Not cake, but ice.

Two weekends ago when I spent the afternoon judging for Hands On Atlanta, we all had a special treat. During the event, the King of Pops was on site selling his handcrafted popsicles. Usually he’s pushing his cute cart around the streets of Atlanta, but instead he was kicking it inside with us for the event. I was super-excited because I had already heard his story a few weeks before when a friend ran into him at the local farmer’s market. He was buying gobs of strawberries. So many, it prompted her to ask what the heck he was going to do with all of them. Then he handed her his card in the shape of a popsicle. Turns out he’s the King of Pops.

When she told me about meeting him, I decided I was going to track down his cart one day to try some of his icey pops. Luckily, that Saturday, all I had to do was turn around and there he was.

I had the Blackberry Mojito – YUM – but I’m still hitting myself for not trying the Chocolate Sea Salt, too.

You know, I think the only kind I’ve ever made myself are the ones you buy at the grocery store. You know the flavored water kind in those long plastic tubes.

Yeah, those.

So, I decided I wanted to make my own handcrafted popsicles with real fruit.

I just used some paper candy cups I had on hand and wooden popsicle sticks to play with.

It’s really easy to make your own.

Pick a fruit. 2 cups strawberries in this case. Hull and half them.

Throw them in a food processor with 1 Tablespoon super fine sugar, 1 teaspoon lemon juice and a pinch of salt.

Then blend it all together until completely smooth.

Pour and freeze.

These were layered with yogurt in between the strawberry. They were pretty tasty and the perfect size for me.

  2. The King of Pops has finally made his way up the Southeast, and now I can enjoy his homemade ice pops as well! Actually, we have an embarrassment of riches when it comes to popsicle salespeople: every Saturday, there are at least three at the market with gourmet flavors. It’s amazing.

    Today I went to a mall in Tel Aviv, and saw this pops maker sitting on a shelf!!

So I know you might not even see this comment, but there’s a popsicle place in Nashville, TN called Las Paletas and they make handmade popsicles too, which crazy flavors like banana split, chocolate mint (with crushed Andes mints inside), smoothie fruit flavors, and all sorts of awesome things. You should definitely check them out! They’re quite the inspiration

  44. Yummy! We make our own popsicles as well using fruit. Sometimes I add yogurt to add nutrition. Instead of using sugar, I sweeten with fruit juice. The kids gobble them up!

  57. This reminds me of growing up in Alabama – in the hottest summers we would freeze cans of peaches (without the top and some liquid taken out) and slice them for dessert!! Cold, sweet, frozen syrup – delicious and cooooooool.. Great way to get kids to eat fruit for dessert.

  58. Oh man I love these! They look amazingly delicious. Especially the Pineapple Habenero. It reminds me of this Chili chocolate I ate in class once :) It was sweet and spicy and just melted in your mouth. (Delish!) I think they were made by a company named “Chuao.” (They also have this fireworks one that taste lie chocolate and pop rocks…it’s like an explosion in your mouth :)

  78. I love strawberry kiwi pops, but a classic favorite was when we were small we would make Kool-aide pops in the summer and Soda snow cones in the first winter snow before the snow got dirty.
