Heathy Cookies

IMG_3486

Want some heathy cookies?

Nope, that’s not a typo.

Healthy would be nice, but ……

IMG_3552

These are all Heath.

I bought this bag of milk chocolaty toffee bits the other day.

Then I made the mistake and opened the bag to nibble on them.

You know, just for a taste.

Then I didn’t stop nibbling on them.

Every time I did something in the kitchen, I would pinch a few bits.

IMG_3292

So I made myself bake something with them tonight before all my bits were bitten.

IMG_3256

Toffee bits and a few basics are all you need for these cookies.

IMG_3266

Fluffiness.

IMG_3275

Dark brown sugar.

Yumminess.

IMG_3287

Butter and peanut butter. Yes and yes.

IMG_3306

Creamed.

IMG_3318

Eggs and vanilla.

IMG_33182

Or eyebrows… depending on which way I flip the photo. : )

IMG_3344

After mixed, throw in the bits.

IMG_3432

Roll and dip them in more toffee bits.

IMG_3478

Then bite.

Easy!

And if you want to make them a little sweeter. Maybe for your sweetie.

IMG_3396

Just bake them in a heart shaped silicone pan.

IMG_3545

It just adds a little bit of love.

Heathy Cookies
Yield: about 30 2-inch cookies

Heathy Cookies

Prep Time 25 minutes
Cook Time 10 minutes
Total Time 35 minutes

Ingredients

  • 2 cups all purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, slightly softened
  • 1 cup dark brown sugar
  • 1/2 cup peanut butter
  • 2 eggs
  • 2 teaspoons vanilla
  • 1-1/3 cups (8 oz bag) Heath Toffee Bits

Instructions

  1. Preheat oven to 350 degrees and line baking sheet with parchment paper.
  2. In a small bowl, mix flour, soda and salt using a wire whisk and set aside.
  3. In another bowl, cream butter, dark brown sugar and peanut butter until light and fluffy. Add eggs and vanilla and mix until combined. Add flour mixture to creamed mixture and mix until combined.
  4. Stir in toffee bits, reserving some to dip tops of cookies.
  5. Roll cookie dough into 1-1/4 inch balls. Chill for a few minutes to make it easier to roll or use a small cookie scoop.
  6. Dip tops of cookies in bits and place on parchment paper covered baking sheet.
  7. Bake about 10 minutes. Place cookies on cookie rack to cool.

Notes

Note: I only had almost a cup left of bits to use for these cookies, but I would use the whole bag and possibly even two for these cookies.

Enjoy every little bit!

  1. Delicious!! Thanks for the excellent recipe.

  2. I haven’t visited your site in a while and when I saw this link I got so excited. Healthy cookies from bakerella? These have got to be good (unlike other healthy cookies out there). Heathy cookies are even yummier. But I had to read it over and over before I read it correctly. Funny how the mind works :)

  3. my mom make cookies

  4. Looks tasty! Too bad you can’t get any heath taffy in France…

  5. I haven’t read through all of the comments but SunButter is a great alternative to peanut butter. Just use half the amount of Sun Butter as you would peanut butter because it has a stronger flavor when cooking.

  6. These are really good!! Recipe is definitely a keeper! Thanks!!

  7. I have used your cake pop recipe before, and it turned out great!! I really want to make lego “ninjago” cake pops, so do you have any ideas on what I can do to cover their faces? I don’t know if fondant will hold….

  8. My granddaughter and I made these yesterday. I only had chunky peanut butter and light brown sugar but they were absolutely yummy. I also used the Heath chips w/o chocolate because that’s what I had on had. Had no problem with them flattening out and I baked at 10-11 minutes. We got more than 30 cookies so I guess we didn’t roll them into big enough balls but they were the perfect size. My granddaughter also called them “Healthy” cookies when she was looking at the recipe. After pointing out they were “Heathy” she wanted to make them despite my lack of specified ingredients. I’m sure they would have been even more “yummier” if we had used the called for ingredients. Will bake these again. Thanks Bakerella!!

  9. I made these cookies and they turned out so fantastic! The peanutbutter really adds to the tastes, but doesn’t overwhelm them. In no way are these like true peanutbetter cookies. Bakerella isn’t kidding when she says she would use 2 bags of Heath next time. So will I! I will use a bag and a half in the batter, leaving at least half a bag for coating the tops of the cookies. Trust me, the ones with extra candy on top tasted so much better than those left without when I ran out of candy. Also, for me the best batch of cookies were the ones left in for only 10 minutes like Bakerella said to. At first, I thought they weren’t done enough, and left them in for 12 minutes. My last batches were for only 10, and turned out the most tender, especally the next day. My husband, little brother and I couldn’t get enough of these. :D
    Thanks so much, Bakerella!

  10. Just made these cookies and all my family can say is do not lose this recipe!! They are sooooo gooood!!!

  11. I tried out this recipe and everyone loves the cookies naturally. I had two problems I had to solve. First, my local grocery store only had the HEATH toffee bits with no milk chocolate pieces in them. So, I bought a bag of mini HEATH bars and smashed them into bits with a hammer. Second problem is that my cookie doesn’t flatten out from a ball in my oven. I had to flatten the dough balls with the bottom of a glass so that mine would come out as flat as yours. 10 minutes was perfect for my oven too! Normally, I have to subtract one minute from cookie recipes to accommodate my odd oven. Any suggestions on why my cookie dough balls never flatten out into nice flat disks? If I leave them in the oven too long then the bottoms burn. Nobody likes a burnt bottom! ;)

  12. Yum! Will have to try this recipe!

  13. Haha! Heathy does sound better than healthy :) These look super yummy!

  14. This is so ironic! I make my hubs heath cookie A LOT! he absolutely loves them and then we were talking and he goes “you should make some health cookies for me but the cookies need to be peanut butter cookies!” Needless to say I just got done baking a batch before I came on and saw this. Love your ideas!

  15. I’m never sure if I really like toffee, but I’ll have to give these another try. Yum!

  16. these look delicious!

    thanks much.

  42. ;-)
    Nice title!
These cookies look waaaay too good right now. It’s 10pm and I shouldn’t even be thinking about starting to bake, but these babies look amazing!

  43. @all the Aussie’s …. get some nice Americans to send you some! :) They are yummy!

  44. These look absolutely delish! Thank you for sharing the recipe. Can’t wait to bake up a batch!

    Deborah

  45. I can’t wait to try these!!!!! My all time favorite is Heath. I do the same thing every time I buy a bag of the Heath bits, I keep munching on them, thank you for the recipe now I have something else to do with them. :)

  46. I love those Heath bits! I make bacon toffee cookies with those, and people go nuts for them!

  47. I went to the store for the bits (on sale even!) and made them last night… but my bag didn’t have any chocolate bits. :(

  48. They look so yummy! Need to get these toffee bits and bake them next weekend :-) thank you bakerella!!

  49. They look so yummy! Need to get these toffee bits and bake them next weekend :-) thank you bakerella!!

  50. I’m starting to drool just looking at the pictures of these amazing cookies! Heath candy bars are a favorite for my husband and I. A must bake, ASAP! Thanks again, Bakerella, for the sweet inspiration. :D

  51. Wow! What a great idea to use peanut butter!

It’s funny you just posted these because I made Heath cookies not too long ago as well. Would love for you to check them out!

    http://www.toddlindsey.com/2012/01/chocolate-chunk-toffee-cookies.html

  52. I have never met a toffee-based dessert item that … in the words of Pioneer Woman Ree … didn’t “make my skirt fly up!” So I am going to be working on some Heathy cookies soon. Thanks, Angi! (Although this may mean I bake cookies instead of cake pops next.) Decisions, decisions.

  53. Hi, i’m from The Netherlands, but I really want to know how you make your frosting, whit butter, because i don’t like that so mutch. greets jolijn

  54. I too read healthy! Very pleased to discover they are yummy cookies – perfect for my coffee break!

  55. I’m from Japan.
    I like your blog.
I don’t know where I can buy Heath toffee bite in Japan.
But I want to make this cookie!
    Thank you!
(Sorry, I’m not good at English.)

  56. Oh!!! I just got it. (see previous comment! LOL)

  57. What, if you please, is “healthy” about these cookies?
    (although, they look good)

  58. I have made these before and people absolutely love them. Not being much of a fan of chocolate, I love these cookies! Add peanut butter to anything and I’ll eat it!
P.S. I just love your blog!

  59. I almost skipped these in my reader feed because I thought “Why would I want healthy cookies?!” Good think I went back…I love toffee!

  60. I know you loooovee peanut butter, and I love it too, but i can’t bring in anything with peanut butter to school! :-((((( So could you tell me what I can change (substitutions w/ nutella, more p=flour, etc.) to make up for lack of peanut butter?

  61. Bakerella or others – is there anything we can substitute in these for Heath bits – I have never seen them here is Australia!!!

  62. I almost didn’t bother to open the e-mail. Who subscribes to Bakerella for health? Not I. So I was very relieved to read about the Heath Bar cookies. And you are so like me – if there is a bag of something good open, odds are I will eat them if they don’t get put into something. Especially Heath bar bits. Yum!

  63. Sounds great! When you bake in a silicone pan, what temp/time adjustment do you make from baking on a parchment lined cookie sheet? I have a couple of silicone pans, but never use them because I don’t know how much to adjust the t ime and temp.

  64. These look absolutely delicious!!!!!!!!!!!!!!!!!!!!!!!!!!

  65. Just made these – I couldn’t wait! Thanks for the recipe. I love them, but I think I need more chocolate! Next time I might throw in a few (or a lot) of chocolate chips in addition to the Heath.

I used light brown sugar because that’s what I had, and it turned out fine, but I’m sure I’d prefer the color and texture of the dark brown!

  66. Bakerella, they look so good, I want to make them but I wish we had Heath Toffee bits in Australia.

  67. Bakerella – Do you think I could use light brown sugar instead? It’s all I have.

These look amazing and I want to make them tonight!

  68. That’s funny…my eyes automatically added an “l” into your post title too and all the way through I was looking for the healthy ingredient…figured peanut butter was it, that’ll do!

  69. HAAAAAAAAAAAA! I thought it said healthy too. PS, I KNEW I would regret not buying that heart “pan”

  70. I almost didn’t open this post because I read it as “healthy” cookies and I mean, who wants those? But then I thought, hey, this is Bakerella! I’ve now drooled over the keyboard and am sad that I can’t get Heath bits where I live in Canada. Maybe I’ll improvise by smashing a few Skor bars!

  71. Heath AND peanut butter?! You’re an evil genius, Bakerella!

  72. Oh you tease.

  73. Excellent! I love these.

  74. You are so tricky….I TOTALLY read that as “healthy.” ;)

  75. Yep, add me to the list of readers that misread! I wasn’t crazy about heaLthy cookies but figured since it was a recipe from you, I’d give it a look. So glad they’re Heathy and not heaLthy!

  76. Eye-brows or in this case egg-brows lol

  77. I LOVE Heath bars. Must make these soon!

  78. Yep, you had me fooled. I thought I was going to be looking at a healthy cookie recipe and honestly wasn’t too excited. But these – well I think my hubby will love ’em and I can use the excuse of “I’m trying to empty my pantry for the move” as to why I HAD to make them. (now to buy the bits!)

  79. Haha! Yeah a healthy cookie would be good, but since I have some Heath bits in my pantry right now, I guess these will have to do! ; )

  80. haha…I thought you wrote “healthy” cookies! Then I scrolled down a bit and saw the Heath toffee bag! I am making these today, they look so yummy!!

  81. You got me…totally thought this said healthy cookies! You’ve combined 2 of my favourites…pb and toffee bits…in fact, this is a combo I often get when having ice cream at the Marble Slab (plus some cookie dough of course)…and I agree with you – toffee bits = trouble (that’s why I keep mine way up high in a cupboard I can’t reach).

  82. Those look so good-and yes, I almost read them as healthy ;D

  83. Wow!! I read healthy cookies was pretty happy since hubby and I are eating healthier. Then I clicked on the link and well…… I think I need to break my diet for a day. These look so yummy!!!

  84. Oh, you trickster! Definitely read “healthy” and thought, “Oh boy! I can make these for my husband!” since he was just told he has slightly high blood pressure.

After realizing it said “heathy”… I haven’t changed my mind about making the cookies :) Terrible wife? Possibly.

  85. My heart stopped beating for a second. Thought you’d changed horses on us. I already am a healthy size and I can’t wait to make these!

  86. HAHAHA i too read “healthy cookies” thats funny, i try to make for my kids!

  87. nothing has excited me this much! thanks for the recipe!have you tried this recipe with other candies?i would like to know which ones in case i don’t find these candies in my country.

  88. I read “healthy” when I saw this! I would be a healthy size if I made these!

  89. Tuesday, Jan. 24 is National Peanut Butter Day! Yay!

With that said, I’m allergic to peanuts…boo. Is there a variation for this recipe not using peanut butter? Could just use the recipe for chocolate chip cookies, I suppose. Ideas?

  90. I admit it.. I too read “healthy” cookie and then I saw the heath bits and said to myself “oh no way can these be healthy..” then it clicked… HEATHY!! Even better :)

  91. Definitely read “Healthy” at first, but Heathy is much better! Can’t wait to try these!

  92. …You’re so funny! lol… Love the lil’ eyebrows thingy. :o)

…These look and sound scrumptious! And who needs healthy when you could have heathy, hmm? Seriously. ;o)

…I think of you often and hope you’re doing well. Thank you for the recipe!

    …Peace & Blessings :o)

  93. Heehee, I thought it said healthy cookies too until I read the comments!

  94. I’d much rather have heathy cookies than healthy cookies! These look delicious!!

  95. oh yum, I would so do the heart ones, it’s much “heathyier?” to do it that way right:)

  96. Maybe I will just keep telling myself they are healthy.

  97. ha! you tricked me…i totally thought these were “healthy” cookies…but i’ll take a healthy portion of them!

  98. Does the use of White Lily affect the texture to the point that using another flour would be ill-advised? It’s more finely ground and lower gluten than the other all-purpose flours on the market.

  99. Heath sounds much better to me than healthy. I’m always weary of a ‘healthy’ cookie. :) These look amazing, I LOVE Heath! Were they as delicious as they look? I see a trip to get these bits in the very near future…

  100. I love it! Haha you’re right, I totally read “healthy”. Whoops!

  101. These look amazing. I’ve never even heard of Heath English Toffee bits (not even when I lived in England). Maybe it’s just too far for them to come to Australia!!

  102. Love the silicone pan idea, thanks Bakerella!

  103. This is too funny! I just made these two nights ago with my mom and sister! what a coincidence :) i agree they were delightfully heathy.

  104. Ha! I shouldn’t have known better…

  105. LOL, like everyone above, I thought the title said “healthy” — and I was thinking, “Oh no! Don’t healthify the cookies!” ;) These are a MUCH better alternative, imo! If you’re gonna eat a cookie, eat a cookie, right?

  106. haha, totally read “healthy” as well!
but these look great, thanks for sharing!
    xo, cheyenne

  107. I was so confused when I thought it said “healthy” but heathy is better anyway:-)

  108. Haha! Totally read that as HEALTHY! Yum!

  109. Hahaha, I SO thought this said HEALTHY cookies! They look delish tho xx

  110. From now on, any time I want to make people feel good I’m putting Heath bits in the recipe so I can advertise is as “heathy”. LOL

    Who’d really notice?

    I love these cookies!!

  111. Tee Hee…when I first read the post title, I read, “healthy cookies”. :) How can I put the “l” in these Heathy cookies? Serve them on a lettuce leaf, perhaps.

  112. holy crap, miss bakerella……these look delish.

  113. Oh yum! I have a bag of those that I brought back from the states on my last visit… just waiting for inspiration. Now I know what treats I’m going to be making tonight!

  114. Hi! Love your blogs…I am always inspired. I do have the heart silicone pan. Do you have any tips for using this pan. I haven’t had any luck with the silicone pans..I spray it to before baking too…any secrets ?

  115. that is so funny that you posted this, i had a bag on the shelf and i didn’t know what to do with them! thanks for the idea!!

  116. I think the heart shapped ones are so sweet. I love them! I think they will make such sweet (literally) valentines day treats! I doubt i will find Hearsy products here…is it just a mix of toffee bits and chocolate bits?

  117. yum! they are so delicious with the bits of toffee inside.
I definitely have to try them :)

  118. I almost read it “healthy” lol!
Healthy or heathy these look amazing! ;)

  119. You made me look for sure… I first read the title as “Healthy” cookies, I knew that couldn’t be right! =)
    These look so delicious!

  120. I too read “heaLthy” haha. Can’t wait to make these! I’ll be dreaming about them! Thank you:)

  121. I too read “heaLthy” haha. Can’t wait to make these! I’ll be dreaming about them! Thank you:)

  122. These look sooo good! This is one of my husband’s favorite candy bars, so they’re perfect! :0)

  123. Ooh! They look delicious! And I got a weak spot for peanut butter!

  124. Yum! They look amazing! Even if they are Heathy & not Healthy!!

  125. LOL – I read it three times before I realized it didn’t say ‘healthy’ and the whole time I’m reading it I’m shaking my head thinking what is healthy about this?
They do look delicious will have to make some with the kids. Is there something I can substitute the toffee with it isn’t available in Australia.

  126. my mind read “HeaLthy Cookies” lol. Or maybe i was trying to convince my brain that it said “HeaLthy Cookies” Either way, these are perfect for my husband who loves Heath. Thanks for the Valentines Day gift idea!! :)

  127. Woo hoo! A new cookie recipe! Thanks Bakerella! :D

  128. Oh my! These look yummy. Can’t wait to make them!!!

  129. These Cookies Look delicious. Bakerella you are such an Inspiration :)
