Have you ever had any pillow cookies? I’ve only had them once, but I was immediately smitten. I found them in the bakery section of the Fresh Market sometime last year. They were some sort of sugar cookie wrapped around a brownie center. I immediately went on the hunt for a similar recipe but didn’t have much luck until just a few weeks ago when I was rummaging through some of my aunt’s recipes.
And there it was. A torn out recipe for Chocolate Chip Brownie Pillows.
Not sugar cookies, but good enough. Better even. And when I read the how-to, it all made sense. I had been throwing around scenarios in my head trying to figure out how the brownie batter and cookie batter all came together to form such soft sugary cookies.
And… It’s easier than you think.
First… bake up some brownies. You can just use your favorite box mix if you like. Let them cool and cut about ten 1 inch squares. You won’t need the rest for the cookies. I’m sure you can find something to do with the leftovers.
Then you need some chocolate chip cookie dough (recipe below). The dough should be chilled for at least an hour before using.
Each cookie uses about 1/2 cup of dough. Yes, you read that right. One half cup. For each.
And yes, they are ginourmous!
All you do is place the dough on parchment paper and make a pretty big indention in the center. Place the small brownie in the middle and fold the dough around it to form a ball. Then bake. I know, I was a bit skeptical at first, too. But it worked perfectly.
Not convinced? Want to see it again.
Okay. here goes.
Place 1/2 cup of cookie dough batter on a parchment lined baking sheet.
Make indentions in the dough and place a 1 inch square brownie in the center of each.
Smoosh it a little, so the cookie dough surrounds the edges of the brownie.
Then work the dough around the top to cover the entire brownie and shape them into balls.
Place no more than 6 on a 15 x 20 inch baking sheet at a time because these guys are HUGE!
Bake and voila………
Giant pillow cookies. Now these are much, much, much larger than the ones I had from the Fresh Market. And actually, the process may not even be similar, but the result reminds me of them. I’m guessing these could go smaller if you like, just use a smaller brownie to start.
But I love how big the are.

If your cookies start to get too brown before they are done baking, you can place a sheet of aluminum foil over top for the last few minutes.

I did just make these yesterday. I didnt have the mini chocolate chips and would have been better had I had them but still really good. Ginormous is an understatement. I think I will only get to eat one before hubby eats the rest!
We love those cookies from FM. I tried to replicate them at home too. Instead, I used the basic chocolate chip cookie dough minus the chocolate chips, rolled it into a log and refrigerated. While the cookie dough was chilling, I prepared the brownie dough on the back of the Ghiradelli Sweet Cocoa. I cut 2 slices of cookie dough and sandwiched a tsp of brownie dough in between and sealed. Rather than the cooked brownies in your recipe, I put raw brownie dough in between the layers of cookie dough.
I love pillow cookies with Raspberry jam in the middle of a sugar cookie!
These, however, look heavenly :)
I used to make something similar but managed to lose my recipe. My recipe was for a peanut butter cookie on the inside and a chocolate one on the outside. Both went into the oven raw and cooked together. I might have to try to recreate that today!

I made these today! Only with sugar cookie dough instead of chocolate chip cookie dough. The results were absolutely heavenly. The only bad points were that the brownies made a large lump in the middle of the cookie, and the top of the cookie wouldn’t fully bake! Nonetheless, these were great! Thank you for sharing!

I’ve made a variation of these for years called ‘Chocolate Biscuits of Doom’ You take a nice firm chocolate biscuit recipe, wrap a piece of cadbury snack chocolate in each one as with the brownies and bake. They’re biscuits of doom because it’s hard to resist the temptation to keep eating until you found a pineapple, then a caramel and, okay, next a turkish delight, when I’ve found a turkish delight I’m going to stop eating…. but wait, I haven’t found an oran…. you get the picture….

Yum! I make peanut butter cookies with that same concept. Sort of, I stuff them with milk duds. As they bake they melt into the cookie and make them nice and chewy. Huge hit with my boss.
I actually make pillow cookies for special family events however my recipe is about 50 years old and is filled with raspberry jam!!!!!!! I’m sure my family will love ones that are chocolate filled

These sound awesome! I was thinking of a cheaters way of doing it, perhaps, would be to use a pack of the ready-made Pillsbury brownie dough squares and a tube of chocolate chip cookie dough. The brownie dough is not as liquid as normal brownie mix and may hold together well enough to use raw and bake it all together, saving the step of making the brownies. Either way, I’m gonna make these soon!

Just made these with my kids. I think my butter was too soft so they spread quite a bit. But, they taste great! I think next time, if I’m feeling lazy, I may just chop up the brownies into tiny pieces and stir them into the cookie batter to make it easier. I definitely made them much smaller, too. My aunt makes a similar cookie, but uses mini snickers bars smooshed inside a peanut butter cookie….yum!

One tip I have found with making these is to press the bownie flat a little then there wo’t be a big mound stckingout of the cookie after it is baked.
My mom made these for us after my daughter had surgery last year. They are fabulous! She made them smaller than the recipe called for, because 1/2 c. cookie dough plus the brownie was a bit too much for us to finish unless the brookies were all we were having for a meal…not that there is anything wrong with cookies for a meal!

I know I just posted but after thinking about it..I was trying to remember what these reminded me of. My daughter makes a 9×13″ brownie mix– spreads in pan. Takes prepared cookie dough and drops little balls of cookie dough into the unbaked brownie batter. Then she bakes it and then we EAT it up!!

I saw a recipe for pillow cookies with marshmallows in the middle just last night, and almost made them, except 1) I didn’t have any white mini-marshmallows (just the multicolor ones) and 2) I didn’t have time to freeze the marshmallows beforehand. But I am definitely going to try it soon. They were chocolate cookies with chocolate chips and mini marshmallows…but wouldn’t it be amazing if you could figure out how to add graham crackers to it and make smores cookies? Yum!

The fresh market here puts an almond mixture in the middle of the pillow cookies similar to marzipan, but not quite as dense. It is divine.

I do this all the time only I put bite size snickers in the middle. They are delicious! I’ve tried with the mini peanut butter cups but its not as good as snickers. I may just try the brownies. My hubby would be in heaven.
