A few weeks ago, my friends over at Cake Art gave me a sample pack of some paper pans in a plethora of shapes and sizes. They thought I might like them. But, I don’t. I love them. You can bake and then turn right around and take your goodies to someone special. Either that or display them at home and turn your kitchen into a coffee shop which could be fun, too.
These tiny ones make me happy. The size. The color. The slightly scalloped edge. Happy.
And so do these tee-niny ones. Eeeeek!
They have cylinder-shaped baking molds and regular muffin cup styles, too. Both of these are sturdy enough that you don’t need a muffin tray to bake them in. Just arrange them on a baking sheet and go.
And look at these cuties. They have lids. Perfect to bake and take.
Since I had all these pans, I had to put something in them.
I went for blueberries and bananas…
… and made some yummy muffins.

Add a little butter while they’re still warm and your tummy will say thank you.
Then tear right in.
I had enough batter to try them out in all of the smaller size pans for fun. The large round paper cake and loaf pans would have to wait for another day.
But you don’t. Cake Art was sweet and gave me a second sample pack. So who wants it? Anyone?

Wow. I really didn’t expect so many people to want to win paper pans. Super surprised. And now I wish I had scored more sample packs from Cake Art. Maybe I’ll get more the next time I make a trip. these are so fun and cute! and i’m a little embarrassed to admit that at first i questioned the oven-safety of paper baking ‘pans’ and then i saw the muffin cups and smacked my forehead with a resounding “DUH!” ;o) anyway, task at hand: my fave muffin is ALL of them. but if i must must must choose 1, how ’bout cream cheese? i love a good cheese pastry filling!

Anything with fresh fruit. Strawberry/rhubarb muffins can be particularly satisfying, and far healthier than a pie.
My favourite right now are my quick raspberry muffins that I bake in an extra large cupcake tin and then sprinkle cinnamon and brow sugar on just before I pop them in the oven – YUM!
I have a new favorite called Monkey bread Muffins made with maple syrup, butter and cinnemon sugar- yummy

When I was pregnant with my boys I would crave whole wheat muffins with cracked wheat berries. I’d make ’em myself and then load them up with home made plum jam. Just awesome!
Pralines-and-Cream Pecan-Caramel Muffins. I know, you’re thinking, “she’s got to be kidding, those are real muffins?!” I kid you not. And they are divine. There is ground pecans in the batter, a top layer of cheesecake-like filling topped with a pecan streusel and caramel sauce! Holy cow! I have to make them again someday soon…

I have a Weight Watchers Chocolate Zucchini bread recipe that I would love to try into muffins. Just waiting for my daughter’s zucchini to grow this summer. She loves when we make things from veggies she grew in her garden. She’s 8.

My mom was a baker at a Muffin Bakery and would bring home BAGS of day old muffins; flavors of every kind! My favorite though–Cheese Cake with Cream Cheese Frosting! They were even better around Valentines day when there was a surprise chocolate Kiss in the middle! Yum!
i can’t just choose one favorite…but if i had to it would be lemon-cranberry! but closing in as a close second is triple chop chip muffin TOPS…I made 2 dozen with liners I found recently and it barely made it through breakfast with the kids ^_^ I LOVE your web site!!!

My favorite muffin?? That is tough, I do not make, or eat, a lot of muffins, as I do not eat cooked fruit. I think all fruit should be eaten right off the tree/vine/bush. I guess I could go with a chocolate chip muffin, chocolate is always good.

I’ve made plain vanilla muffins (with buttercream and/or fondant on top; those are really awesome) but I’ve mixed the batter a lot longer than normal. That way they taste like muffins, but they get the texture of the “biscuit” (not the cookie, but pronounced like the French would) that I use to make cakes with… They were so good… They were for my boyfriend’s birthday. I baked 37, he only needed 30… It is scandalous that he only got 31 of them? Hihi! They were just soooooo good!

I love plain old blueberry — when I was a kid we used to make the kind out of the box…and instead of draining the blueberries I accidentally didn’t read directions carefully and dumped the whole little can in. We had purple blueberry muffins and they were the yummiest ever!

My family and I are vacationing in Hawaii right now and I have fallen in love with banana and macadamia nut muffins.
The best muffin I ever had was this monstrous apple cinnamon muffin at Claim Jumper restaurant in California years ago. I’ve tried several recipes trying to replicate it, and have never come close to its beauty. Someday I will figure it out!
