A few weeks ago, my friends over at Cake Art gave me a sample pack of some paper pans in a plethora of shapes and sizes. They thought I might like them. But, I don’t. I love them. You can bake and then turn right around and take your goodies to someone special. Either that or display them at home and turn your kitchen into a coffee shop which could be fun, too.
These tiny ones make me happy. The size. The color. The slightly scalloped edge. Happy.
And so do these tee-niny ones. Eeeeek!
They have cylinder-shaped baking molds and regular muffin cup styles, too. Both of these are sturdy enough that you don’t need a muffin tray to bake them in. Just arrange them on a baking sheet and go.
And look at these cuties. They have lids. Perfect to bake and take.
Since I had all these pans, I had to put something in them.
I went for blueberries and bananas…
… and made some yummy muffins.

Add a little butter while they’re still warm and your tummy will say thank you.
Then tear right in.
I had enough batter to try them out in all of the smaller size pans for fun. The large round paper cake and loaf pans would have to wait for another day.
But you don’t. Cake Art was sweet and gave me a second sample pack. So who wants it? Anyone?

Wow. I really didn’t expect so many people to want to win paper pans. Super surprised. And now I wish I had scored more sample packs from Cake Art. Maybe I’ll get more the next time I make a trip. I don’t know, I guess it’s a toss up between corn or blueberry. There is a little coffee shop in my town called Cabin Fever that has the BEST blueberry muffins that are my current go to muffins. Dang…now I want one :)
Hands down – pumpkin muffins. With a little sprinkle of powdered sugar on top. Pretty much any baked good with pumpkin in it is my favorite.

One of my favorite muffins is pineapple muffins. I received the recipe during my bridal shower, along with lots of other yummy ones for recipes of all kinds, and it is made with canned crushed pineapple. The best part though is the dollop of apricot jam you put in the middle- raspberry jam is another delicious option.

Hands down my homemade blueberry with orange zest and juice. To die for, or seriously mame someone for them they are that de-li-cious!
My favorite muffins are chocolate chunk and raspberry “jewels.” I make a basic muffin batter, add dark chocolate chunks and fresh raspberries, and then dollop raspberry jam in the center before baking. When eaten warm, the jam just oozes delight!

My all time favorite muffin is carrot pineapple. My aunt gave me her recipe and they are always delicious! And they are actually pretty healthy, no oil, apple sauce instead with a hint of cinnamon… yummy! I make them mini for my kids and they love them!
My first instinct was chocolate chip, but chocolate chip kind of defeats the purpose of muffins and leans toward cupcake.

My favourite muffin is definitely my pear cake muffins. Adapted recipe from my mum’s Norwegian apple cake recipe. Lots of butter, lots of sugar, crispy on top from sugar and cinnamon sprinkling, soft like marshmallows inside, and a big, juicy piece of pear right in the center. YUM!
My fave muffin is plain ol’ chocolate chip. Nothing beats that melty goodness. But a close second is cranberry or raisin, or cranberry AND raisin together, because those don’t get runny when you cook with them.
As a chocoholic, I have to answer chocolate chip muffins! Although in the morning I like cinnamon muffins… I can’t deal with chocolate quite that early!
