I think I forgot how much I love snack cakes. Easy, single layer cakes that take all the fuss out of cake decorating and throw in all the fun of snacking on sweets. This yummy one is a Cocoa-Cola Cake with Chocolate Icing that I just made from Back in the Day Bakery’s brand new book, Made with Love.
I wanted to try one of their recipes out because this Wednesday, I’m going to be chatting it up with none other than Cheryl and Griff Day… the delightful duo of Back in the Day Bakery. Okay, let’s make a cake.
This one calls for easy ingredients including Coca-Cola. Awesome.
Mix everything up and spread the batter in a baking pan lined with parchment paper.
Oh yeah, we’ll me marshmallowing this baby up, too.
Right after the cake finishes baking, sprinkle mini marshmallows on top and place back in the oven for a couple of minutes to get all melty. Yum!
Then whip up the chocolate frosting.
And mix in chopped pecans. This just keeps getting better.
Oh my oh my. Place large spoonfuls of frosting all over the top of the cake to make it easier to spread without messing with the marshmallows underneath too much.
Spread evenly on top.
Reserve some of the chopped pecans to sprinkle on top of the cake, too if you like.
If I had the patience to let this cake cool all the way before I made the first cut, I think it would look a prettier. But, I COULD NOT wait to dive in. Actually, I took a spoon to the corner of the pan before I even cut into it. Highly recommended deliciousness.
P.S. Now I want a whole book on snack cakes.

I really love taste of the mixture between cocoa and marshmallow, but I have never tried to mix it with Coca-cola. It sounds interesting, I will make this recipe tonight, thank you so much!

Tried this out for a weekend getaway at a friend’s cabin and it disappeared! The cake was so moist, and that icing is always a favourite. Although I may skip the marshmallows next time — my cake domed up just enough in the middle that they all ended up rolling to the edges. Might try mixing them right in the cake batter as I’ve seen in another similar recipe.
I can’r believe coca cola could make a cake so delicious, i really need to try this!

Snack cakes are my favorite too, they don’t have as much frosting and they are easy to eat. No fork involved. I like the look of this book… might have to get myself a copy!!

Hi J & Heather – Yes. I made a mistake it should be baking soda in the ingredients list like listed in the instructions. I hope you try to make this again, because it really is yummy. Again I’m so sorry, for the screw up in the directions. I’m correcting the post right now.
To everyone reading this — there’s a typo in the recipe. It’s 1 tsp BAKING SODA not baking powder, as Bakerella lists. Hopefully she’ll correct it soon. I just ruined an entire cake — didn’t catch the type until I sliced into the cake. :(

Yikes! I’m in the process of making this and just noticed that the ingredients list says baking powder, but the instructions say baking soda. I’m assuming it would be easier to make a mistake in typing the instructions part, so I’m going with the baking powder-but I just want you to know that something needs to be corrected. Thanks for the recipe!

Oh so yummy. It’s been a while since I had one, but use to make it from our church cookbook of the 80’s.
I love their first cookbook and am ashamed to admit that I didn’t know they put out a new one! I have to buy a copy! That said, I love coke cake and yours looks absolutely delicious!
