Easy and Easier Valentine Treats

If the Valentine’s Day Cake I made last week seemed like a little too much, then I think you’ll enjoy these. They require very little ingredients or effort and they’re still pretty cute.

Red Velvet Sandwich Cookies

They are sweet and red and a perfect little treat to give on the 14th. And even better, they are super-easy!

Red Velvet Sandwich Cookies
Yield: 12 sandwich cookies

Red Velvet Sandwich Cookies

Prep Time 20 minutes
Cook Time 12 minutes
Total Time 32 minutes

Ingredients

Cookies

  • 1 Box red velvet cake mix*
  • 1/2 cup butter, softened to room temperature
  • 2 Eggs

Cream Cheese Filling

  • 1/2 cup butter, softened to room temperature
  • 8 oz. Package cream cheese, softened to room temperature
  • 1 lb. Box of confectioners' sugar
  • 1 tsp vanilla

Instructions

  1. Cookies: Preheat oven to 350 degrees.
  2. Mix ingredients until combined.
  3. Drop spoonfuls of cookie batter onto baking sheet about two inches apart.
  4. Bake for 10-12 minutes. Cool.
  5. Filling: In a mixer, cream butter, cream cheese and vanilla.
  6. Gradually add sugar and mix until smooth.
  7. Spread filling between two cookies and press gently together.

Notes

* Any cake mix should work.

Red Velvet Cookies

Tip: For consistent size cookies, use a 1.5 inch small ice cream scooper when placing batter on the baking sheet.

The finished cookie size will be about 3 inches wide.

Red Velvet Cookies

To assemble, spoon a small amount of frosting on the flat side of one cookie. Take another cookie and press together until frosting is flush with the edge.

Now, some people would call using a cake mix cheating.

This is cheating. Or maybe it’s just being resourceful. Either way… still cute.

You guessed it. Oreo Cakesters, baby. I have been wanting to try these for a while now.
I mean, one of my favorite cookies made into a cake has to be good.
And since I was in a valentine kinda mood, I decided to eat my heart out.

And the best part is eating the scraps along the way. Yum!

The cakesters are about 1.75″ wide. So you will need a cutter smaller than that.

Now, since Valentine’s Day is almost here, here’s another quick giveaway.

It is the journey of a young girl learning to make cupcakes for a friend’s birthday party and also includes a few recipes.     My hubby and I are unable to get out alone together very much. We have a 7-year-old autistic son (and a 3-year old daughter) and it’s kind of hard to get babysitters. We do spend time at home with each other after the kids are in bed – but it’s nice to get out once in a while.   158. Hello, for Valentines Day (and all other days too) I’d love for my husband to think before he speaks. He’s always making mean comments to me, usually about my family. He has no children, so he couldn’t possibly understand my connection to mine. We met on-line and married 3 years ago, and it has been so bad. I think(?) he loves me, but I know that he doesn’t know how to give that unconditional love to a person, even though he was married 45 years before his first wife died.   174. I am having, what has turned into, an annual Valentines Day dinner at my home for 7 couples. The “tradition” was started after hurricane Ivan. Three of the couples had lost their home in the storm. They were not able to afford big nights out, so……I ALWAYS send them home with a plate of cookies, this year I will be including your red velvet cake hearts in the mix. Thanks a bunch!

  178. I am thankful that Valentine’s Day falls on a Saturday this year. I want lunch and s fun activity with the kids during the day, and a sweet time for just my hubby and me that evening. I get the best of both worlds when Valentine’s Day is on a Saturday. I love the book! Looks too cute!
