cookbook!

You must, must, MUST try her creamy herbed potatoes. For that matter–forget the potatoes, and just mix up the ‘creamy herbed’ bit; she’s not kidding when she says it’s life-changing.

I really enjoy PW’s blog – last recipe I tried was smashed potatoes – hubby thought they were quite good. I tried making this cake but messed up on the pan size and tried to cut the recipe in half – it was a fiasco. I am definitely making this cake for my birthday this weekend!

I made twice-baked potatoes, jalepeno cream cheese thingies, and baked acorn squash on Halloween. Still enjoying the leftovers for breakfast.
My mom makes the chocolate cake–you can dump the 2 sticks butter, cocoa and water in a saucepan and bring it to a boil. All in one pan (then add the dry and wet ingredients). My daughter Loves this cake!

The first PW recipe I ever tried was the Crash Hot Potatoes and they rule. I recently made the creamy artichoke tomato pasta and it ruled too. I love PW!

I love PW!!! I haven’t found one of her recipes to fail me yet! The best was her roasted beef tenderloin except i didn’t use beef. I used venison. Normally I’m not a big fan of venison because of the gamey taste but “oh my”! Using PW’s recipe made it scrumptious! My husband didn’t believe me when I told him is wasn’t beef! I love it so much I’m making it again this week :)
I do love PW as well, but haven’t tried the chocolate sheet cake yet (I know, what am I waiting for?). My favorite thing of hers that I have made though are the Crash Hot Potatoes (so easy and yummy) and recently the Moist Pumpkin Spice Muffins. You must try both.

I have made the baked french toast with blueberries. The recipes that uses Stacy’s pita chips!! It was so good! I made the blueberry yogurt sauce to go with. Everyone loved it! The recipe is a must try!!

I have read Ree’s site for two years now and that is where I found out about yours as well. I love her receipes and her site and check it everyday. I also love to cook on weekends and make as many as I can. I love her Tomatoes stuffed with cheese and the grilled under the broiler….

i have tried many recipes from PW but this chocolate cake is by far my favorite. i usually make it as cupcakes and take them to friends parties and they are always a big hit.
I make her apple dumplings for almost every family gathering we go to. If I don’t walk in with a pan of them, I’m greeted with groans. So just for fun, sometimes I leave them in the car until I get to hear the groans and how wonderful they are…blah blah blah…that’s always fun for me and then we go and get them.

I would LOVE her cookbook. I’ve made her BEST LASAGNA EVER recipe (which it totally is), her bacon wrapped crackers, apple dumplings, cheese muffins, chicken spaghetti, olive cheese bread, not you’re Granny’s mac & cheese and creamy mashed potatoes. All of these recipes were to die for and my picky husband loved every bite!

Your pics are great! This recipe seems close to my one my mom has but it is called Texas Sheet Cake. I have had to revise it to accomodate my daughters dairy-free diet but it is still one of the best chocolate cakes! I found PW’s website last year looking for food ideas and recipes to cook my very first Thanksgiving dinner and have tried numerous things…all of which have been wonderful! My recipe box is full of Ree’s recipes. I don’t think we’ve ever tried one we didn’t like. My favorite is her Garlic Cheese Bread.

I’ve tried many PW recipes. Her chicken spaghetti is a family favorite and this cake, it saved me in early pregnancy when chocolate was the only thing I could stomach.
i love the pioneer woman! read her religiously – which i am sure would crack her up! have never made a recipe, but i think that is because there are so many drool worthy photos – i am going to make the stuffed mushrooms on today’s post…

I can’t wait to get home (I’m out of town, my family ran the NY marathon yesterday and I was their cheerleader! lol)and bake this cake. Your awesome pictures ALWAYS make me want to try it all!

I love the Strawberry Shortcake Cake, the Best Ever Lasagna (this coming from a person who absolutely could not make even the easiest lasagna until I found this recipe), the Basic Breakfast Potatoes are amazingly good, the Chicken Strips are really good (my kids love those), those are all our favorites :D

We have been baking this cake in our family for a while and you are definitely right — it is the best sheet cake ever! Although I have been following Pioneer Woman, I haven’t made any of her recipes. However, I did buy a squash and will be trying the recipe she recently posted.
I have to tell you a funny story about the chocolate sheet cake. Several years ago, my mother made it for a family event. She kept thinking something wasn’t right but poured it in the pan anyway. That’s when she realized she had forgotten the flour. She scraped it out of the pan, added the flour, poured it back in the pan and baked it. She was cutting the cake and telling us the story as she passed out the pieces. My dad got his first and took a bite. She asked him how it tasted and he said, “Well, it’s a little tight” — whatever that means. So, we no longer call this a chocolate sheet cake. When someone in our family makes it or wants one for his/her birthday, they request a tight cake. :)
By the way, I’ve made the ‘hamburger cakes’ several times. My grandchildren absolutely love them. My daughter tried her hand at them for her son’s fifth birthday and they were a big hit. Thanks for sharing. Be blessed!

I made the red pepper risotto and fettucini alfredo for my anniversary this year. My husband love it.

OMG!!! this is so ironic. we had a family gathering for halloween….lotsa kids +losta sugar= lotsa ‘FUN’. but we were discussing our menu for turkey day and this cake came up. i made it back in april for easter. THEY LOVED IT!! and they wanted me to bake it again. so it’s ironic that i check in on my number 1 gal and lo and behold…..”the cake” is front page news…..again. anyhoo, i guess to answer your question. i will be making “the chocolate cake”. Deliciso!!!!

I’d like a copy to give to my mom…she loves PW’s recipes but can’t figure out how to print them. I just made PW’s stuffed mushrooms (the original ones, with sausage, not the new, Brie ones) and they were DIVINE. I made them for an at-home sales party, and I’m pretty sure we did 79% more business because of those mushrooms.
You MUST try the Chicken Spaghetti! I make it for my family all the time and there are never any leftovers.

Try the Marlboro Man Sandwhiches!! Wonderful. I made them for my hubby and my dad and they were great! PW is going to be in Dallas in a few weeks to sign her cookbook and I can’t wait to meet her.

I’ve made Ree’s cinnamon rolls and it was Redonkulous how good they were! The recipe made a ton though so I took them all to my son’s kindergarten class and they loved em too!

I live in a small town that is titled AMERICA’S SWEETEST TOWN b/c we have the United States Sugar Corporation here. I must say that I have to agree with you about all of the sugar!!! It’s my kind of recipe if it has tons of sugar in it! I guess its second nature now growing up with all of the sugar canes growing around my house! ;)
I just started cooking and have always LOVED to bake. I am 24 and just started my family, newleywed and have a 17 mth baby boy! My mom passed 3 yrs ago so I really don’t have anyone to turn to with questions when is comes to cooking! So I rely on cookbooks and recipes to get me thru meals and goodies!
The Pioneer Woman sounds like a great cook/baker. I would love to be able to try her recipes but we don’t have a bookstore in our town (I wasn’t kidding when I said we lived in a small town, all we have is Wal-Mart!) PW’s apricot bars, they are DELICIOUS! Awesome for a morning snack or can be served with vanilla ice cream for dessert. You can also mix up the flavors but the apricot is sooo yummy.
The chocolate sheet cake was the first recipe that I have tried! I love the frosting. I will have to give it a go as cupcakes. I have also made the onion straws.
I am so trying this cake TODAY with my girls!!!!!!!! My 5 yr old goes to have her tonsils out tomorrow so this will be the best treat before no solid foods!!!! She loves CHOCOLATE!
