Biscoff Fudge, baby!

I have shared my love for Biscoff cookies with you before. Remember these cheesecake bars I made with a certain cookie crust? Delta gives these cookies out on their flights and when the flight attendants make their way down the aisle, I get excited like a little kid waiting for a snack. It’s gotten to where one little two-pack isn’t enough when I’m traveling so sometimes I even buy my own package to bring along. It’s a problem.

Recently I tried them dipped in coffee for the first time.

Oh. My. Cookies.

I don’t really drink coffee unless it’s with dessert, but I may have to start a new habit just so I have something to dip these cookies in.

If you haven’t tried it before. Don’t. And save yourself a little addiction.

Speaking of new addictions, Biscoff also makes a spread that tastes like their cookies.

I’ve tried to avoid it for my waistline’s sake, but it finally got me.

And, it’s so good. I think I’m in trouble. Big Biscoffy trouble.

I decided to try making some fudge with it the other day so I wouldn’t end up eating the entire jar in one sitting,

I usually make Peanut Butter Fudge during the holidays, but I thought it would be fun to try this kind. too.

You can see why I thought it would be a great replacement for peanut butter.

And on it’s way to delicious.

Throw in some marshmallow creme.

Mix it all together…

And throw it in the pan.

Spread it right away because it doesn’t take long to set.

And, if you want a little crunch, throw in some crumbled Biscoff cookies for good measure.

Or just do half if you’re indecisive like me.

Press the cookie pieces in pretty good or they will fall off.

Biscoff Fudge

Biscoff Fudge

Ingredients

  • 1-1/2 cups granulated sugar
  • 6 Tablespoons margarine
  • 1/3 cup evaporated milk
  • 1/2 tsp vanilla
  • 1/2 cup Biscoff spread
  • 3.5 oz. or half a jar of Marshmallow Creme

Instructions

  1. Combine sugar, margarine and evaporated milk in a medium pot. Bring to full rolling boil, stirring constantly.
  2. Reduce heat to medium and continue boiling for 4 minutes, stirring constantly to prevent scorching.
  3. Remove from heat and stir in Biscoff spread until melted.
  4. Add marshmallow creme and vanilla. Use a mixer to beat in the pot until well blended.
  5. Pour into greased 8 X 8 pan. Let cool and cut into small squares.

Notes

If the fudge gives you any trouble, it's usually one of a couple of things for me. Getting the sugar mixture too hot and the fudge turns out kinda crumbly or not hot enough and it doesn't quite set as firm. I've had both happen on occasion. You also want to make sure you have the right amount of marshmallow creme. I usually eyeball it. These are borderline crumbly, but still so good. I suspect I got it too hot, but I also wonder if it has something to do with the Biscoff itself. Guess I'll have to make it again one day soon to see.

I do have to admit, the Peanut Butter Fudge is still probably my favorite, but these are good for a change.

Now, if you’ll excuse me, I have an opened jar of Biscoff and a spoon waiting for me in the kitchen.

  4. You just succeeded in making me so hungry I had a bunch of Trefoils, which is as close to this as I can get. (Trefoils are a Girl Scout cookie. They are really nothing like Biscoff-they’re shortbread cookies- but as close as I can get at 10:00at night).

    Try tiramisu with biscoff cookies instead off the others.
    And if you want to make it kid friendly use chocolate milk instead off coffee!

  11. That’s so funny! We have the same stuff in Holland, but here we call it Speculoos. It’s the Belgian version of the Dutch speculaas cookie. Never thought of making fudge with those, it’s really creative!

    I’m from Belgium. And the biscoff ( SPECULOOS the right name ) is a belgian speciality. The childrens received it on 6th december for “Saint nicolas”, a old man who become for the nice childrens to give some sweets and toys with him helper and donkey.The choldren let a mug of milk for the old man and a carrot for the donkey.   13. OMG! I just jumped for joy! Not only do I LOVE your blog and Biscoff cookies (I gave them away as gifts for Christmas) BUT Biscoff spread is a NUT FREE alternative to peanut butter! My child has life threatening allergies to nuts and has never had fudge or anything like a pb & j! This will change his life! LOL. I would not have ever known about the spread if it were not for your blog! Thanks for everything you do!

  14. Actyally I’m from Belgium and those little cookies are from here! We call them Speculoos and it’s very yummy :p I love them with dark chocolate (belgium of course) and never tried on fudge before!   15. I used the spred on a dessert pizza. Instead of Nutella, because I dont care for it, and it turned out great! I just baked a sugar cookie crust, spread on Biscoff and topped with cruched oreo’s, reese cups, chocolate chips, you name it…it was delicious!

  16. Love Biscoff!! and yes it started with the cookies on a delta flight! The spread rivals Nutella! Put some of the spread on the cookies- to die for!! Of course there is none in my cupboard- it is too addicting!! I only buy it occasionally, otherwise I woulds eat it everyday!

  19. we have speculoos here in France as well as speculoo spreads. We have speculoo syrup and speculoo ice cream! Now if I could just get a jar of fluff I could make this wonderful fudge.

I am with you with this Biscoff addiction … On this part of the world (I’m writing you from France and my english is not brilliant, sorry) it calls SPECULOOS … and I looove this belgian cookies since I was … since I was too young to remember. I use speculoos to make the crust when I bake a key lime pie (with lime not from the keys) ou my “new york art” cheesecake. I’m reading you this morning for the first time (from Sweetapolita’s blog), I can’t believe you have kept your so beautiful smile during this difficult moments (and I cannot tell you exactly what I feel with my few words in english) … I wish you a very happy new year, with love, with chance, with success, with happiness and with health.

  29. Oh my, I fell in love with Biscoff on a Delta flight as well! I hadn’t ever looked or them in a store but this post got me moving! I found both the cookies and the spread at World Market (Cost Plus).

  30. @Lisette, I am and American living in the Netherlands and just thought I would let you know that you can now get Marshmallow Fluff at Albert Heijn and I have also seen it a Jumbo. In both places it is sold near the peanut butter and the Speculoos Spread by Lotus (what it is called in in Holland).

    Can’t wait to try this recipe! My husband and I are obsessed with Speculoos and the Crunchy Speculoos and will be moving back to the States in the near future and I thought I was going to have to ship back many jars of this. So I am thrilled it is now available in the US. :)

  31. WOW!!! I’ve been on a fudge making binge lately, including experimenting with different cookies as mix ins. I had Biscoffs on my list. I’ve never seen the spread, though. I will have to look for it. I also was thinking about using a hand mixer to mix the fudge, so thank you for sharing that.   32. To all Biscoff/speculoos (spreand inculded) lovers :

    Cut a puff pastry pie crust in quarters. Spread the Biscoff/speculoos paste over it leavind an inch clear on the boarder. Wrap half a skinned pear completely with the puff pastry. Lay on a cooking sheet, with the pastry seams underneath. Brush with table cream (yes, cream) and sprinkle with sugar.
    Bake for 20 minutes and enjoy!

  37. Do I need to go to Belgium to get the Speculoos? I found another brand at a New Orleans Big Lots, but it was limited to a few jars. Unable to find the original or the other brand in the U.S. since. It would be a money maker if sold here. There would have to be some good marketing due to the name, but it would sell.

  45. They make crunchy Biscoff spread as well but you can only get it on the website. The creamy spread they started to sell in stores.

    My husband is from Belgium, so we had the speculoos spread there and we all loved it SO much, I was thrilled to find out Lotus sold it in the states as well. Trader Joe’s is also selling cookie butter but I don’t think it is as good as the Biscoff. We tried the TJ’s spread but it was way too sweet for us.

    The other nice thing you can get if you order Biscoff from the website are waffles- both plain and chocolate dipped- YUM!

  47. I use Biscoff spread (speculoos paste here in Belgium) as a substitute for peanut butter in your dark chocolate chip comfort cookies and they are just fabulous. I really want to try this recipe as well, but I’m not sure I can find the marshmellow creme over here.

  62. Discovered Biscoff spread this summer. Have found different brands, the original Biscoff (the best), Trader Joe’s and Belgium Treasures. We have been using the spread on everything–waffles, english muffins, panninis (with banana, oh my) and of course, by the spoon. SOOO GOOD!!! Definitely going to make the fudge tonight for a girls’ sleepover!

  66. Oh, Bakerella, I love you! We lived in Italy for 5 years (thank you U.S. Air Force) and one of my favorite things was Speculoos. (Biscoff spread) It wasn’t readily available, but every month or two a man from Belgium would come down to our base to sell things and this was one of them. I would buy jars and jars. I even bought a bunch to bring when we moved back to the states last year. It, of course, is LONG gone, so I’m SO happy to hear it’s available here…I just hope I can find it!
    And fudge? You made fudge with it??? I HAVE to try it!

  71. these cookies are extremely well-known in my country, but we call them speculaas. if you ever get your hands on the speculaas-flavoured icecream, don’t hesitate!

    on the fifth of december, a man called sinterklaas (who later became your santa claus) visits the homes of belgian children and leaves oranges, marzipan, chocolate and speculaas. my favourite sandwich at that time of the year? whole grain bread, marzipan, speculaas and blueberry jam (with whole blueberries in it). it’s like a winter party in your mouth!

  83. Dear Bakerella,
    That really looks delicious! Here in Belgium and The Netherlands we know these cookies as “speculaas” (that’s actually their real name, Biscoff is the American name) and the spread is known as “speculaaspasta”. It comes in two varieties: the normal one and a crunchy one, with little bits of cookies in it. It is truly very addictive and once you start eating them, it’s impossible to stop! What harm can one more cookie do? ;-)
    For your information: the spread was invented by a woman and shown for the very first time on a television show “the inventors”. It immediately became a hit and since Lotus decided to help her, you can find it in every store in Belgium and the Netherlands!
    Also, speculaas is our Sinterklaas cookie, so around the fifth of december you’ll find them even more:)
