A warm, fudgey, melt in your mouth, cup of chocolate heaven. I’m not sure if I’ve ever tasted a soufflé before and I know I’ve never made one, so as far as I’m concerned, these came out superb. They may look a little flat, but what they lack in appearance, they make up for in taste. I made them for my mom and of course, I had to eat one, too. Actually, I ate three. What can I say, it was necessary for the photograph.
Look, someone had to do it or else you wouldn’t know what three empty ramekins looked like photographed from above. Okay, I can see it on your face, you’re not buying my reasoning. Well, how about this one. They were just so dang good, I couldn’t stop myself. (Don’t judge me.)

So, I made soufflés “the real way!”
Here’s the second recipe I tried. I wrapped one of the ramekins in parchment paper per some suggestions on the web. YAY!!! I made it rise above the rim. Again, YAY!!!!! However, the ones without the paper looked like my first batch. Makes me wonder if those would have risen if I had used the paper with them, too. I guess you know what that means. More chocolate soufflés in my future. Oh, how I suffer.
Easy way or real way, both ways really were delicious. Extremely delicious actually. So good that I don’t know which way I liked better. I’m almost afraid to try these by someone who really knows what they are doing… I might not be able to handle it. (But, I’ll try.)

I baked these slightly hotter and for half an hour and they did rise. It was an acident but now I make them all the time this way. :D x

I realize this post is from over 2 years ago, but I just wanted to let you know that I made something similar this weekend, using the “Melting Hot Chocolate Souffle” recipe from Roy’s Hawaiian Fusion. (http://www.roysrestaurant.com/whatsnew/recipes/) I did a ton of research and this appeared to be the easiest recipe I could find. I used ramekins like you did, and lined the inside of each one with parchment paper (and cooking spray) so I could turn them out onto a plate. SUPER easy recipe, SOOOO delicious!!!!!!!!!!

Hello! This post is quite old, so I”m not sure if you’ve learned this yet or not, but did you butter and sugar the insides of the ramekins? It helps them “grow” by giving them stability to “climb” up the walls of the ramekins – I’m a Baking and Patisserie student at Le Cordon Bleu, Atlanta – we just did Souffle’s hope this helps for your next go round :)

I haven’t made souffle in a loooong time but the recipe I used said to run a knive around the edge before baking and would help with rising. I didn’t use paper and they rose fine. Love your blog!

Rachel Ray has a pretty good recipe for a faux souffle in a cup too… it’s really easy and can be put into the fridge until you are ready to bake (during a dinner party for example)!

Believe it or not, they actually need the the paper to stick too! that is why you aren’t supposed to use a non-stick pan when making angel food cake, they actually need the side of the pan to rise up… same reasoning…
