Cake… Three Ways!

Mini Cakes

I love cake! And, by now you guys should know I love things little, too. So, I made some mini cakes using my new favorite moist yellow cake recipe. Actually I made 9″ cakes and used a round cutter to make them mini. Two layers will get you six 3 7/16″ cake circles and two smaller circles. Here’s how one of the layers looks all cut up.

And here they are stacked. They’re so cute… even without any frosting. (Don’t worry the scraps made it safely to my tummy.)

But, who would serve a naked cake. So here it is fully clothed in luscious white buttercream frosting. Hold me back!

Three Mini Cakes

I started out making the fondant covered cake that’s on the pedestal (inspired by a pillow fabric from an old Pottery Barn catalog. Yep… I love their stuff.) Then, I made the second one using decorator icing bags and tips. Then I got tired and just slapped some buttercream all over the last one. And, I have to admit, I think it’s my favorite. But, tell me what you think.

My favorite baking memory would probably be when I earned to make bread with my uncleI was twelve but the aroma that filled the air that day is one I will never forget especially because he passed away soon after and now I wish I would have written down all the things he shared with me about baking it’s so important to lear from those that have experienc because they can also get passed down fron person to person, miss him butb ow baking is even more treasured and I can show my son how I do it.

  21. That’s a great idea to use cake scraps. I have so many cake stuff in the freezer and my husband is getting annoyed and irritated that they just sit there and chill. He can’t use the freezer for meat stuff.

    I was also thinking of giving them away as a thank you “cake” for our wedding. I admire you for the cute stuff you make.

  25. hi angie simply lov all ur stuff but plz post a recipe of eggless red velvet cake. coz im a vegetarian n secondly we dont get this cake mix in ready to use packs….n also which else frosting can b used instaed of cram cheese…..as we also dont get them here.thx n keep baking

    though messy looks much more enjoyable to eat, i think sassy describes me the best!
    the only problem is that i will be afraid to even touch it after decorating a cake like that… for me that is probably a pretty high achievement!

  27. Anything is fine because at the end the cake is going to end up in your tummy so I pick all 3! 3-of-a-kind!

  34. They all are great for different reasons, but I would choose the “messy” as my personal pic. I am not a fan of fondant – although they look great – they do not taste as good as the buttercream.
