The last time I had cake was when I went to Austin to compete at the end of February. On top of the three entries I took, I owed my MIL a cake for her b-day – she’d been wanting a chocolate cake with chocolate BC icing. Carried that there to her and we all had cake. It was a wonderful week and day I spent with my in-laws at their house with my hubby and two of my caking friends. Pink is MY color and I can use pedestals like no body’s business. Having such a hard time finding things I like that don’t look like what every body else has!
I made a Barbie cake for my daughters 5th Birthday just a couple weeks ago. It was the first time I had worked with Fondant and even made my own Marshmallow fondant. I stacked it on top of a double layer 8 inch round cakes. It turned out so cute. Now my next special cake will be my son’s 3rd Birthday in April. I love to make pretty cakes. I love using cake stands. I have started collecting them. My last cake was made this past weekend. It was a casual affair–a workday at my Mother-in law’s house. My no-mess cake was chocolate with chocolate chips and sprinkled with powdered sugar.
For my sister’s birthday on March 15 I made what we call “The Bomb.” Bake a chocolate cake, press it into the sides of a bowl, fill with softened ice cream, top off with rest of the cake. Set in freezer. To serve, work cake out of bowl and place on platter dome side up. Frost with whipped cream and slice.

What do you mean the last time we celebrated with cake? You CAN NOT have a celebration without cake! I mean, itsn’t it like a sin or something?! My last celebration was my grandson’s baptisim two weeks ago. I turn the whole table into cakes. Cross cake, cup cakes with white chocolate crosses, baby booties shaped cup cakes, mini stuffed cup cakes, and of course cake balls! I turned glass bowls upside down and placed plates on top to use a pedestals to go along with borrowed pedestals. A lot of work, but so much fun at the same time!
